Patriotic Cookies Recipe by the Diabetic Pastry Chef

Memorial Day festivities are times to gather together with family and friends and celebrate the beginning of the summer season while also remembering lots of U.S. citizens who were drafted and who were required to fight far away from home and loved ones. They can also become ways to commit to healthy living and activity to avoid diabetes health-related complications.

The Diabetic Pastry Chef Stacey Harris is helping Divabetic encourage you to celebrate the holidays without compromising your diabetes wellness.

When Stacey Harris was studying to become a pastry chef, she was diagnosed with type 2 diabetes. Rather than give up her chosen profession, she began creating more diabetic-friendly desserts. By using blended flours and a combination of sugar and sugar substitutes, reducing milk carbohydrates, and eliminating trans fats,  Stacey Harris has transformed more than 200 desserts into diabetic-friendly delights.

 

Patriotic Cookies Recipe by the Diabetic Pastry Chef 

Cookie Dough Ingredients 

1 1/2 cup white whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1 stick butter, sliced

1 large egg

1/2 cup granulated sugar substitute such as Swerve

Directions:

Sift together flour, baking powder and baking soda. Cut in butter until crumbly.

Beat together the remaining ingredients with mixer until well blended; add to dry mixture.  Divide dough in half and chill for several hours.

Roll out the dough on a floured board 1/4 at a time. Cut into star shapes with floured cookie cutter. Bake in preheated oven at 350 degrees until cookies are a pale golden color. Remove from oven and cool cookies on a baking rack. Once cool, frost with icing and decorate with tubes of red and blue decorating gel.

Swerve Icing Ingredients 

1 stick butter, softened

1/3 to 1/2 cup Swerve Confectioners

1 tsp pure vanilla extract

1 Tbsp milK

Directions:

With mixer, beat butter until light and fluffy. Add Swerve and beat for 5 minutes. Add vanilla and milk and beat for an additional 5 minutes.

We’re only as sick as our secrets, it’s true.

There’s dozens of things that I’m not telling you.

Can one day be helpful in saving your life.

So don’t be afraid to be clear and be strong

That you have diabetes, but there’s nothing wrong.

You get help if you need it. So please don’t downplay.

Happy Diabetic’s Grilled Veggie Kabobs of Love Recipe

Memorial Day feels like the unofficial beginning of summer. It means lots of socializing, get-togethers with friends, picnics, sunshine, barbecues, and outdoor activities.

It’s also the beginning of the season of fresh, locally grown ingredients, so there’s no better time to invigorate those Memorial Day barbecue and picnic spreads with locally sourced items from surrounding farms and farmers markets.

If you’re thinking of serving food that’s  ‘Lean & Green’ for Memorial Day, this veggie recipe from our good friend, Chef Robert Lewis aka ‘The Happy Diabetic’ is for you!

Happy Diabetic’s ‘Grilled Veggie Kabobs of Love’ Recipe

The Veggies-

  • 12 Grape tomatoes
  • 12 white button mushrooms
  • 2 red onions cut in quarters
  • 2 yellow peppers, cut in 1inch squares
  • 12 slices yellow squash
  • 12 slices  zucchini
  • Bamboo skewers soaked in water so they will not burn.
The only MARINADE you will ever need-

1/4 to 1/2 cup good quality olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

2-3 cloves chopped garlic

Sea salt to taste

Fresh cracked pepper to taste

½ fresh lemon juice- slice the lemon after juicing and add to the marinade

½ fresh lime juice- slice the lime after juicing and add to the marinade

½ teaspoon red pepper flakes

Let’s Put It Together!

  1. MARINADE: Mix all ingredients together in in a glass bowl.
  2. Arrange vegetables on skewers and place in a large zip lock storage bag. Pour the marinade into the bag with the veggie skewers and let marinate in the refrigerator for at least an hour.
  3. Preheat a grill on medium high flame or an oven at 375 degrees. While cooking turn and brush with marinade for 10 minutes or until cooked tender and slightly charred.

