Divabetic’s special guest, The Diabetic Pastry Chef at the upcoming Sugar-Free Baking Party knows ways to transform decadent desserts so they’re no longer off-limits. By using blended flours and a combination of sugar and sugar substitutes, reducing milk carbohydrates, and eliminating trans fats, Stacey Harris can convert almost any recipe into a lower-carb alternative without compromising taste or quality.
3/4 cup white whole wheat flour or all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ground cloves
2/3 cup canned pure pumpkin puree
3 large eggs
1/2 cup walnuts, chopped
Swerve Confectioners
Directions
Preheat the oven to 350 degrees. Add all ingredients except walnuts and Swerve Confectioners to the mixing bowl and beat with an electric mixer until well combined.
Line an 11×15″ jelly roll pan with parchment paper or wax paper. Grease the paper and add the batter spreading evenly. Sprinkle with the chopped walnuts. Bake for approximately 15 minutes.
Invert the cake onto a thin linen dish towel sprinkled heavily with Swerve Confectioners (about 1/4 cup). Remove parchment paper or wax paper and gently roll the cake. Let cool for a minimum of 2 hours.
Unroll the cake and evenly spread with filling. Reroll cake. Freeze for 1 hour before serving. Thaw, sprinkle top with Swerve Confectioners to cover, and slice. Enjoy!
Filling Ingredients
1 8-oz. pkg. cream cheese, softened
1 cup Swerve Confectioners
2 Tbsp. butter softened
1 tsp pure vanilla extract
Directions
Mix ingredients together with an electric mixer until smooth.

In 2014, I was diagnosed with type 2 diabetes. I immediately sought out information on nutrition after my diagnosis. Since then, I have managed my diabetes by counting carbs, walking, and adhering to my medications.
The thing that inspired me to lose weight was my family. At the time, having a 4-year-old inspired me to make small changes that make a big difference. More than anything, I want to live a long healthy life and spend it with my family!
A big help was the advice I received from my nutritionist after my type 2 diabetes diagnosis. She said to keep things simple and focus on one thing – counting carbs when getting started. So my weight loss was slow and steady, about 10-12 pounds per year.
My nutritionist also encouraged me to keep a food journal, so I calculated the carbs in everything. I think I drove everyone crazy around me. I always wrote these down in a spiral notebook. Eventually, I got pretty proficient.
I try to follow the recommendations she gave me:
1. If you are hungry, eat.
2. Our brains need carbs, so don’t eliminate carbs completely.
3. Eat 30-45 carbs per meal, 15 carbs for a snack (for women) men are 45-60. If you want to lose weight, stick to the lower end.
4. Get moving. I started walking 10 min a day, then I graduated up to about 45 min. I also recently joined a Pilates club for weekly flow classes.
5. Have regular checkups on A1C- I have had to make a few adjustments.
6. I participate in a wellness coaching program, Newtopia. They have been really helpful in keeping me setting goals and checking in. For example, I weigh myself daily with a smart scale linked to apple health. That is shared with my wellness coach, and it keeps me accountable. He also helps to keep my spirits lifted during challenging days.
A few years ago I read the book The Clean 20by Dr. Ian Smith. My husband and I followed that plan for 30 days. We liked it and continued doing that for probably another 3 or 4 months. We found out what meals we liked and added those to our routine.
Even though I have lost 70 pounds, my blood sugars have continued upwards. Recently my doctors adjusted my medications. Now I take a combination of Metformin, Januvia, and Jardiance.
Just this week, I started wearing a Dexcom g6 Continuous Glucose Monitor (CGM). At first, I was super nervous about it. But I really like it. I can just look at my phone to see my sugar numbers. So far, so good on my new treatment plan.
I really enjoyed the Divabetic Baking Party On Zoom. Funny note though, I went out to buy the Pillsbury Sugar-Free Cake Mix and Frosting and was surprised that it had MORE carbs than the regular boxed mix! So, that’s a no-go for me. Instead, I’ll use the regular mix and just do smaller portions!
Recently I started to count my saturated fat grams. The new plan is to try to keep under 25 g per day. I really enjoy cream in my coffee and butter on my toast. Those are two of my favorite things, so we’ll see how that goes!!! I am a work in progress!!

