We’re celebrating the first day of Summer with our Divabetic top picks in TV, Music, Fashions and Diabetes Self-Care.

Did you know that people who have diabetes—both type 1 and type 2—feel the heat more than people who don’t have diabetes?

Whether you’re working out or just hanging out, it’s a good idea to check the heat index—a measurement that combines temperature and humidity. Take steps to stay cool when it reaches 80°F in the shade with 40% humidity or above. Important to know: The heat index can be up to 15°F higher in full sunlight, so stick to the shade when the weather warms up.

Physical activity is key to managing diabetes, but don’t get active outdoors during the hottest part of the day or when the heat index is high. Get out early in the morning or in the evening when temperatures are lower, or go to an air-conditioned mall or gym to get active.

The TNT hourlong series CLAWS follows the rise of five diverse and treacherous manicurists working at the Nail Artisan of Manatee County salon in South Florida, where there is a lot more going on than silk wraps and pedicures.

At the center is salon owner Desna (Niecy Nash), who lives with and cares for her mentally ill twin brother, Dean (Harold Perrineau). Desna’s staff includes best friend Jennifer (Lyon), a tenuously sober ex-party girl raising two children from previous relationships; Quiet Ann ( Judy Reyes), Desna’s enigmatic driver who also provides security for the salon; Polly (Carrie Preston), a mild-mannered preppy who recently served time in prison for identity theft; and Virginia (Karrueche Tran), who makes no effort to hide her boredom and impatience with her job. Adding chaos to the Nail Artisan mix is Roller (Jack Kesy), a gangstered-out redneck who runs a barely legal pain clinic and uses Desna’s nail salon to launder the obscene profits; Bryce (Kevin Rankin), Jennifer’s husband who is also newly sober and trying to stay legit by working as an abundance coach; and Dr. Ken Brickman (Jason Antoon), a bona fide doctor at a decidedly un-bona fide and illegal drug clinic.

Inspired by the short-lived but beloved show from the ’80s, GLOW tells the story of Ruth Wilder (Alison Brie), an out-of-work, struggling actress in Los Angeles who finds one last chance for stardom when she’s thrust into the glitter and spandex world of women’s wrestling. In addition to working with 12 Hollywood misfits, Ruth also has to compete with Debbie Eagan (Betty Gilpin), a former soap actress who left the business to have a baby only to be sucked back into work when her picture perfect life is not what it seems. And at the wheel is Sam Sylvia, played by Marc Maron, a washed-up, B-movie director who must now lead this group of women and a journey to wrestling stardom.

GLOW is refreshingly free of the bombast and fatuousness that often come with the genre and features a winning performance by Alison Brie as an actress who finds work doing chokeslams and piledrivers,” wrote the New York Times.

Showtime’s I’M DYING UP HERE is a dark new drama about comedy and loosely focuses on Mitzi Shore, her Comedy Store and the comics who played there in the 1970s, including Richard Lewis, David Letterman, Robin Williams, Elayne Boosler, Jay Leno, Tim Reid and Tom Dreesen, along with many lost to time.  his narrative arc put them on a collision course, culminating in a 1979 strike against the club that sundered some relationships forever more.
“Real laughter, it’s cathartic — it’s the current that moves through an audience when some truth about who you are, who they are, is revealed,” says Clay (Sebastian Stan), a comic meant to embody a newer, more personal sort of stand-up, in which he invited strangers, as Eddie says, to “laugh at the most embarrassing, shameful, painful moments of his life.”
Many of the series’ incidents and observations and issues revolve around a relatively short period in 1973, in the wake of the Carson move. Still, as a backstage drama it indulges in themes and tropes that run back to “Stage Door” and “42nd Street” regarding ambition and talent, artists and impresarios.