In a recent profile on the Everyday Diabetes website, Chef Robert Lewis admitted that he feared the worst for his own love of great food following his diagnosis with Type 2 Diabetes in 1998.

“I suspected that my days of good eating were over,” Lewis writes on his blog. “Yet, as I worked through my ups and downs, I came to realize that the selection of foods I could and should eat was vast and included many of my favorites. This motivated me to attempt to create delicious, diabetic-friendly dishes that were also easy to prepare.

Today he’s a man on the go! is a man on the go. When he’s not working as a director of training for 60 restaurants in the Midwest, he’s  traveling around the country as a keynote speaker for Taking Control of Your Diabetes and/or hosting his own podcast, ‘The Happy Diabetic Kitchen Podcast’! A vegetarian diet has been shown through research to promote weight loss and lower A1C. This was done without carbohydrate and calorie restrictions, so it may be that a vegetarian diet may be just the one for you. As always, check with your healthcare provider before making any changes to your lifestyle to find out what the potential impacts (whether positive or negative) may be on your health.

Shift away from meats on the barbecue grill by injecting recipes with beans and grains. They help to drop the risk of type 2 diabetes by one-quarter, according to Harvard researchers. Whip up a whole-grain pasta salad with an assortment of slivered or chopped carrots, celery, scallions, red bell peppers, and yellow squash. Or try an Asian Noodle Salad for a yummy twist on a classic.

Debby Kay has 40 years of experience as a canine professional and pioneered many firsts in canine scent work. She left her position as a research scientist for the Federal Government to become Training Director of International Detector Dogs Ltd., training the first toxic waste detection dog. She was an early pioneer in training dogs to help ecologists, geologists and field biologists find targeted specimens for their research. Debby trained some of the first classes of dogs and instructors for the ATF explosive dog program in Virginia.

Below is an excerpt from her recent story that appeared in ‘The Inquirer’ this past week. Please share Patty’s story and help to spread awareness for stroke:

I’ve been on the radio for 35 years, and I love my job at WDAS. I love my job so much that often it doesn’t even seem like a job, which makes it hard for me to realize how over-worked I might be getting. So over-worked, in fact, that I had a stroke three years ago – my body’s way of telling me to slow down.

My mother had suffered a stroke when she was 81, and I was her primary caregiver until she passed away. Taking care of my mother and my son while juggling the demanding schedule of my career was stressful. But then in the fall of 2015 I lost my mother, which took a toll on my emotional strength like nothing ever had before.

But I trudged on — working at the station seven days a week and doing numerous appearances after work.  Nothing like a busy schedule to numb the mind, right?

Out of nowhere, in Nov. 2015, I collapsed. I didn’t stumble over anything. I didn’t trip. I just suddenly hit the ground. But I got right back up and kept moving – I had work to do!

What is Stroke?

Stroke is a disease that affects the arteries leading to and within the brain. It is the number. 5 cause of death and a leading cause of disability in the United States according to the American Stroke Association.

A stroke occurs when a blood vessel that carries oxygen and nutrients to the brain is either blocked by a clot or bursts (or ruptures). When that happens , part of the brain cannot get the blood (and oxygen) it needs, so it and brain cells die.

What are the types of stroke?

Stroke can be caused either by a clot obstructing the flow of blood to the brain (called an ischemic stroke) or by a blood vessel rupturing and preventing blood flow to the brain (called a hemorrhagic stroke). A TIA (transient ischemic attack), or “mini stroke”, is caused by a temporary clot.

What are the effects of stroke?

The brain is an extremely complex organ that controls various body functions. If a stroke occurs and blood flow can’t reach the region that controls a particular body function, that part of the body won’t work as it should.

Use the letters in “fast” to spot stroke signs and know when to call 9-1-1.

