Voltage believes exercise and healthy eating doesn’t have to be dull or feel like drudgery. She uses games, prizes, disco music, glow stick, and rhinestones to boost people’s self-confidence. She also wrote Sugar Savvy Solution to help people become ‘sugar savvy’ by adhering to the American Heart Associations guidelines for limiting added sugars to no more than 6 percent of calories daily.

Here’s a quick synopsis of Tomorrow Is Not On The Menu: The happy healthcare host, Mr. Divabetic, lands his to-die-for job as a caterer for the nation’s hottest health guru, Wendy Wattage’s Wellness Retreat on the Jersey Shore. Everything is hunky-dory until the body of the nasty food critic, Marilyn Macaroni, is found stabbed to death with one of Max’s new chef knives. Now he’s the prime suspect in a big, fat murder investigation! Can he and his team of friends, diabetes educators, and his nosey Italian mother, Mama Rose Marie, find the killer before the police arrive? Weight loss murder never tasted so good.

“I started experimenting by using almond milk or whole milk mixed with water to cut down on carbs, then tried different flours, incorporating white whole wheat flour, soy flour, oat flour, black bean flour, and other alternatives into my brownies, cakes, and cookies,” she said in a How 2 Type 2 article.

Famous Pie Crust Cookies

These famous Pie Crust Cookies are insanely good! They’re perfectly proportioned bites of pie in a cookie! Each bite delivers a flaky crust, a heavenly layer of pie filling ( I tried blueberry lemon and strawberry rhubarb), and buttery caramelized streusel. I discovered them on the Upper Westside after a power walk across Central Park. 

I read on their website that Pie Crust Cookie owner, Janie, spent years struggling with addiction and homelessness in her early 20’s.  At a time when Janie had no self-love, seeing the looks on people’s faces when they devoured her treats slowly filled her with pride that she had never before felt. Janie says “I never intended to be a small business owner, had no idea what being an entrepreneur meant but this path chose me and it’s the most amazing ride”.

The website also mentions that Janie is a Food Network Chopped Sweets Champion, the recipient of Pepsi’s “Stacy’s Rise Project” grant and scholarship to the International Culinary Center’s Culinary Entrepreneurship Program, and she was also a finalist on the 2018 Culinary Voice Scholarship Contest.

Gingerbread Cake Squares Recipe by The Diabetic Pastry Chef 

Ingredients

2 eggs

1/2 cup sugar or 1/2 cup Splenda For Baking

1/2 cup molasses

3/4 cup melted butter or melted Smart Balance regular spread

1 1/4 cup whole wheat pastry flour

1 1/4 cup all-purpose flour

2 tsp baking powder

2 tsp ground ginger

1 1/2 tsp ground cinnamon

1/2 tsp ground cloves

1/2 tsp ground nutmeg

1/2 tsp baking soda

1/2 tsp salt

1 cup boiling water

Directions:

Beat eggs. Blend in sugar or Splenda, molasses, and melted butter or spread. In separate bowl, sift together all dry ingredients. Alternate adding flour mixture with boiling water to batter, and beat until smooth.

Pour batter into a greased 9-inch square baking pan, or into greased square or round muffin tins. Bake 30 to 40 minutes in a preheated 350-degree oven, or until toothpick inserted in center comes out clean. Cut  gingerbread in pan into 18 slices. Serve warm or at room temperature topped with whipped cream.  Yield: 18 servings.

Blind baking a pie crust is pre-baking the crust, without filling, then adding the filling once the crust is baked according to the King Arthur Baking Company. The pie can then be placed back in the oven for the filling to bake; or the baked crust can be filled with cooked filling, the whole left to cool and set.
