‘I Woke Up This Morning’ by Lorraine Brooks

I woke up this morning, as always,

And while walking through my hallway,

I looked in the mirror, reflecting,

And thought, why am I so rejecting?

There’s food in my pantry and clothes on my back

And 2 cars in my garage.

I’ve plenty of colleagues and friends, I don’t lack,

I’m blessed with a fine entourage.

There’s heat in the winter and cool when its hot,

There’s no way I’m doubting the blessings I’ve got.

So what if I need to count calories now,

I still can consume that dessert anyhow.

My kidneys are fine and my eyesight’s okay,

And I can still sleep at the end of the day.

I have a few dollars and I can have fun

And not have to justify to anyone.

I make my decisions and live with my fears

And thankful for 65 wonderful years.

This life here on earth can be tragic enough

Without adding to it irrelevant stuff.

The gift is in living, and doing our best.

And then letting go of all of the rest.

So have a good time and be of good cheer.

And you will enjoy the time you have here.

Positive vibes and a will to stand tall

And living won’t be any trouble at all.

Southwestern Pasta Recipe by Holly Clegg (Divabetic’s Father’s Day Celebration)

Our Divabetic Father’s Day Celebration takes on a Spaghetti Western theme to encourage you to embrace your ‘inner cowboy’ and keep riding high with diabetes health!

Cowboys, like today’s miners and farmers, symbolize courage, optimism, and plain hard work. They also remind you that success isn’t only measured with materials, but by where you find satisfaction.

Southwestern Pasta by Holly Clegg

“Quick to make and the outcome is one of the best southwestern pastas with corn and black beans in a perfectly southwestern infused tomato sauce,” says Holly. 

Makes 8 (1 1/4 cup servings) 

1 onion, chopped

1 (14-ounce) can fire-roasted diced tomatoes

1 (10-ounce) can diced tomatoes and green chilies

2 teaspoons chili powder

1/2 teaspoon ground cumin

1 teaspoon minced garlic

1/8 teaspoon ground cinnamon

Pinch Sugar

Salt and pepper to taste

1 (16-ounce) package rotini

1 (15-ounce) can black beans, drained and rinsed

1 1/3 cups frozen corn

1 cup shredded reduced-fat Mexican blend cheese, optional

1. In large nonstick skillet coated with nonstick cooking spray, sauté onion few minutes.  Add cans tomatoes, chili powder, cumin, garlic, cinnamon and sugar.  Bring to boil, reduce heat, simmer, covered, about 10 minutes.  

2. Meanwhile, cook pasta according to package directions; drain. 

3. Stir black beans and corn into tomato sauce until heated. Add pasta to skillet and mix together.  Sprinkle cheese when serving, if desired.

Artistic Dad Raises Awareness for Diabetic Macular Edema 

Nevada artist Arthur Bryce Chisolm developed this mixed media painting after meeting with Maryanne, who lives with Diabetic Macular Edema (DME) and has experienced vision loss due to the disease. The work of art brings to life the things Maryanne cherishes seeing despite her condition.

Set at a particularly beloved beach in San Diego, the painting shows Maryanne’s grandchildren, who she loves spending time with and who make up an important part of her life. The painting also illustrates Maryanne’s eyes, which represent the importance of the steps she took to help protect against vision loss. Spaghetti Westerns Trivia: Clint Eastwood 

Younger film fans may find it hard to believe, but Clint Eastwood wasn’t always a badass. Prior to his iconic performance in “A Fistful of Dollars” (1964), Eastwood was best known to American audiences as Rowdy Yates, a kind-hearted supporting character on the popular “Rawhide” TV show. In fact, it was the opportunity to leave Rowdy’s friendly persona behind that most intrigued Eastwood about going to Spain to work for director Sergio Leone. “I decided,” Eastwood said, “it was time to be an anti-hero.”

No one could have predicted that “A Fistful Of Dollars,” released in Italy 50 years ago this September, would simultaneously launch Eastwood to international stardom and set the guidelines for one of the most unique and unexpectedly durable sub-genres in cinema history: the “Spaghetti Western.”

2. Ask for samples.

Check out the ADA’s site for the dates and locations of upcoming Diabetes Expos, where free health screenings, classes, and samples are available. You can also contact supply companies directly and ask for samples.