Beer Bread by Holly Clegg 

“Close your eyes and you’ll think you’re eating a homemade yeast bread, instead of this easy quick bread baked in a loaf pan,” says Best-Selling Cookbook Author, Holly Clegg

Ingredients:

3 cups all-purpose flour
1 tablespoon baking powder

2 tablespoons sugar
1/2 teaspoon salt

1 (12-ounce) can lite beer

2 tablespoons honey

2 tablespoons butter, melted

Directions:

  1.  Preheat oven 350F. Coat 9x5x3-inch loaf pan with nonstick cooking spray.  
  2.  In medium bowl, combine flour, baking powder, sugar and salt.
  3.  Stir in beer and honey (microwave honey 5-10 seconds) into the dry ingredients until just mixed.  Transfer batter to prepared pan.  Bake 50 minutes, or until top is golden brown.   Remove from oven and pour melted butter over the top.

Our Divabetic Father’s Day Celebration takes on a Spaghetti Western theme to encourage you to embrace your ‘inner cowboy and cowgirl’ and keep riding high with diabetes health!

There are plenty of cowgirls to inspire you, like Connie Reeves, who paved the way for women everywhere she went. Although she was one of the first women to study law at the University of Texas, when tuition money came up short during the Depression she took a job teaching high school, reports WIRED. There she started a girl’s drill team, one of the first in the state (and now a passion in Texas). Then she began teaching horseback riding. Over the years this horsewoman taught riding along with her own brand of confidence to an estimated 36,000 children.

The documentary American Cowgirl shows 101-year-old Ms. Reeves riding, assisting at a girl’s summer camp, and trying to keep herself from cussing on camera. As she said, “There’s nothing as expressive as profanity.” The woman described as America’s oldest cowgirl said, “My life’s not important to very many people. But what I have done may be something that will motivate someone else. I hope so.”

Butternut Squash, Black Bean and Feta Enchiladas with Salsa Verde by Holly Clegg 

“Six ingredient vegetarian enchiladas burst with flavor and effortless to make,” says Holly Clegg. 

Ingredients:

4 cups peeled butternut squash

1 (15-ounce) can black beans, rinsed and drained

1 bunch green onions, chopped

3/4 cup crumbled reduced-fat feta cheese, divided

8 large (about 7-inch) corn or flour tortillas

2 cups salsa verde

1.  Preheat oven 400°F.  Coat baking pan with foil and coat with nonstick cooking spray.

2.  Place squash on prepared pan.  Bake 20-25 minutes or until squash is tender but not mushy.

3.  Reduce heat to 350°F.  In bowl, combine cooked squash, black beans, green onion and 1/2 cup feta.

4.  Coat 3-quart oblong baking dish with nonstick cooking spray and spread a little of salsa verde on the bottom.  Fill tortillas with about 1/2 cup filling, rolling up and place seam side down in dish.  Pour remaining sauce over enchiladas.  Sprinkle remaining cheese over sauce.

5.  Cover pan with foil and bake 20 minutes or until thoroughly heated.

The Frozen Shoulder: What’s Diabetes Got to Do With It?

About three percent of the general population get frozen shoulder, compared to about 20% of people with insulin-dependent and non-insulin dependent diabetes and in those with prediabetes. Women are more likely to develop the condition than men, and it mainly affects people between the ages of 40-65.

Although there is no conclusive link to high sugars or insulin use, long-term complications of diabetes may include changes in the connective tissue that occur as a result of high glucose levels.

People who have a history of adhesive capsulitis are at an increased risk to develop the condition on the other side of the body. Recurrence on the affected side is also possible, particularly in patients with diabetes. READ MORE

You might notice that Spaghetti Westerns are usually fitted with titles that sound suspiciously like other movies. The original title of “Fistful of Dollars,” for instance, was “The Magnificent Stranger,” a knock off of “The Magnificent Seven.” In short, if the words “Dollar” “Gold” or “Coffin” are in the title, you’re probably watching a Spaghetti Western.