1 c. agave nectar, light or dark
2 Tbsp. butter, melted
1/2 tsp ground cinnamon (optional)
1 tsp. pure vanilla extract
1 1/2 c. pecans, halved or chopped
1 unbaked single pie shell
Directions
Preheat oven to 350 degrees. In large bowl, combine eggs, agave nectar, melted butter, cinnamon if using, and vanilla. Stir in pecans. Pour into unbaked pie shell and bake for approximately 50-55 minutes, or until knife inserted halfway between center and edge comes out clean. Let cool.

Preheat oven to 350*. Coat the bottom and sides of a 9-inch spring form pan with non-stick cooking spray. Using an electric mixer, beat cream cheese, SPLENDA® Brown Sugar Blend, and Splenda Naturals® until smooth. Beat in eggs one at a time. Blend in pumpkin, yogurt, almond flour, cinnamon, ground ginger, maple flavoring, and vanilla. Pour filling into prepared pan. Mix the topping ingredients by hand or in a food processor until crumbly. Sprinkle on top of cheesecake. Bake until firm, about 1 hour and 10 minutes. Remove from oven and run a butter knife around the inner edge but do not remove the pan side. Let stand at room temperature 30 minutes. Refrigerate.

First off, stevia is a natural, non-nutritive sweetener extracted from the leaf of the stevia plant. More than 200 times sweeter than sugar. Stevia is essentially calorie- and carb-free.
Stevia-based sweeteners shouldn’t be used to replace sugar cup for cup in your favorite recipes. Most bakers agree that for the best results you should leave at least 1/4 cup of sugar in the recipe to help with browning and provide texture. You likely will need to use a lower baking temperature and increase the baking time.
Healthine states, ” Stevia may help manage your weight and blood sugar levels, and animal studies show that it may improve heart disease risk factors. However, it’s an intense sweetener that could negatively affect your health.” (READ MORE)
The Basic Substitution for baking with Stevia: Substitute 1 cup of sugar for 18 to 24 stevia sweetener packets, 1/3 to 1/2 teaspoon of undiluted stevia powder or 1 teaspoon of a liquid stevia extract. Experts recommend that you choose the amount of stevia based on how sweet you wish your baked goods to be.
Instead of a Mounds Bar, try theseChocolate Covered Katie’s No Bake Coconut Fudge Bars made with a liquid sweetener (maple syrup, agave, etc.) or with stevia. If you choose to use stevia for this recipe, Katie recommends that you add 1/4 cup additional coconut oil to make up the liquid difference.

What’s Dalgona Coffee?
“Dalgona Coffee or whipped coffee is the latest coffee craze. It originated in South Korea and the recipe was shared on Tic Toc where it went viral,” says Stacey Harris who is professionally known as ‘The Diabetic Pastry Chef’. “It can easily be made at home in less than 10 minutes. I love it because it is simple to make, delicious, and every bit as decadent as a Starbuck’s drink without the cost or travel.”
2 Tbsp. Whey Low® Type D Granular sugar substitute
2 Tbsp. hot water
2-3 ice cubes
3/4 to 1 cup milk of choice (dairy, unsweetened almond, oat milk, etc.)
Directions:
In small mixing bowl, add coffee granules, Whey Low and hot water. Whip with electric mixer for several minutes until creamy and thick and peaks begin to form.
Add ice cubes to drinking glass and pour milk no more than 3/4 to top of glass. Spoon and swirl the whipped coffee on top of the milk. Stir the milk and enjoy.
Note: I have read that Splenda® and stevia do not work well in this recipe.
FUN FACT: The actor Jung Il-Woo traveled to Macau, tried the drink, and gave this coffee drink the nickname ‘dalgona‘ for its resemblance to the traditional Korean sponge candy of the same name.