3. Look for sales and coupons.
In addition to flyers and other announcements from your local drug store or pharmacy, check to see if the store publishes a free monthly or seasonal health magazine that may also contain discount coupons. Shop around at different stores, including the big-box department stores, for the best prices on generic and store-brand products. But always compare products to be sure you’re getting a deal. Asparagus with Zucchini Rings by Holly Clegg

This veggie captivated my attention at a dinner for 300 people so I went home to make them. Simple ingredients, eye-catching and unbelievably delicious- they add flair and flavor to any plate. Make ahead, refrigerate, and cook when ready to serve.

Makes 10 bundles

Ingredients:

1 medium zucchini

1 pound asparagus, trimmed discarding ends

1-2 tablespoons olive oil

Salt and pepper to taste

Directions:

1. Preheat oven 400°F. Coat foil lined baking sheet with nonstick cooking spray.

2. Cut zucchini into 1/4-inch diagonal slices and hollow out hole in center of each slice, leaving an edge (like napkin ring). Place about 3 asparagus, depending on size through hole, and lay on baking sheet.

3. Drizzle with olive oil and season to taste. Roast 25-30 minutes or until tender and browned.

Health Headlines: Santa Fe, N.M. residents are considering a new tax on sugary sodas and other sweetened beverages to boost access to pre-kindergarten

The 2 cents-per-ounce tax would apply not only to traditional sugary sodas but also sweetened sport drinks such as Gatorade, many caffeinated energy drinks, sweetened teas, lemonade and some coffee drinks that contain sweetened syrups.

Santa Fe Mayor Javier Gonzales, a key proponent of the tax, says that the proposal includes an incentive for the beverage industry to come up with healthier products by exempting lightly sweetened beverages. That exemption applies to drinks with 10 grams of sugar or less per eight fluid ounces.

San Francisco, Oakland and Albany, California, Boulder, Colorado, Chicago, Illinois, and Philadelphia, PA stunned the industry by approving ballot measures in favor of soda taxes.

In 1914, U.S. President Woodrow Wilson proposed a special revenue tax on soft drinks, beer and patent medicine after the outbreak of World War I caused a decline in imports and a corresponding decline in credit created by import tariffs. This proposed taxation measure was not however linked to the anticipated health outcomes of reduced sugar sweetened beverage consumption.

Did you know the idea to celebrate Father’s Day originated in the USA and has been officially celebrated there on the third Sunday in June since 1966?

Many people credit Grace Golden Clayton, from Fairmont, West Virginia for the concept of Father’s Day, after she suggested a day celebrating fatherhood in 1908.

She put forward the idea following a mine explosion in a nearby town which killed more than 360 men – arguing that children in the town needed a time to remember their fathers.

Mrs Clayton may have been inspired by Anna Jarvis’ work to establish Mother’s Day; two months prior.

Now, the day exists simply to remind everyone that dads are great.

Southwestern Roasted Vegetables by Holly Clegg

“A fantastic satisfying vegetable entrée as the spicy taco seasoning perfectly contrasts the naturally sweet yams,” says Holly. “Throw on a steak if someone desires a more substantial meal to serve with the vegetables.  Goes great with pork tenderloin.”

Ingredients:

4 cups peeled, cubed sweet potatoes (yams), cut in 1-inch cubes 

1 1/2 cups zucchini, cut into small chunks

1 small red onion, cut into small chunks

1 (6-ounce) package portabella mushroom slices, halved

2 tablespoons olive oil

3 tablespoons reduced-sodium taco seasoning mix (about half of a 1.25-oz packet)

Salt to taste 

Directions:

1. Preheat oven to 425˚F. Coat baking sheet with nonstick cooking spray or line with foil.

2. In large bowl, combine sweet potatoes, zucchini, onion, and mushrooms. Toss with olive oil to coat vegetables. Sprinkle with taco seasoning, toss and spread vegetables on baking sheet.