New Study Sees Link Between Sleep Duration and Diabetes in Men

During the last 50 years, the average self-reported sleep duration per person has decreased by 1.5 to 2 hours and the prevalence of diabetes has doubled in the same time period, according the this study’s primary author, Femke Rutters, PhD, of The Netherlands.  READ MORE

Carrie Fisher died from ‘Sleep Apnea & other Causes’

Star Wars actress Carrie Fisher died from sleep apnea and “other factors”, the Los Angeles County coroner says. Sleep apnea is a common condition in which a person stops breathing during sleep, either for a few seconds or minutes. As well as listing sleep apnea as a cause of death, the coroner’s statement cited other factors, including heart disease and drug use.

Sleep apnea is a serious sleep disorder that occurs when a person’s breathing is interrupted during sleep. People with untreated sleep apnea stop breathing repeatedly during their sleep, sometimes hundreds of times. This means the brain — and the rest of the body — may not get enough oxygen.

There are two types of sleep apnea:

  • Obstructive sleep apnea (OSA): The more common of the two forms of apnea, it is caused by a blockage of the airway, usually when the soft tissue in the back of the throat collapses during sleep.
  • Central sleep apnea: Unlike OSA, the airway is not blocked, but the brain fails to signal the muscles to breathe, due to instability in the respiratory control center.

Am I at Risk for Sleep Apnea?

Sleep apnea can affect anyone at any age, even children. Risk factors for sleep apnea include:

  • Being male
  • Being overweight
  • Being over age 40
  • Having a large neck size (17 inches or greater in men and 16 inches or greater in women)
  • Having large tonsils, a large tongue, or a small jaw bone
  • Having a family history of sleep apnea
  • Gastroesophageal reflux, or GERD
  • Nasal obstruction due to a deviated septum, allergies, or sinus problems

Sure, it can be difficult at times to enjoy the holidays when you’re living with diabetes especially if you feel like you can’t enjoy the foods your actually preparing for your family and friends! Did you know the idea to celebrate Father’s Day originated in the USA and has been officially celebrated there on the third Sunday in June since 1966?

Many people credit Grace Golden Clayton, from Fairmont, West Virginia for the concept of Father’s Day, after she suggested a day celebrating fatherhood in 1908.

She put forward the idea following a mine explosion in a nearby town which killed more than 360 men – arguing that children in the town needed a time to remember their fathers.

Mrs Clayton may have been inspired by Anna Jarvis’ work to establish Mother’s Day; two months prior.

Now, the day exists simply to remind everyone that dads are great.

Southwestern Roasted Vegetables by Holly Clegg

“A fantastic satisfying vegetable entrée as the spicy taco seasoning perfectly contrasts the naturally sweet yams,” says Holly. “Throw on a steak if someone desires a more substantial meal to serve with the vegetables.  Goes great with pork tenderloin.”

Ingredients:

4 cups peeled, cubed sweet potatoes (yams), cut in 1-inch cubes 

1 1/2 cups zucchini, cut into small chunks

1 small red onion, cut into small chunks

1 (6-ounce) package portabella mushroom slices, halved

2 tablespoons olive oil

3 tablespoons reduced-sodium taco seasoning mix (about half of a 1.25-oz packet)

Salt to taste 

Directions:

1. Preheat oven to 425˚F. Coat baking sheet with nonstick cooking spray or line with foil.

2. In large bowl, combine sweet potatoes, zucchini, onion, and mushrooms. Toss with olive oil to coat vegetables. Sprinkle with taco seasoning, toss and spread vegetables on baking sheet.

3. Bake 40 minutes, shaking pan every 15 minutes, until vegetables are tender and roasted.

Makes 8 servings/ serving size: 1/2 cup

Spaghetti Western, also known as Italian Western or Macaroni Western (primarily in Japan), is a broad subgenre of Western films that emerged in the mid-1960s in the wake of Sergio Leone‘s film-making style and international box-office success. The term was used by American critics and other countries because most of these Westerns were produced and directed by Italians.

The film, A Fistful of Dollars was at first intended by Leone to reinvent the western genre in Italy. In his opinion, the American westerns of the mid- to late-1950s had become stagnant, overly preachy and not believable.

