Decadent Apple Sauce Truffles Recipe by Call Me PMc

These days we seem to be cooking and baking more like everyone else who is sheltering in during the pandemic. I’ve even had the opportunity to attempt reinventing some of my favorite recipes in healthier ways. 

Recently I discovered that unsweetened applesauce can be substituted for sugar equally: 1 cup applesauce for 1 cup sugar in recipes. If you want to try this swap, you also need to reduce the amount of liquid (milk or water) in the recipe because applesauce is a wet ingredient,. Usually reducing the liquid (milk, water, etc) by a quarter cup will do the trick. If there’s no added liquid, then there’s no need to adjust.

1 cup all-purpose flour

1 cup old-fashion rolled oats

1/3 cup sugar

3 tsp baking powder

1 tsp salt

1 tsp cinnamon

1 large egg

1/2 cup buttermilk

3/4 cup unsweetened applesauce

1/2 cup oil

1/3 to 1/2 cup ready-made cream cheese frosting

16 oz white chocolate candy melts

2 tsp vegetable shortening

toffee bits or sprinkles of your choice for top optional

Thai Chicken Lettuce Wraps Recipe from Collar Greens Health & Wellness Day

Enoy this popular, low carb Thai Chicken Lettuce Wraps recipe from Collar Greens Health & Wellness Day presented at Central Farm Markets in Fairfax, VA. This recipe is adapted from the American Diabetes Association’s Diabetes Forecast Magazine.

A low-carb diet can help people with diabetes better manage their blood sugar levels. Carbohydrates or carbs raise blood sugar levels more than other foods.

Thai Chicken Lettuce Wraps

Ingredients

6 large lettuce leaves, Boston or Bibb lettuce works well

4 oz. skinless chicken breast, grilled or poached, and finely chopped

2 tbsp Asian peanut sauce (recipe below)

1 carrot, julienned or grated

1 red pepper, diced

2 scallions, thinly sliced

Directions

Toss the chicken with the peanut sauce

Laying a piece of the lettuce on a plate. Top the lettuces with the chicken, peanut sauce, carrots, peppers, and scallions. Roll up the lettuce leaf and enjoy.

Makes: 6 servings

Serving Size: 1 wrap 

Asian Peanut Sauce Recipe

Ingredients

1 cup  creamy peanut butter

1 1/2 cups reduced -sodium, low-fat chicken broth

1/4 cup fresh lime juice

3 tbsp Splenda Brown Sugar blend

2 tbsp  light (lower-sodium) soy sauce

2 tbsp peeled and grated fresh ginger

1/2 tsp crushed red chili flakes

Directions

Heat the peanut butter in a small saucepan over medium heat. Add the chicken broth, and mix until combined. 

Add in the remaining ingredients, and cook over medium-low heat for 5 minutes, or until thickened. Use as sauce over cooked shrimp, scallops, chicken, turkey, or beef.

Store in a sealed container in the refrigerator for 2-3 days for the freezer for 3 months 

*this recipe contains gluten because of the soy sauce

Caponata Quinoa Salad Recipe by Chef Jonathan Bardzik

Storyteller, Cook and  Author Jonathan Bardzik surely knows a thing or two about the importance of cooking with fresh ingredients! He’s one of the hottest chefs in the Washington D.C. area, as his ‘farm to table’  cuisine has lit up farmers markets, including Mosaic Central Farm Markets, and even on the shelves at local bookstore.
“I believe that life can and should be lived well, and that living well is within reach – across many economic levels – each and every day by preparing a simple meal, setting a table and sharing it with those you love, even – and maybe especially – when that is a table for one,” said Jonathan in an interview with Instinct magazine.
Serves 6-8
Ingredients:
3 tbs olive oil
3 small eggplant in 1/2” dice
2 medium sweet peppers
3 tbs capers
1 lg tomato, diced
1/2 red onion, thinly sliced
2 tbs chopped basil
1/4 cup chopped parsley
3 cups cooked quinoa
2 cloves garlic, minced
1/3 cup red wine vinegar
1 tsp Dijon mustard
2/3 cups olive oil – the good stuff!
Directions:
Warm 2 tbs oil in 12” skillet over medium heat. Cook until lightly browned on all sides, then reduce heat to medium low and cook until fork tender. Remove from pan.
Warm 1 tbs oil over medium heat. Thinly slice peppers and add to pan. Cook until tender, about 5 minutes. Add capers and cook until fragrant, 1 minute longer.
Toss together eggplant, peppers, tomato, onion, basil and parsley.
Mash garlic into a paste with a pinch of coarse salt. Whisk together garlic, red wine vinegar and mustard. Whisk in olive oil to form a creamy emulsion.
Dress salad and serve over quinoa.