3. Bake 40 minutes, shaking pan every 15 minutes, until vegetables are tender and roasted.

Makes 8 servings/ serving size: 1/2 cup

Spaghetti Western, also known as Italian Western or Macaroni Western (primarily in Japan), is a broad subgenre of Western films that emerged in the mid-1960s in the wake of Sergio Leone‘s film-making style and international box-office success. The term was used by American critics and other countries because most of these Westerns were produced and directed by Italians.

The film, A Fistful of Dollars was at first intended by Leone to reinvent the western genre in Italy. In his opinion, the American westerns of the mid- to late-1950s had become stagnant, overly preachy and not believable.

Clint Eastwood was not the first actor approached to play the main character. Originally, Sergio Leone intended Henry Fonda to play the “Man with No Name.” However, the production company could not afford to employ a major Hollywood star. Next, Leone offered Charles Bronson the part. He, too, declined, arguing that the script was bad. Both Fonda and Bronson would later star in Leone’s Once Upon a Time in the West (1968)

Owen sees his four elements of character and ‘The Code of the West’ as a tool for self-discovery and personal success, “Whenever someone chooses to do the right thing, to tackle the tough job, or to stand up for what he or she truly believes in, that person quietly becomes a force of good.”

Divabetic Father’s Day: Celebrity Dads & Diabetes 

It’s been a few years since Tom Hanks shared that he was living  with type 2 diabetes during an appearance on The Late Show with David Letterman.

Tom revealed that he blames himself for not having followed a healthier diet when he was younger, explaining that it has led to his health struggles today.

“I’m part of the lazy American generation that has blindly kept dancing through the party and now finds ourselves with a malady,” the Saving Private Ryan star told the Radio Times. “I was heavy. You’ve seen me in movies, you know what I looked like. I was a total idiot.”

Tom Hanks admitted that he had been struggling with high blood sugar for years during his sit down interview with Dave.

“I went to the doctor and he said, ‘You know those high blood sugar numbers you’ve been dealing with since you were 36? Well, you’ve graduated! You’ve got Type 2 diabetes young man,'” Tom Hanks told David, before adding that “it’s controllable.”

Tom’s wife, actress and producer Rita Wilson opened up about how the diagnosis has forced them to make some lifestyle changes

“We’ve really cut back a lot on sugar, and we find time in every day to exercise,” Wilson told People at the movie premiere of Fed Up, a documentary that explores the country’s current obesity epidemic. “We actually walk and hike together. We’re not going to be doing duo, tantric yoga, or whatever.”

In addition to revamping the couple’s diet and exercise routine, the health scare also gave Wilson a fresh mindset. “When [you] were younger, you used to watch what you eat and exercise because you wanted to look really awesome,” explained the actress. “And now it’s because you want to feel really awesome.”

‘The Great Silence’: Diabetes & Erectile Dysfunction (Divabetic’s Spaghetti Western-Themed Father’s Day Celebration)

Our ‘Spaghetti Westerns’ theme for our Divabetic Father’s Day Celebration hopes to shed light on one of the more common, but often not discussed,  diabetes health-related complications for men: Erectile dysfunction (ED).

Erectile dysfunction (ED) — the inability to get or maintain an erection firm enough for sex — is common in men who have diabetes. It can stem from problems caused by poor long-term blood sugar control, which damages nerves and blood vessels.

Does the man in your life keep quiet about having trouble getting an erection, keeping an erection and/or shooting blanks?

If so, then maybe the title of one of the most popular Spaghetti Western films: The Great Silence’   accurately sums up what’s happening in your bedroom.

In the film, a mute gunfighter defends a young widow and a group of outlaws against a gang of bounty killers in the winter of 1898, and a grim, tense struggle unfolds.

More to the point, 95% percent of men are ‘mute’ about discussing erectile dysfunction.  A national telephone survey of 502 American men age 18 or older, which was undertaken as part of the Cleveland Clinic’s “MENtion” it campaign (2016) found only 5% of men discuss erectile dysfunction (ED) with their male friends, and only 3%  mention urinary tract issues.

One-fifth of men (22 percent) do not discuss private topics such as health or relationships with anyone. Baby Boomers are especially private in this regard, with only one-third having more than one person they feel comfortable sharing such information with, compared to 47 percent of Millennials.

Why is ‘The Great Silence’ About ‘ED” Still Going On Today? 