Clint Eastwood was not the first actor approached to play the main character. Originally, Sergio Leone intended Henry Fonda to play the “Man with No Name.” However, the production company could not afford to employ a major Hollywood star. Next, Leone offered Charles Bronson the part. He, too, declined, arguing that the script was bad. Both Fonda and Bronson would later star in Leone’s Once Upon a Time in the West (1968)

Divabetic Father’s Day: Celebrity Dads & Diabetes 

It’s been a few years since Tom Hanks shared that he was living  with type 2 diabetes during an appearance on The Late Show with David Letterman.

Tom revealed that he blames himself for not having followed a healthier diet when he was younger, explaining that it has led to his health struggles today.

“I’m part of the lazy American generation that has blindly kept dancing through the party and now finds ourselves with a malady,” the Saving Private Ryan star told the Radio Times. “I was heavy. You’ve seen me in movies, you know what I looked like. I was a total idiot.”

Tom Hanks admitted that he had been struggling with high blood sugar for years during his sit down interview with Dave.

“I went to the doctor and he said, ‘You know those high blood sugar numbers you’ve been dealing with since you were 36? Well, you’ve graduated! You’ve got Type 2 diabetes young man,'” Tom Hanks told David, before adding that “it’s controllable.”

Tom’s wife, actress and producer Rita Wilson opened up about how the diagnosis has forced them to make some lifestyle changes

“We’ve really cut back a lot on sugar, and we find time in every day to exercise,” Wilson told People at the movie premiere of Fed Up, a documentary that explores the country’s current obesity epidemic. “We actually walk and hike together. We’re not going to be doing duo, tantric yoga, or whatever.”

In addition to revamping the couple’s diet and exercise routine, the health scare also gave Wilson a fresh mindset. “When [you] were younger, you used to watch what you eat and exercise because you wanted to look really awesome,” explained the actress. “And now it’s because you want to feel really awesome.”

Chocolate Zucchini Cupcakes Recipe from ‘Gypsies, Tramps & Peas’

Our annual Mister Divabetic Mystery Podcast presented in September is a fun way to learn about diabetes for mystery lovers.

This year’s Mister Divabetic Mystery Podcast: ‘Gypsies, Tramps & Peas’ takes place at the Mermaid Parade in Coney Island, NY and features summer time diabetes education tips and healthy recipes from our favorite chefs including Chef Robert ‘The Happy Diabetic’ Lewis  and Stacey ‘The Diabetic Pastry Chef’ Harris.

Diabetes advocate turned reluctant amateur sleuth, Mr. Divabetic finally takes the plunge and ventures into a new career as a healthy caterer.  With the help of his co-workers and nosy Italian mother, Mama Rose Marie, he heads for Coney Island, NY for the 35th Annual Mermaid Parade to cater his first party aboard a yacht for his former swim coach, Ted Rockow. But his nautical soiree quickly capsizes when the guest of honor is found swimming with the fishes. What it an accident or foul play? Now Mr. Divabetic’s grilling Burlesque dancers, a lifeguard lothario and some sequined mermaids, all intent on keeping their secrets buried deep within the sand. Can Mr. Divabetic prove Coach’s death was a murder, not an accident? Or will he end up floating out to sea?

Thankfully Chef Robert Lewis aka ‘The Happy Diabetic has come to our rescue with this delicious recipe for Chocolate Zucchini Cupcakes for you to enjoy!

Chocolate Zucchini Cupcakes Recipe by ‘The Happy Diabetic’

What’s in it!

  • 1-1/4 cups butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 1 cup grated zucchini
  • 1 cup grated carrots

Let’s Put It Together

1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with yogurt, beating well after each addition. Fold in zucchini and carrots.

2. Fill paper-lined muffin cups two-thirds full. Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Frost cupcakes with a chocolate frosting

Yield: 21 cupcakes.

Chef Robert ‘The Happy Diabetic’ Lewis:

Growing up in Los Angeles offered Chef Robert a culinary experience he will always cherish. Family cooks and guests in my home were experts in preparing Jewish, Mexican, Middle and Far Eastern, and traditional dishes, which gave him a love for food and the creative outlet it provided.