Father’s Day will be quickly upon us, why not surprise Dad with a tasty meatless dish at your celebration? After all, June is Men’s Health Month.

I reached out to my good friend, Best-Selling Cookbook Author Holly Clegg for a vegetarian recipe that will satisfy the meat lovers in your family and help keep Dad healthy and happy. 

“This fabulous vegetarian southwestern quinoa recipe will be a game changer for them,” says Best-Selling Cookbook Author, Holly Clegg. “It’s Diabetic Friendly and Gluten Free. You just put quinoa on to cook, sauté vegetables and combine together to pop in the oven for hearty, healthy and absolutely wonderful one-dish quick meal!”

Southwestern Veggie Quinoa Bowl from Holly Clegg’s ‘Guy’s Guide To Eating Well: A Man’s Cookbook For Health and Wellness’

Ingredients:

3/4 cup quinoa

1 1/2 cups water

1 cup chopped onion

1 red bell pepper, cored and chopped

1 cup chopped peeled sweet potato

1 teaspoon minced garlic

1 teaspoon ground chili powder

1 teaspoon ground oregano

1/2 teaspoon ground cumin

1 (15-ounce) can black beans, rinsed and drained

1 1/2 cups salsa

1/4 cup fresh chopped cilantro

1 cup reduced-fat Mexican blend cheese

Directions:

1.  Preheat oven 350°F.  Coat 9-inch baking dish with nonstick cooking spray.

2.  In medium nonstick pot, combine quinoa and water. Bring to boil, reduce heat and cook, covered about 17-20 minutes or until water absorbed and quinoa cooked. Remove from heat and fluff with fork. Set aside.

3. Meanwhile, in large nonstick pan coated with nonstick cooking spray, sauté onion, bell pepper, sweet potato, and garlic until tender, about 5-7 minute or until tender. Add chili powder, oregano, and cumin.

4.  To vegetables, add cooked quinoa, black beans, salsa, and cilantro.

5.  Transfer quinoa mixture into prepared baking dish. Top with cheese. Bake 20 minutes or until cheese is melted.

Makes 6 (1-cup) servings

Holly Clegg’s Terrific Tip:  “Chicken may be added if you want a heartier meal.  Garnish with diced avocado, tomatoes, and cilantro.”

Eating Less Meat Doesn’t Make You Less Manly

Although a vegetarian or vegan diet won’t “cure” type 1 or type 2 diabetes — despite some erroneous claims — scientists have found that a meatless diet can do quite a bit of good for people with diabetes. A study in Diabetes Care showed that people with type 2 diabetes on a vegan diet lowered their cholesterol and improved their kidney function. And eating more vegetables and carbohydrates that are low on the glycemic index can help make it easier to manage your blood sugars.

If you’re considering a vegetarian diet, please consult with your doctor. Additionally,  it may be helpful to speak with a registered dietitian (RD) who can help you create an eating plan that provides all the necessary nutrients and the right number of calories to maintain a healthy weight.

‘Blue Christmas’ Sugarfree Lemon and Blueberry Tartlet Recipe from the Diabetic Pastry Chef

Over the past year we have shared healthy recipes, style and entertaining suggestions and diabetes care tips to help you embrace holiday celebrations without compromising your diabetes self-care.

We know many people in our Divabetic community don’t like to celebrate the holidays including Christmas Eve and Christmas because they feel they may disrupt their diabetes care. But with a little pre-planning and guidance from your healthcare entourage you can still enjoy the festivities without failing your diabetes.

Our good friend, Stacey Harris aka ‘The Diabetic Pastry Chef’ offers this Sugar-Free Lemon and Blueberry Tartlet recipe to add to your menu for ‘Blue Christmas’ Day celebration.

Long after singer Fats Domino found his thrill on Blueberry Hill, researchers have found some thrilling news about blueberries. These tiny berries may play a big role in helping manage diabetes.

According to the American Diabetes Association (ADA), berries are a diabetes superfood because they’re packed with antioxidants, vitamins, and fiber — plus, they’re low-GI. Three quarters of a cup of fresh blueberries has 62 calories and 16 grams (g) of carbohydrates. When you have diabetes, keep your blood sugar within a healthy range, thereby lowering your risk of certain diabetes complications, including diabetic retinopathy, or nerve damage; kidney disease; eyesight issues like glaucoma or cataracts; and serious life-threatening illnesses like heart disease and stroke.