In therapy, many issues are covered, but sex may still be an uncomfortable topic for many people and even therapists to talk about. Yet many people with diabetes have sexual issues that need to be resolved in order for life to be the most fulfilling that it can be.

“Once ED occurs, the man can start to become very anxious about it happening again”, says, Dr. Laura Berman, a sex educator and relationship therapist. “Ironically, this can make ED more likely to occur, and it can also complicate his relationship with his partner…. Meanwhile, his partner might have no idea what’s going on and be very concerned and even angry.”

I reached out to one of my favorite certified diabetes educators, Author Janis Roszler, LMFT, RD, LD/N, CDE, FAND , who also just happens to be a family therapist (!), to share some tips to help men open up about E.D:

You are not alone.  ED is a very common problem that affects more than 39 million men in the United States.  You are not the first man to bring up the topic with your doctor, and won’t be the last!

There is a treatment for almost every man who has E.D.  If you tried oral medications and they didn’t help, don’t give up.  You have a lot of options.

You deserve a good sex life.  Don’t assume that having E.D. is the way things must be from now on.  For most men, intimacy is very important for their mental and physical health.  Don’t give up!

If you feel uncomfortable about the topic, tell your healthcare provider that you have something very personal to discuss.  Hopefully, your doctor, nurse or other expert will get the hint and open the discussion for you.

What you Can Do If Your Suffering from ED!

Keep your blood glucose level under control to prevent urological and other diabetes-related problems. Medications, exercise, and a proper diet can help you manage your blood sugar levels.

Conditions like diabetes or heart disease can lead to emotional problems, including anxiety or depression. These can worsen your ED and other aspects of your health. Talk to your doctor if you start to experience feelings of hopelessness, sadness, anxiety, or worry.

Few things can take the wind out of your man’s sails quite like learning that he’s shooting blanks. But that’s the reality for more guys than many people realize.“Infertility affects one out of 10 couples,” says Darius Paduch, M.D., Ph.D., director of sexual health and medicine at Weill Cornell Medical College. “And in 30 percent of those cases, men will be the main reason.”
Don’t be afraid to talk with your doctor if you have a problem that affects your sex life. He or she may be able to suggest a treatment. For example, the most common sexual difficulty of  women with diabetes is painful intercourse caused by vaginal dryness. Your doctor or a pharmacist can suggest over-the-counter vaginal lubricants or moisturizers to use. Water-based lubricants are helpful when needed to make sex more comfortable. Moisturizers are used on a regular basis, every 2 or 3 days. Or, your doctor might suggest a form of vaginal estrogen.
Physical problems can change your sex life as you get older. But, you and your partner may discover you have a new closeness. Talk to your partner about your needs. You may find that affection—hugging, kissing, touching, and spending time together—can make a good beginning.
What is Male Infertility?Male infertility means you can’t get your partner pregnant. It often results from low production of sperm, called oligospermia, or from complete absence of sperm in your ejaculate, called azoospermia.Sperm that doesn’t move correctly, or is shaped abnormally, can also have problems reaching an egg to fertilize. Obstructions preventing the sperm from leaving the body can be to blame, too.

What Causes It?

Hormonal imbalance may be to blame. You need adequate levels of testosterone, follicle-stimulating hormone (FSH), luteinizing hormone (LH), and prolactin to produce healthy sperm, so low levels could cause a problem.

Certain health conditions can play a role, too. Diabetes, for instance, damages the nerves that move the sperm out of the penis, Dr. Paduch says. READ MORE

Diabetic Macular Edema (DME) is an accumulation of fluid in the macula-part of the retina that controls our most detailed vision abilities-due to leaking blood vessels. In order to develop DME, you must first have diabetic retinopathy. Diabetic retinopathy is caused by damage to the blood vessels in the tissue at the back of the eye (retina). Poorly controlled blood sugar is a risk factor. Early symptoms include floaters, blurriness, dark areas of vision, and difficulty perceiving colors. Blindness can occur.

‘Caught Bread Handed: A Bakeshop Mystery’ by author Ellie Alexander is what I like to call  a ‘one day’ book because you’re able to read it in one day or more accurately a lazy afternoon. It’s quick and fun.  