After graduating from the Prestigios Culinary Institute of America in 1976. In 1998 he was diagnosed with type 2 diabetes. Thus began his motivation to create great tasting dishes that are easy to prepare.

In 1998 I was diagnosed with type 2 diabetes. Much of what I heard in those early day was about the foods that were prohibited. I suspected that my days of good eating were over, yet as I worked through my ups and downs, I came to realize that the selection of foods I could and should eat was vast and included many of my favorites. This motivated me to attempt to create delicious, diabetic-friendly dishes that were also easy to prepare.

Chef Robert is a nationally recognized author, public speaker and spokesperson for all people affected with diabetes. He travels the country speaking on the benefits of healthy eating not only for people affected with diabetes, but also for anyone who would like to eat and live a healthy lifestyle.

In order to develop DME, you must first have diabetic retinopathy.

Diabetic retinopathy is caused by damage to the blood vessels in the tissue at the back of the eye (retina). Poorly controlled blood sugar is a risk factor. Early symptoms include floaters, blurriness, dark areas of vision, and difficulty perceiving colors. Blindness can occur.

Grilled Garlic and Lemon Zucchini Chips Recipe from ‘Gypsies, Tramps & Peas’

Oh, how I wish I could say this cozy mystery, ‘The Good, the Bad, and the Guacamole’ by Rebecca Adler  was as good as it’s catchy title!  Unfortunately the characters don’t appeal to me especially Josie who seems to be able to down a Dr. Pepper in one gulp. Do you know that drinking one or two sugary drinks a day increases the risk of developing type 2 diabetes by 26 percent?

We absorb liquid sugar in as little as 30 minutes, much faster than a candy bar, leading to a spike in blood sugar that the body is not well-equipped to handle, particularly in repetition. These spikes in blood sugar can overwhelm the body and lead to the transformation of sugar into fat in the liver, which contributes directly to the development of type 2 diabetes

Tex-Mex waitress and part-time reporter Josie Callahan is about to serve up some Lone Star justice in this spicy Taste of Texas Mystery from the author of Here Today, Gone Tamale.

Grilled Garlic and Lemon Zucchini Chips Recipe by ‘The Happy Diabetic’

What’s in it!

  • 1/4 cup Extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Juice of 1 lemon
  • Kosher salt and freshly ground black pepper, to taste
  • 2 medium zucchini, cut diagonally into 1/2-inch-thick slices
  • 2 tablespoons chopped fresh parsley leaves

Let’s Put It Together!

  1. In a small bowl, whisk together Extra virgin olive oil, garlic, Italian seasoning and lemon juice
  2. with salt and pepper, to taste. Brush zucchini slices with oil  mixture.
  3. Heat a grill pan over medium high heat. Add zucchini in a single layer and grill until charred on both sides and just beginning to soften, about 2 minutes per side.

White Chocolate Cheesecake by Holly Clegg inspires New Mister Divabetic Mystery

I’m working on my newest tantalizing tale of culinary mystery and suspense, ‘Mister Divabetic Mystery – ‘One Murder Tutu Many’ which takes place in New York City’s vibrant ballet community. 

When my character, Mr. Divabetic heads to the Gotham City Ballet Company’s box office to fix a mix up with his tickets he’s faced with a even bigger problem – a murder. To make matters worse, one of his cheesecakes seems to be covering the victim’s face. Even more shocking are the numerous scandals swirling around the Gotham City Ballet and it’s members that have everyone walking around on tip toes. Could our happy healthcare host’s questionable culinary skills make him an accessory to the crime or even a possible side dish? Now Mr. Divabetic with the help of his team of whip smart Diabetes Educators must whip up his own crime-solving recipe, and fast–before a hearty dose of intrigue and a deadly dash of danger ends his diabetes advocacy and healthy catering career once and for all.

Cheesecake has been touted as the #1 American dessert so with cheesecake on my mind, I reached out to my friend, Best-Selling Cookbook Author Holly Clegg for one of her recipes, White Chocolate Cheesecake.