Here’s Stacey Harris’ fabulous Sugar-free Lemon Blueberry Tartlets Recipe for you and your family to enjoy!

Curd Ingredients:
3 large eggs
½ to 3/4 cup Whey Low® Type D Granular
¼ cup freshly squeezed lemon juice
2 tbsp. unsalted butter
2 tbsp. grated lemon zest
1 pint blueberries, washed
 
Directions:
Whisk the eggs and Whey Low® Type D Granular until smooth in the top of a double boiler filled with water.  Add the remaining ingredients except for the blueberries and cook over medium heat while whisking continuously.  When the mixture resembles slightly whipped cream, remove from heat. Cover and stir frequently while it cools.  Once cool, stir in the blueberries and refrigerate.
Note:  Alternatively, after cooling, the curd can be mixed with an equal part of whipped cream before adding blueberries and refrigerating.
Pastry Ingredients:
3 tbsp raw sugar or Whey Low® Type D Granular, sifted
1 1/3 cup unbleached all-purpose flour
1 cup white whole wheat flour
¼ tsp salt
2/3 cup unsalted butter, chilled and cut into small pieces
2 tbsp. fresh lemon juice
3 tbsp. ice water
 
Directions:
Combine dry ingredients in a medium mixing bowl.  Cut in butter with pastry cutter until mixture is crumbly like coarse meal.  Add lemon juice and water and mix until a small ball can be formed.  Gather mixture into a ball and flatten into a disk.  Cover and refrigerate for an hour.
Remove dough from refrigerator and roll out on floured board.  Cut into 12 5-inch rounds.  Line 12 large muffin cups with the dough, prick the bottoms and sides of the dough with the tines of a fork.  Bake in preheated 400 degree oven for approximately 15 minutes or until golden. Cool in pan and carefully remove.  Fill each cup with the lemon-blueberry mixture and garnish each with a blueberry.  Yield:  12 servings

The Diabetic Pastry Chef’s Sugar-Free Chocolate- Pumpkin Bundt Cake Recipe

My friend and colleague Stacey Harris aka ‘The Diabetic Pastry Chef’   shares a Halloween-inspired dessert recipe to help you celebrate this spooky holiday without jeopardizing your diabetes health.

When Stacey Harris was studying to become a pastry chef, she was diagnosed with type 2 diabetes. Rather than give up her chosen profession, she began creating more diabetic-friendly desserts. By using blended flours and a combination of sugar and sugar substitutes, reducing milk carbohydrates, and eliminating trans fats,  Stacey Harris has transformed more than 200 desserts into diabetic-friendly delights.

Sugar-Free Chocolate- Pumpkin Bundt Cake by the Diabetic Pastry Chef

Please read carefully: This cake recipe uses 2 separate batters, a number of bowls, and must be baked in a large 12-cup bundt pan to prevent overflowing. A little difficult but well worth the effort! Splenda For Baking can be substituted for the Whey Low D Granular, see the instructions for this in the note at the end of the recipe.

3 sticks butter, softened

2 1/2 cups Whey Low D Granular sweetener

6 large eggs

2 tsp pure vanilla extract

1 1/4 cups pure canned pumpkin

2 3/4 cups all-purpose flour, divided

2 tsp baking powder, divided

1 tsp salt, divided

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/8 tsp ground cloves

3/4 cup unsweetened cocoa powder

2/3 cup buttermilk

Directions:
In medium bowl, whisk together the eggs and vanilla. Add Whey Low and continue whisking until pretty well dissolved. Set  aside.
In the bowl of an electric mixer, beat butter until fluffy. Slowly add the egg mixture a little at a time beating well after each addition. Remove half the mixture from the mixing bowl and place in another bowl; set aside.
Pumpkin Batter: Add the following to the mixture still in the mixing bowl: 1 3/4 cup flour, 1 tsp baking powder, 1/2 tsp salt, and all of the cinnamon, nutmeg and cloves. Finally add the canned pumpkin and beat on low speed just until combined.
Chocolate Batter: In another separate clean bowl, mix together the remaining 1 cup flour, 1 tsp baking powder, and 1/2 tsp salt;  add the cocoa powder. Add this mixture alternately with the buttermilk to the remaining butter mixture that was set aside.
Add half of the pumpkin mixture to a greased and floured 12-cup bundt pan. By spoonfuls drop half of the chocolate batter on top of the pumpkin batter in the bundt pan, being careful to let the pumpkin mixture peak through in spaces. Repeat to spoon the remaining pumpkin and chocolate batters. Carefully run a butter knife a couple times around the rim of the batters in the pan and then draw the knife across the width of the pan in 10 to 12 spaces to swirl the batters. Bake in a preheated 350 degree oven for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool on wire rack for about 10 minutes before inverting the pan to remove the cake. Cool completely.
Special Note: Splenda For Baking can be used instead of Whey Low Granular D in this recipe. To use Splenda For Baking beat the butter, add the Splenda and continue beating until fluffy. Next add the eggs one at a time, beating well after each, and then add the vanilla. Continue the recipe as written.