Welcome to Torte—a friendly, small-town family bake shop where the oven is heating up as high as the body count…

Jules Capshaw is still chewing over her husband Carlos’s return to Ashland, Oregon. Could there be too many cooks in the kitchen? Whatever is stirring between those two will have to wait. Despite the Oregon Shakespeare Festival being dark for the winter, the bakeshop is bustling, the dough is rolling, and there’s no rest for the weary…especially when murder is thrown into the mix. My only complaint is that the the nuisances of baking outweigh the mystery behind the murder in this story. Chapter after chapter, I kept wondering when the main character, Juliet ‘Jules’ Capshaw, was going to take off her apron and get down to the business of investigating. However, you will find yourself falling love with Ashland, Oregon and the crazy characters that inhabit it.

The author also does a great job of giving you a slice of ‘cake without the frosting’ when it comes to describing the daily grind of owning and operating a bakery/restaurant. The rhapsody of creating a new recipe is liberally sprinkled over the nonstop, never ending cycle of early mornings, financial worries and physical exhaustion. I don’t think there’s enough coffee for me to put on a chef’s hat! Now, that I’m eating ‘gluten free’ I appreciated her gluten free baking tip too. 

The gay character, Lance hooked me. He’s smart, witty, sarcastic busybody; a bit like Paul Lynne. And right before you think he’s going to be a total stereotype of a ‘theater queen’ the author reveals another, truthful side to the character by hinting at his issues with intimacy. 

I read this book for inspiration. Currently I’m working on rewrites for this year’s ‘Mister Divabetic Mystery: Gypsies, Tramps & Peas’ as well as researching and outlining my next ‘Mister Divabetic Mystery: One Murder Tutu Many’ podcast script. The purpose of our annual diabetes mystery podcasts is to educate you about diabetes self-care in an entertaining way. I also want to encourage you to become a diabetes detective and investigate the reasons behind why you may be experiencing unexpected high’s and low’s with your healthcare team. 

‘Mister Divabetic Mystery: Gypsies, Tramps & Peas’ takes place at the Mermaid Parade in Coney Island, New York.  The happy healthcare host’s first foray into healthy catering gets off to a soggy start when the guest of honor is found swimming with the fishes! Divabetic Egg-Cellent Easter Brunch Ideas

We know many people in our Divabetic community don’t like to celebrate the holidays because they feel they may disrupt their diabetes care. But with a little pre-planning and guidance from your healthcare entourage you can still enjoy Easter related festivities without failing your diabetes.

From the annual Easter Egg Roll to eating iguana, turtle and the world’s largest rodent in Colombia, there are many different Easter traditions around the world to choose from!

Easter is the most important religious holiday in the Greek Orthodox calendar. Shops line their windows with brightly-coloured wrappings for Easter candles and chocolate eggs. Greek families sit down to a meal of whole roasted lamb or kid goat on Easter Sunday.

Germans like to decorate trees with hollowed-out, painted eggs for Easter. One elderly man has taken the art form to an extreme degree.

An old European tradition of tapping eggs together in a contest to see which is the strongest is enjoying a revival in Louisiana. The town of Marksville claims to host the oldest “egg-knocking” competition in the United States. Competitors pair up on the steps of the courthouse on Easter Sunday and knock the tips of two eggs together. If the egg cracks, its owner is out of the competition. The process continues until just one egg remains.

Instead of tucking into chocolate eggs, Colombians like to eat iguana, turtle and the world’s largest rodent for their traditional Easter dinner.

We say, whatever you and your loved ones may choose to do,  “Don’t let diabetes dim your dazzle!” 

We asked several experts, Cookbook Author, Holly Clegg, Wine & Spirits Expert Samantha Shaken Baker and diabetes advocate, author and model Doris Hobbs to share their favorite recipes, picks and fashions to encourage you to celebrate a Divabetic Easter in style without compromising your diabetes health.

Open Face Breakfast English Muffins Recipe from ‘Eating Well To Fight Arthritis’ cookbook by Holly Clegg. 

“These colorful Western omelet ingredients are piled on an English muffin and make this the ideal grab and go satisfying breakfast” says Holly.  Egg beaters may be substituted for the egg and egg white combination.