“White chocolate and cheesecake are outrageously delicious and especially when they are combined in one dazzling dessert. You will be begging for a second piece,” Holly said. “I like to top my cheesecake with raspberries because it gives it such a decorative touch.”

White Chocolate Cheesecake from Gulf Coast Favorites Cookbook by Holly Clegg

Ingredients

1 cup graham cracker crumbs
1/2 cup old fashioned oatmeal
2 tablespoons sugar
1 teaspoon almond extract
2 tablespoons butter, melted
3 (8-ounce) packages reduced fat cream cheese
2/3 cup sugar
2 eggs
2 egg whites
1/4 cup all purpose flour
3 ounces white chocolate, melted
1 cup fat free sour cream
2 teaspoons vanilla extract

Directions

1. Preheat oven 325°F.
2. In bowl, combine graham cracker crumbs, oatmeal, 2 tablespoons sugar, almond extract, and butter. Press onto the bottom and sides of spring-form pan.
3. In mixing bowl, beat together cream cheese and 2/3 cup sugar until light. Add eggs and egg whites, one at a time, beating well after each addition. Nex, add flour and white chocolate, mixing well. Add sour cream and vanilla: mix well.
4. Pour into prepared crust and bake for 55 minutes. Remove from oven and cool to room temperature. Refrigerate until well chilled and then remove from the pan.

I asked Holly why is this cheesecake is considered to be ‘trim & terrific’?

“If you order this cheesecake out it probably has 30 g sat fat and my recipe has 6 g sat fat,” says Holly. “Not all my recipes fit into the diabetic guidelines, however, this cheesecake is so much better for you!  Cheesecake is usually high calorie and high fat.  What did I do?”

“I used reduced- fat cream cheese with a  combination of eggs and egg whites.  I also used fat free sour cream to make the recipe creamy but not add extra fat.  I include white chocolate to give it the flavor but probably another recipe would have double or triple the amount of white chocolate. Also, typically a crust would have a stick of butter in it and I use only 2 tablespoons.  I pride myself on finding the balance of flavor and fat.  It is important that this cheesecake tastes like an indulgence but I also want it to be better for you”

“I make this easy white chocolate cheesecake recipe ahead of time.  Then, I let it cool and freeze to pull out whenever I need it. When your cheesecake is frozen, it is also so much easier to remove from the spring form pan to put on your desired serving plate.  I took my White Chocolate Cheesecake out the day before and  I put in the refrigerator for it to defrost.”

“This is my favorite recipe,” Holly said. “It is funny as once I made it for Thanksgiving and didn’t put the raspberries on top and it wasn’t as popular.  We eat with our eyes!”

‘Fires Of Desire’ Mini Victoria Cakes

Ingredients

3/4 cup butter, softened

3/4 cup Whey Low D Granular

3 eggs, room temperature

1 tsp pure vanilla extract

1 1/4 cup King Arthur Cake Flour Blend

1 tsp baking powder

1/2 tsp salt

sugar- free or no sugar added strawberry or raspberry jam

whipped cream

Whey Low Powder or confectioner’s sugar for dusting

Fresh raspberries for garnish

Directions:

With mixer beat together the butter and Whey Low for 3 minutes. Add eggs one at a time, beating well after each. Add vanilla and beat for an additional 2 or 3 minutes. Sift the dry ingredients into the mixing bowl. Gently fold with spoon just until combined and smooth. Spoon mixture int 12 greased muffin tins. Bake until toothpick inserted in center comes out clean, about 15 minutes. Remove from oven and cool. Remove from pan. Split each cake in half. Spread with jam, top with a little whipped cream. Sandwich the cakes and sift powdered Whey Low or confectioner’s sugar on top. Top each with a raspberry or small strawberry.

Gluten Free Mini Cheesecake Recipe from My Baking Addiction

If you love knowing that a book is based on real life before you dive in, you’re in luck! I just finished the first draft of my next ‘Mister Divabetic Mystery: One Murder Tutu Many’, based on my own dietary restrictions.