Divabetic is proud to partner with the Vandross Family Estate to present the inaugural Fandross Festival celebrating the musical legacy of Luther Vandross.

As much as we’re looking forward to seeing Luther’s outstanding band members and vocalists perform again and meeting fans we are more interested in helping those at risk, affected by and living with diabetes to stay happy and healthy.

Luther Vandross had over 50 people supporting him with his music but when it came to managing his type 2 diabetes, he chose to manage it alone. That was a terrible mistake because daily diabetes management is challenging as well as overwhelming for many. Don’t go it alone choose to manage your diabetes with ‘team approach’ and build your own healthcare entourage. Working with different healthcare providers, family members and friends helps you to learn in-depth information regarding their health and well-being, boost confidence and find comfort during difficult times. It also ensures that your needs are cared for and addressed.

If Luther’s music has brought joy to your life, then please take a minute to “Keep your House A Home” and learn how to prevent diabetes health-related complications (such as stroke) from occurring. The first step is learning to love yourself and your diabetes health without shame.

Are you ashamed of your diabetes? Afraid of judgment?

Denial of a diagnosis plays a significant role in why people may experience diabetes health-related complications. Ignoring your diabetes has significant repercussions. Learning to accept your diagnosis is not easy and for some, takes years. 

Here are three ways to help break the diabetes shame cycle.

1. Respond, don’t react. If your medical professionals are judgmental, consider switching. Realize that you’re in a system that creates shame. Change your mind about how you’re going to see that system.

2. Think about how to transform your behavior and why. “When we really let ourselves understand what our values are and value those things, we are less likely to call ourselves bad people,” says Joseph Nelson, a psychologist in Minneapolis and spokesperson for the American Association of Diabetes Educators. “By getting in touch with what we want in the world, we can tell ourselves that we’re OK and get rid of the shame. Value who you are, no matter what.”

3. Seek support. “Surround yourself with people who know your deeper motivation to change, who aren’t critical, and who are open enough in your relationship with them so that when they do act in a shaming way, you can approach them and tell them why what they’re saying is counterproductive,” says Ann Goebel-Fabbri, PhD, a psychologist at the Joslin Diabetes Center in Boston and an assistant professor of psychiatry at Harvard Medical School.

Diabetes Late Nite inspired by Angie Stone

We’re talking about ‘PRE-DIABETES, PCOS & REGAINING YOUR POWER’ with musical inspiration from Angie Stone on Diabetes Late Nite scheduled for Tuesday, May 8, 2018, 6 PM, EST.

Pre-diabetes means you have blood glucose levels that are higher than normal but not high enough to be called diabetes. If you have pre-diabetes, you are more likely to develop type 2 diabetes, heart disease, and stroke.

PCOS (Polycystic Ovarian Syndrome) is a condition that causes an imbalance of female sex hormones. As a result, women with PCOS often don’t have menstrual periods or only have periods on occasion. Because the eggs are not released, most have trouble getting pregnant.  It is the number-one cause of female infertility. PCOS causes insulin resistance, the hallmark of type 2 diabetes.

Singer Angie Stone is a Grammy-nominated singer, songwriter, producer, actress and mother. As a member of the cast of R&B Divas, she’s also topped the U.S. Billboard R&B and Dance charts.

Stone was diagnosed with Type 2 diabetes in 1999. “I was always on the go, and thought I was too busy to develop something like this,” Stone told BET.com  “I thought at the time that diabetes went along with bad habits, but I was the last one in my family to eat junk food.”

What the Grammy Award-winning singer didn’t realize was that she was a perfect candidate for diabetes: She had a family history of diabetes and was fighting weight problems.

“I came to accept my diabetes when I realized just how many people around me, even in my own family, were living with diabetes,” she says. “It gave me back a lot of courage to see all these people just like me, going places, involved in normal things, and I became determined to learn what I needed to better manage my diabetes.”