Makes 6 muffins

1/2 cup chopped Canadian bacon

1/4 cup chopped onion

1/4 cup chopped green bell pepper

1/3 cup chopped tomatoes

2 eggs

5 egg whites

Salt and pepper to taste

3 whole-wheat English muffins, halved

1/4 cup reduced-fat shredded Cheddar cheese

1. In nonstick skillet coated with nonstick cooking spray, cook Canadian bacon 2 minutes or until begins to brown.  Add onion and, green pepper sautéing until tender.  Add tomatoes, cook 1 minute.  Remove from pan, set aside.

2. In small bowl, whisk together eggs and egg whites.  In same nonstick skillet coated with nonstick cooking spray, scramble eggs.  Season to taste.  When eggs are almost done, stir in bacon onion mixture.

3. Meanwhile, toast muffin halves.  Divide egg mixture to top muffin halves.  Sprinkle with cheese.

Note:  The prepared muffins may be refrigerated and reheated in the microwave or in oven preheated at 350°F. about 5 minutes or until well heated.

If you love vintage brooches,  there is no need to  curb your enthusiasm because you think you wouldn’t get a chance to wear all the ones you find.  There are plenty of ways to show them off!

DIVABETIC TIP: While alcohol can make blood sugar drop too low, certain beverages (such as beer or sugary mixers) can cause a blood sugar spike. What’s more, consuming more than one or two drinks can cloud your thinking and affect other food choices you make that day, which can also affect glucose levels.

What’s brunch without a little bubbly?

Mildly Mexican Breakfast Bake Recipe from ‘Eating Well To Fight Arthritis’ cookbook by Holly Clegg

“Eat with color and you know you are eating healthy! This overnight sensation with bright colors and flavors will wake up those morning taste-buds!” says Holly.

Makes 8 (1-cup) servings

8 ounces ground breakfast turkey sausage

1 onion, chopped

1 red, green, or yellow bell pepper, cored and chopped

2 cups baby spinach

1 teaspoon minced garlic

1 (4-ounce) can green chilies

4 eggs

6 egg whites

2 cups fat-free half-and-half

2 teaspoons chili powder

1/2 teaspoon ground cumin

1 1/2 cups reduced-fat shredded Mexican blend cheese

5 (8-inch) 98% fat-free flour tortillas, cut into quarters

1/2 cup chopped green onion

1. Coat 13x9x2-inch baking dish with nonstick cooking spray.

2. In large nonstick skillet, cook and crumble sausage until starts to brown. Add onion and bell pepper, cooking until sausage is done and vegetables tender. Add spinach, garlic and green chilies; cooking until spinach wilts, about 2 minutes.

3. In large bowl, whisk together eggs, egg whites, half-and-half, chili powder, cumin and cheese.

4. Spoon one-third of sausage mixture in baking dish. Top with one-third tortilla quarters and one-third cheese and green onions. Repeat layers, ending with green onion. Pour egg mixture evenly over casserole and refrigerate, covered, at least 6 hours or overnight.

5. Preheat oven 350°F. If using glass baking dish, place in cold oven and bake 50-60 minutes or until bubbly, golden brown and knife inserted into custard comes out clean.

DIVABETIC TIP: Want to get more for your money? Buying fruit and vegetables in season often helps! Prices usually come down when a fruit or vegetable is in season. In addition, the quality of the produce (taste, texture, freshness, etc.) is at its best. When you buy produce that is out of season (for example, buying berries in the winter), you are likely buying food that has been shipped hundreds or even thousands of miles. It is usually more expensive, less environmentally-friendly, and the quality not as good.

Our dazzling “Divabetic New Year’s Eve for 2” menu starts with Potato Soup
This snazzy soup starts with hash browns, so no time-consuming potato peeling; almost faster than opening a can. I top with cheese and green onions.

Makes 2 (1-cup) servings

2 cups frozen hash brown potatoes, partially thawed
1 (14 1/2-ounce) can fat-free chicken or vegetable broth
1/3 cup finely chopped onion
1 tablespoon all-purpose flour
1/3 cup skim milk

1. In medium nonstick pot, heat hash browns, broth, and onion to a boil, reduce heat, and cook, covered, about 8-10 minutes.
2. In small bowl, whisk together flour with milk. Add to potato mixture and bring to boil. Reduce heat, and cook, stirring, for 5 minutes or until thickened. For thinner soup, add more milk.