I’ve been gluten free under the watchful eye of my doctor for two weeks. She thinks my new diet will help alleviate some of the discomfort I experience from psoriasis. During the winter months in New York City my psoriasis especially flares up so I decided it was worth a try!

Gluten is a protein found in wheat, rye, barley, and other related grains. It’s also found hiding in shocking amount of other foods including ketchup, soy sauce, coffee creamer!  Those who are genuinely intolerant have an autoimmune condition known as celiac disease, where their immune system responds to the gluten protein by attacking the small intestine. The link between celiac disease and type 1 diabetes mellitus is well known.

Common symptoms of malabsorption include gas, bloating, diarrhea, and weight loss. Other symptoms may include fatigue, anemia, irritability, or depression. In many cases of undiagnosed celiac disease, however, there are no symptoms at all.

Once diagnosed, the only treatment of celiac disease is lifelong, complete elimination of gluten-containing foods from the diet. With gluten elimination, symptoms may disappear within a few days, but complete healing of the small intestine may take three to six months or, in some cases, up to two years.

The good news for me, someone who doesn’t have celiac, is that I’m seeing a slight difference in my psoriasis. It hasn’t disappeared but it has stopped itching and  some patches (on my shoulders and elbows) are now slightly smaller in size.

The bad news is a recent Harvard University study found that people who limited their gluten intake or avoided it completely actually had a 13 percent higher chance of developing type 2 diabetes.  I have a family history of diabetes so this news immediately caught my eye!

“We wanted to determine if gluten consumption will affect health in people with no apparent medical reasons to avoid gluten,” explained Dr Geng Zong of Harvard’s School of Public Health. “Gluten-free foods often have less dietary fiber and other micronutrients, making them less nutritious and they also tend to cost more.”

Fiber is known to protect against type 2 diabetes. When the researchers had adjusted for the protective effect of fiber, they found those in the top 20 percent for consuming gluten in their study had a 13 percent less chance of developing type 2 diabetes, compared to those who consumed 4 grams or less.

After reading the report I’ve become conscious of adding more fiber to my diet. It’s that hard to do even if you’re gluten free! I’m eating more vegetables  (the crunchier the better), nuts, berries, beans and brown rice.

Occasionally when I crave something sweet I now make myself a treat. Here’s a great mini cheesecake recipe I found online  at my baking addiction. The author, ‘Erin’ claims, ”these fuss-free gluten-free mini cheesecakes are perfect for parties or potlucks and couldn’t be any easier to make!” After making them, I agree! Double Chocolate RICOTTA CRÈME by ‘The Decadent Diabetic’

It was a thrill to welcome Chef Ward Alper aka ‘The Decadent Diabetic’ as a first-time guest to our free monthly podcast, Diabetes Late Nite this past February.

Like me, he’s determined to show the world that you can lead a ‘glamorous and delicious’ life with diabetes without jeopardizing your health.

I think we’re both passionate diabetes advocates because of we share similar family histories of diabetes and have seen many of our loved ones suffer from diabetes health-related complications.

“My family has a sad history of diabetes. My father was dead by the time he was 67 from complications of the disease. Two of his sisters have had amputations,” says Ward Alper. “Both my brother and sister were diabetic, and died in part because of not taking care of the disease.”

For me, my former boss, Luther Vandross’s stroke related to type 2 diabetes became the catalyst for my desire to create diabetes education with dazzle.

Together Chef Ward and I would like to inspire you to manage diabetes and still eat decadently.

After all, “a diagnosis of diabetes doesn’t have to mean the end of great eating!”, says the Decadent Diabetic.

Double Chocolate RICOTTA CRÈME by ‘The Decadent Diabetic’

“Before you begin keep in mind that this recipe MUST be made in a food processor or it will be grainy. It will still taste good but the texture will be off,” says Chef Ward Alper.

Note: It takes less time to make the dessert than to clean the machine you make it in.