‘Eat What You Love, Love What You Eat’ on Divabetic’s Luther Vandross Tribute Podcast

Dr. Michelle May, who is a recovered yoyo dieter and the award-winning author of Eat What You Love, Love What You Eat: How to Break Your Eat-Repent-Repeat Cycle’ joins us to talk about emotional eating on Divabetic’s Annual Luther Vandross Tribute podcast on Thursday, April 19, 2018, 6 – 7:30PM, EST. 

“Emotional eating only becomes a problem when it’s over-used to cope with or avoid feelings,” says Dr. Michelle May.

Experts define emotional eating as eating as a way to suppress or soothe negative emotions, such as stress, anger, fear, boredom, sadness and loneliness. Major life events or, more commonly, the hassles of daily life can trigger negative emotions that lead to emotional eating and disrupt your weight-loss efforts.

“Over the years, I’ve learned to heal the emotional connection to food that wasn’t serving my highest good”, admits Dr. Michelle May. “I’ve also learned to embrace my healthy emotional relationship with food. When I’m craving chocolate even though I’m not hungry (and sometimes when I am!), I’m probably bored of working at my desk or I’m feeling overwhelmed and in need of a break. I also love the emotional connection of cooking with my chef-husband, dining with my friends and family, and savoring a fabulous piece of chocolate–simply for pleasure!”

Though Luther Vandross enjoyed success after success in his professional life, he was beset by personal struggles with his weight — the cruel cycle of gaining and losing 100 pounds dominated his life. He lost more than 100 pounds over thiriteen times during his lifetime.

“It’s the most awful, dark feeling in the world,” Luther said of the times when he put back on 100 pounds. “It feels like you’re wearing an 80-pound hat and a coat that weighs 300 pounds … You feel like it’s always dark and gloomy.”

While many people struggle with significant weight fluctuations, Luther’s yo-yo relationship with food was displayed before millions of fans.

“It makes it very hard,” he said. “You wear it externally so the minute you walk through the door, everybody knows ‘Luther’s not winning his battle with his demon.'”

Luther Vandross suffered from type 2 diabetes and hypertension, both of which may have been brought on by family genetics as well as lifestyle and nutrition. He had just finished the final vocals for the album ‘Dance With My Father’, when on April 16, 2003 he suffered a severe stroke at his home in New York City. The stroke left him in a coma for nearly two months, during which time he also had to fight both meningitis and pneumonia (which required a tracheotomy). The stroke also left Vandross with noticeable difficulty speaking and singing, as well as confinement to a wheelchair.’

Ropa Vieja Slow Cooker Recipe by Holly Clegg

Best-Selling Cookbook author Holly Clegg  guests on March’s Diabetes Late Nite podcast, shares her wonderful Cuban recipe to help you add some flavor to your menu without compromising your health.

Holly says, “Easy to toss into a crock pot for a wonderfully flavored Cuban beef stew-style recipe.  Serve over rice or with tortillas.” She adds, “If using a cooker larger than what’s called for increase everything proportionately, making sure the cooker is at least half to no more than two-thirds full.

Ropa Vieja Slow Cooker Recipe from Alimentándose bien durante el cáncer: Recetas fáciles y recomendaciones durante y después del tratamiento.    

Ingredients

2 pounds flank steak, trimmed of fat

1 cup fat-free beef broth

1 (8-ounce) can tomato sauce

1 (6-ounce) can tomato paste

1 green bell pepper, cored and sliced into strips

1 onion, sliced into strips

1 tablespoon minced garlic

1 teaspoon cumin

1 tablespoon vinegar

Directions

1.  In 3 1/2-6-quart slow cooker, insert plastic liner if desired.  Place flank steak in slow cooker.  Add remaining ingredients.  Cover, and cook on LOW 8-10 hours or on high 4 hours or until meat is very tender.

2.  When meat is very tender, remove from slow cooker and shred meat with fork. Serve in sauce.