Next, serve a delicious Kale Salad with Fruity Vinaigrette
You must give kale a try, this intriguing salad with an extraordinary tasty flavor combination. You will love the Fruity Vinaigrette for it’s perfect blend of sweet and savory flavors. Makes 8 servings

8 cups chopped kale, center ribs and stems removed
1 cup shredded red cabbage
1 apple, nectarine or fruit of choice, chopped
1/3 cup chopped pecans, toasted
Fruity Vinaigrette (recipe follows)

1. In large salad, toss together kale, cabbage, fruit and pecans. Toss with Fruity Vinaigrette (see recipe).

Fruity Vinaigrette

3 tablespoons olive oil
2 tablespoons apple cider vinegar
1/4 cup apricot preserves
2 tablespoons lemon juice
1 teaspoon Dijon mustard

1. In bowl, whisk together all ingredients.

Our entrée for “Divabetic New Year’s Eve for 2” is an Easy Roasted Salmon
Love salmon or never cooked it? You must try this incredible recipe—season salmon, pop in the oven and you have a terrific meal ready in minutes.

Makes 2 servings

1/8 teaspoon ground cinnamon
Salt and pepper to taste
2 (6-ounce) salmon fillets
1 tablespoon light brown sugar
2 teaspoons chili powder
1/2 teaspoon ground cumin

1. Preheat oven 400° F. Line baking sheet with foil.
2. In resalable plastic bag, mix together brown sugar, chili powder, cumin, cinnamon, and season to taste. Add salmon, coating all over and pat in seasoning.
3. Transfer to prepared pan. Bake 12-15 minutes or until fish flakes easily.

Serve your entrée with Roasted Garlic Broccoli
By the time the broccoli is done, your dinner will be ready. Roasting broccoli is a simple way to intensify the natural flavor. Sometimes I toss in artichokes or some extra veggies I have hanging around.

Makes 2 servings

4 cups broccoli florets
1 tablespoon olive oil
2 teaspoons minced garlic
Salt and pepper to taste

1. Preheat oven 450°F. Line baking sheet with foil.
2. Toss broccoli with olive oil and garlic on prepared pan. Roast 20 minutes, stirring after 10 minutes. Remove from oven season to taste.

Spicy Advice: Roasting is cooking at a high temperature that browns, caramelizes and crisps.

A finally, indulge in dessert with Holly Clegg’s Berry Parfait (I would cut in fourths so you have extra the next day) and make four)
Light and delightful, strawberries or your favorite berries layered with a luscious cream cheese layer and ladyfingers.

Makes 16 (1/2-cup) servings

2/3 cup seedless sugar-free raspberry preserves
1/4 cup orange juice
6 ounces reduced-fat cream cheese
1/4 cup sugar
1 teaspoon vanilla extract
1 (8-ounce) container fat-free whipped topping, thawed, divided
2 (3-ounce) packages ladyfingers, split in half (24)
1 1/2 cups strawberries, stemmed and sliced

1. In small bowl, mix together preserves and orange juice.
2. In mixing bowl, cream together cream cheese, sugar, and vanilla until light. Mix in whipped topping reserving, 1/2 cup for topping.
3. Line bottom of an oblong small dish with split ladyfingers. Layer with preserves mixture, cream cheese layer, and top with strawberries. Repeat layers with remaining ladyfingers, preserves and cream cheese layer.
4. Carefully top with thin layer of remaining whipped topping. Top with remaining strawberries. Cover, refrigerate several hours or overnight.

Tip: Use raspberries so you don’t have to even cut the strawberries. This recipe works well in individual servings.

Nutrition Nugget: You will hardly believe this luscious treat is diabetic-friendly so there is always room for dessert!

DIVABETIC TIP: While alcohol can make blood sugar drop too low, certain beverages (such as beer or sugary mixers) can cause a blood sugar spike. What’s more, consuming more than one or two drinks can cloud your thinking and affect other food choices you make that day, which can also affect glucose levels.