The Decadent Diabetic’s Roasted Ginger Shrimp in Remoulade Sauce Recipe

Fresh ginger is good for so many things. When buying ginger look for full, plump roots that are juicy and not dried out on the ends at all.

It’s been famously stated that silver screen legend, Ginger Rogers did everything Fred Astaire did, except backwards and in high heels!

That’s also a fairly accurate description of what life’s like for people with diabetes – they do what everyone else does while managing their blood sugars!

Ginger Rogers is quite simply one of the greatest talents that Hollywood has ever seen.  She was an actress and singer and dancer–a triple threat before people even really knew what that meant.  Not only could she do it all, she did it all so well…the result of a strong work ethic and sheer raw talent.  As an actress, she had tremendous range; she was a natural with comedy, but she could also bring a tear to your eye as she did in dramas like her Oscar-winning performance in Kitty Foyle (1940).  And as a singer, she recorded several songs that were hits at the time and continue to be standards today.  But it is for her grace as a dancer that she is perhaps best known, especially for her 10 movies with Fred Astaire.  It is important to remember she had already made a name for herself on the stage and in 20 films before their first one together, but their coupling created an image so iconic they are still known all over the world.

Roasted Ginger Shrimp in Remoulade Sauce Recipe by The Decadent Diabetic

Ingredients for Shrimp Preparation

10 RAW shrimp (16-21 size) pealed and cleaned

½ tsp. ground ginger

1 TBSP. canola oil

1 tsp. soy sauce

Ingredients for Dipping Sauce:

½ cup Mayonnaise with olive oil

1 tsp. – Dijon mustard

1 tsp. coarse grained mustard

1 tsp. white wine or cider vinegar

Directions

Preheat oven to 425° F.

Combine shrimp, ginger, oil, and soy sauce. Roast in the oven for 5-6 minutes. Allow to cool.

Mix mayonnaise, mustards and vinegar together until smooth. Place into a small dish and surround with the shrimp.

Servings: 2

Carbohydrates: 3 grams per serving

When Chef Ward Alper was first diagnosed with type 2 diabetes he thought it was the end of eating as he knew it.  For the first weeks Chef Ward says he faced a tin of tuna or a slab of meat and a salad and got bored very fast. He left the table unhappy and unsatisfied. Then it dawned on him that there were plenty of foods out there that he could still eat, and even more to be created, his eyes, and his world, opened up and he came up with the motto – “Take back my life and my table”. Our ‘divabetic’ entertaining inspiration, Ginger Rogers starred with Fred Astaire in the 1935 musical, “Roberta”. It was an adaptation of a 1933 Broadway musical of the same name, which in turn was based on the novel Gowns by Roberta by Alice Duer Miller.

Our Divabetic Father’s Day Celebration takes on a Spaghetti Western theme to encourage you to embrace your ‘inner cowboy and cowgirl’ and keep riding high with diabetes health!

There are plenty of cowgirls to inspire you, like Connie Reeves, who paved the way for women everywhere she went. Although she was one of the first women to study law at the University of Texas, when tuition money came up short during the Depression she took a job teaching high school, reports WIRED. There she started a girl’s drill team, one of the first in the state (and now a passion in Texas). Then she began teaching horseback riding. Over the years this horsewoman taught riding along with her own brand of confidence to an estimated 36,000 children.

The documentary American Cowgirl shows 101-year-old Ms. Reeves riding, assisting at a girl’s summer camp, and trying to keep herself from cussing on camera. As she said, “There’s nothing as expressive as profanity.” The woman described as America’s oldest cowgirl said, “My life’s not important to very many people. But what I have done may be something that will motivate someone else. I hope so.”