2 cups erythritol sweetener or other preferred sugar-free sweetener equal to 2 cups
2 sticks unsalted butter, room temperature
1-4 drops red food coloring depending on how pink you prefer the cake
Directions
Preheat oven to 350 degrees F.
In a medium bowl, sift together the flour, baking powder, salt, and cake enhancer if using. set aside.
In another medium bowl, whisk together by hand the egg whites, Champagne, vanilla and oil until well blended.
In the bowl of an electric mixer, on medium speed beat together the softened butter and erythritol for 3 to 4 minutes until light and creamy. Add the flour mixture and egg mixture alternately, beginning and ending with the flour mixture. Add and stir in the red food coloring.
Divide the mixture into 12 greased and floured cakelet cavities (2- 6 cavity cakelet pans). Bake until the cakes are slightly brown around the edges and cakes just pull away from the pans, about 30 mins. Remove from oven and after 10 minutes invert onto wire racks to cool completely. Once cool, prick the tops of the cakelets with a fork and drizzle a bit of champagne over each cakelet to soak in. I would suggest 1/2 to 1 tsp Champagne per each cakelet. Dust with sugar-free confectioners sugar or decorate as desired.

1 c. flour, whole wheat or all-purpose 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1/8 tsp. ground cloves 1 c. granulated brown sugar substitute such as Whey Low®, Swerve® or Truvia® 2 large eggs 1 tsp. pure vanilla extract 1/2 c. plus 1 Tbsp. canola oil 1/2 c. chopped nuts (preferably walnuts or pecans) 1 1/2 c. grated carrots 1/4 c. raisins, optional
Directions
Heat oven to 350 degrees F.
Grease and lightly flour a 6-cup Bundt pan.
Sift together flour, baking powder, salt, cinnamon, nutmeg and cloves; set aside.
In a mixing bowl at medium speed, beat together the eggs, sugar substitute and vanilla for 2 minutes. Lower the speed and slowly add in the canola oil until combined. Turn off mixer, and by hand, stir in the grated carrots, nuts and optional raisins, being sure not to overmix.
Add batter to greased and floured Bundt pan and bake until toothpick inserted into center of pan comes out clean, about 40 to 50 minutes. Invert pan onto cooling rack after about 10 minutes and let cool.
Dust with sugar-free confectioners’ sugar and enjoy!

Stacey loves to bake! While she was attending cooking school she began creatingdiabetic-friendly recipes for breads, cakes and other desserts by swapping out the sugar, blending the flour, eliminating trans fats and cutting the milk carbohydrates after being diagnosed with type 2 diabetes. Stacey Harris has transformed more than 200 desserts into diabetic-friendly delights. Here’s one of the Diabetic Pastry Chef’s most requested recipes:
Sugar-Free Chocolate Cupcakes by the Diabetic Pastry Chef
1 1/2 cup all-purpose flour
1/2 cup white whole wheat flour
1 tsp salt
1 tsp baking powder
2 tsp baking soda
3/4 cup unsweetened cocoa
2 cups dry sugar substitute (such as Whey Low D Granular or Splenda for Baking)
1 cup vegetable oil
1 cup hot coffee
1 cup dairy or almond milk
2 large eggs
1 tsp pure vanilla extract
In large bowl, sift together the dry ingredients except for the sugar substitute. In bowl of mixer combine oil, coffee milk and sugar substitute and beat at medium speed with electric mixer for two minutes. Add eggs and vanilla and beat for an additional 2 minutes. Add the sifted dry ingredients to the mixing bowl and mix until well combined. Batter will be thin. Pour into paper lined muffin tin. Recipe should make 24 plus cupcakes. Bake in pre-heated oven at 325 degrees until toothpick inserted in middle of a cupcake comes out clean. Remove pan to cooling rack and cool completely. Frost.
Swerve Frosting
2 sticks, unsalted butter, room temperature
16 ounce cream cheese, room temperature
1 1/2 cups Swerve Confectioners
2 tsps pure vanilla extract
2 Tbsp heavy cream or milk
Beat together the butter and cream cheese with electric mixer on medium-high speed until fluffy for 2-3 minutes.
Reduce the speed to low and add the Swerve a cup at a time, then vanilla and cream or milk; continue mixing until smooth.
Beat for an additional 10 minutes until well combined.