Make ahead

Ingredients

¾ cup GRANULATED SUGAR SUBSTITUTE

1 vanilla bean or 1 tsp. pure vanilla extract

1-15 oz. container of ricotta cheese

1 Tablespoon UNSWEETENED  HERSHEY’S SPECIAL DARK Cocoa Powder

1 tablespoon Coffee Flavored liquor, Bourbon, or Brandy (you can substitute orange juice or strong dark coffee)

1 Squares PERUGINA Bittersweet chocolate

Toasted, sliced almonds for topping (optional)

Lightly sweetened Raspberries or strawberries (3-5 per plating) (Optional)

Directions

Place GRANULATED SUGAR SUBSTITUTE in the bowl of a food processor. Cut vanilla bean open and scrape seeds into the granulated sugar substitute.  Run the processor to make vanilla sugar. (If using vanilla extract you can skip this Step).  Add the cocoa powder.  Process 30 seconds or so.  Add the ricotta cheese and process for two minutes. Scrape down the sides and process for 1-2 minutes more. Add the liquor or coffee or zest and process until blended.

As an extra treat to the palate and the tongue, finely chop (almost pulverize) the squares of Chocolate and fold into the crème. Spoon the mixture into 1 cup white ramekins (for the kids) or Martini or wine glasses. cover and refrigerate 2-4 hours or more.

Top with very lightly sweetened raspberries or strawberries soaked in 1 tablespoon of Trop 50.

Loveable Lamb Recipe from the Decadent Diabetic

Anyone who references the  quote,”Life is a banquet, and most poor suckers are starving to death” from Auntie Mame when talking about food and diabetes like Chef Ward did, is absolutely fabulous in my book.

But diabetes hasn’t always been as wonderful as Rosalind Russell might want us to believe  for the Decadent Diabetic, who is living with type 2 diabetes.

Thankfully, Ward’s more than willing to share his delicious recipes with Divabetic to prove his point and help you ‘GLAM MORE, FEAR LESS.’

In honor of our first-ever Divabetic Valentine’s Day celebration the Decadent Diabetic created a special menu featuring a delicious lamb entree(!)  If you’re having a knee jerk reaction to eating lamb like I did, The Decadent Diabetic offers these words of advice : “I can’t believe how many people I speak with don’t like lamb. Some think it is too ‘gamey’, some think it is cruel to eat any young animal,” says Chef Ward.  “I won’t speak to the latter, but with three simple ingredients like garlic, mustard, and orange, there is not a trace of ‘gaminess’ in my lamb recipes. The marinade I use is perfect for lamb chops, legs, shanks, and racks. This may recipe may change your mind about lamb.”

Loveable Lamb by the Decadent Diabetic Recipe 

Ingredients:

Zest of 1 orange

2 TBSP. orange juice

2 cloves of garlic, grated or minced

1 tsp. Dijon mustard

1 shallot or 3 scallions minced very fine

1 TBSP. olive oil

Salt & pepper to taste

1 tsp. dried tarragon

6 loin or rib lamb chops

HOW TO PREPARE THE RECIPE: Combine all ingredients except the lamb in a bowl and stir to combine. Add the lamb and marinate for at least 45 minutes or even better over-
night.

Pre heat the oven to 400° F.

Pat the lamb dry reserving the marinade. Cook in a skillet over medium heat until browned on each side (about 4 minutes a side). Remove from pan. Place lamb into a baking dish and roast in the oven for 10-14 minutes (depending on your choice of doneness. Pour the reserved marinade into the pan and over high heat reduce by half. Spoon the reduced sauce over the chops.

This recipe is perfectly accompanied by mashed potatoes, mashed or “riced” cauliflower or my pureed turnips with apple.

This recipe also works really well on your grill.

The “Spare a Rose, Save a Child” campaign encourages people to buy one less rose this Valentine’s Day and donate the value of that flower to children with diabetes. Donations go to Life for a Child, an International Diabetes Federation program which provides life-saving diabetes supplies, medication, and education that children in developing countries need to stay alive.