One of our favorite experts, Best-Selling Cookbook Author Holly Clegg shares this Southwestern menu for a Divabetic Father’s Day Celebration.  Holly’s menu includes Southwestern Roasted Vegetables, Asparagus with Zucchini Rings., Vodka Pasta, Beer Bread , Butternut Squash, Black Bean and Feta Enchiladas with Salsa Verde,  Southwestern Pasta (Check out all of Holly’s healthy recipes for our Father’s Day Celebration on our Divabetic blog).

Butternut Squash, Black Bean and Feta Enchiladas with Salsa Verde by Holly Clegg 

“Six ingredient vegetarian enchiladas burst with flavor and effortless to make,” says Holly Clegg. 

Ingredients:

4 cups peeled butternut squash

1 (15-ounce) can black beans, rinsed and drained

1 bunch green onions, chopped

3/4 cup crumbled reduced-fat feta cheese, divided

8 large (about 7-inch) corn or flour tortillas

2 cups salsa verde

1.  Preheat oven 400°F.  Coat baking pan with foil and coat with nonstick cooking spray.

2.  Place squash on prepared pan.  Bake 20-25 minutes or until squash is tender but not mushy.

3.  Reduce heat to 350°F.  In bowl, combine cooked squash, black beans, green onion and 1/2 cup feta.

4.  Coat 3-quart oblong baking dish with nonstick cooking spray and spread a little of salsa verde on the bottom.  Fill tortillas with about 1/2 cup filling, rolling up and place seam side down in dish.  Pour remaining sauce over enchiladas.  Sprinkle remaining cheese over sauce.

5.  Cover pan with foil and bake 20 minutes or until thoroughly heated.

Holly’s Terrific Tip:  Roasted vegetables are easy to prepare with easy clean-up, and more flavorful. Look for pre-cut butternut squash in grocery.

The Frozen Shoulder: What’s Diabetes Got to Do With It?

About three percent of the general population get frozen shoulder, compared to about 20% of people with insulin-dependent and non-insulin dependent diabetes and in those with prediabetes. Women are more likely to develop the condition than men, and it mainly affects people between the ages of 40-65.

Although there is no conclusive link to high sugars or insulin use, long-term complications of diabetes may include changes in the connective tissue that occur as a result of high glucose levels.

People who have a history of adhesive capsulitis are at an increased risk to develop the condition on the other side of the body. Recurrence on the affected side is also possible, particularly in patients with diabetes. READ MORE

You might notice that Spaghetti Westerns are usually fitted with titles that sound suspiciously like other movies. The original title of “Fistful of Dollars,” for instance, was “The Magnificent Stranger,” a knock off of “The Magnificent Seven.” In short, if the words “Dollar” “Gold” or “Coffin” are in the title, you’re probably watching a Spaghetti Western.

New Study Sees Link Between Sleep Duration and Diabetes in Men

During the last 50 years, the average self-reported sleep duration per person has decreased by 1.5 to 2 hours and the prevalence of diabetes has doubled in the same time period, according the this study’s primary author, Femke Rutters, PhD, of The Netherlands.  READ MORE

Carrie Fisher died from ‘Sleep Apnea & other Causes’

Star Wars actress Carrie Fisher died from sleep apnea and “other factors”, the Los Angeles County coroner says. Sleep apnea is a common condition in which a person stops breathing during sleep, either for a few seconds or minutes. As well as listing sleep apnea as a cause of death, the coroner’s statement cited other factors, including heart disease and drug use.

Sleep apnea is a serious sleep disorder that occurs when a person’s breathing is interrupted during sleep. People with untreated sleep apnea stop breathing repeatedly during their sleep, sometimes hundreds of times. This means the brain — and the rest of the body — may not get enough oxygen.

There are two types of sleep apnea:

  • Obstructive sleep apnea (OSA): The more common of the two forms of apnea, it is caused by a blockage of the airway, usually when the soft tissue in the back of the throat collapses during sleep.
  • Central sleep apnea: Unlike OSA, the airway is not blocked, but the brain fails to signal the muscles to breathe, due to instability in the respiratory control center.

Am I at Risk for Sleep Apnea?

Sleep apnea can affect anyone at any age, even children. Risk factors for sleep apnea include:

  • Being male
  • Being overweight
  • Being over age 40
  • Having a large neck size (17 inches or greater in men and 16 inches or greater in women)
  • Having large tonsils, a large tongue, or a small jaw bone
  • Having a family history of sleep apnea
  • Gastroesophageal reflux, or GERD
  • Nasal obstruction due to a deviated septum, allergies, or sinus problems
