The Decadent Diabetic’s ‘I Love Lucy’ Inspired Carrots Recipe for Divabetic Labor Day Celebration

Don’t let the end of Summer get you down, get DIVA! Our Divabetic Go Ginger! Labor Day Celebration spotlights different ‘ginger’ recipes  by our good friend, Chef Ward Alper aka ‘The Decadent Diabetic’ to help put a kick in your 3 day weekend.

This fabulous ginger side dish recipe is inspired by one our favorite redheads, the iconic Lucille Ball.  Her TV show, “I Love Lucy” pretty much invented the TV sitcom as we know it.

Did you know that before the show’s 1951 debut, sitcoms on the new medium of television were essentially filmed half-hour plays, with fairly static cameras and minimalist sets?

But on “I Love Lucy” there were three cameras shooting simultaneously from different angles, on 35mm film, so that scenes could be performed in sequence, just once, with shots and reaction shots edited together later.

‘Lucy Ricardo’ was kind of a comedic superheroine, capable of doing just about anything, but only for a few minutes, before her efforts inevitably went catastrophically awry. Behind the camera, Lucille Ball was a heroine, too, blazing a path for TV performers and producers for which she’s never received proper credit. The Decadent Diabetic’s Orange/Ginger Glazed Carrots with Pecans Recipe

INGREDIENTS

Two 1 cup servings

Net carbohydrates:  less than 11 grams per serving

Ingredients

6  medium carrots, peeled and sliced on an angle

3 -TBSP. butter

4 ounces TROP 50 low sugar orange juice

3/4 cup water

1 TBSP. Sugar alternative of choice

small pinch of salt

½ -tsp. ground cinnamon

½ tsp. ground ginger

1/3 cup toasted pecan halves

HOW TO PREPARE THE RECIPE:

Melt butter in a sauce pan. Cook carrots in the butter of high heat for 1 minute. Add TROP 50, water, cinnamon, ginger, salt, and sugar alternative. Continue cooking over medium high heat until all the liquid is evaporated, about 10-15 minutes.

Garnish with the pecans for extra spark of flavor and crunch.

Summer lasts a little longer with a tropical flower centerpiece (see above) for Divabetic Labor Day-inspired party and is surprisingly simple to create. An easy trick of the trade for centerpieces is to use multiples of like objects, vases or even lanterns and repeat- either down a long table or clustered symmetrically in the center of a table. The consistency creates a bold visual impact. To add a little more reflection and drama to the basic neutral table cloth place square mirror tiles to cover the tabletop (An easy to remove self adhesive helped keep the mirrors secure to the tablecloth).

How Are Baby Carrots Made?

The carrots now used to make “baby-cut carrots” are typically ones that have been specially bred to contain more sugar than their standard-sized cousins, because this extra sweetness appeals more strongly to children according to Snopes.com. Go Ginger! for Divabetic Labor Day Celebration

Did you know that ginger is among the healthiest (and most delicious) spices on the planet?  It is loaded with nutrients and bioactive compounds that have powerful benefits for your body and brain.

Ginger has a long history of use as a nausea remedy for seasickness and morning sickness related to pregnancy. According to a review of 12 studies that included a total of 1,278 pregnant women, 1.1-1.5 grams of ginger can significantly reduce symptoms of nausea.

Now, it looks like the spice can lower blood sugar in people with type 2 diabetes, according to a new study by researchers from Shahid Sadoughi University of Medical Sciences in Yazd, Iran.

“Ginger can increase the effects of blood thinners, so if you’re taking these drugs, don’t take ginger,” advises Martha Howard, MD, medical director of Wellness Associates of Chicago. Our good friend, Chef Ward Alper aka ‘the Decadent Diabetic’ who is living with type 2 diabetes, helps us craft a menu with a redheaded spin for our Divabetic Labor Day Celebration. We’re partnering his recipes with our favorite red heads starting with Tina Louise who played  ‘Ginger’ on the 1960’s TV series “Gilligan’s Island.” .  

Va va voom!  Tina Louise, aka, Ginger Grant While the show didn’t receive accolades at the time and was viewed by critics as a silly, slapstick comedy, it became a cultural icon which is still in syndication today.

Tina caught the eye of Hollywood execs and after actress and sex symbol, Jayne Mansfield turned down the role of the ‘movie star’ on a sitcom. Although probably the least prestigious of jobs, playing Ginger is what Tina Louise is best known for – like it or not. The role did make Louise a pop icon of the era, and in 2005 an episode of TV Land Top Ten ranked her as second only to Heather Locklear as the greatest of television’s all-time sex symbols.

She has a bevy of acting credentials including Broadway, television and movies, and also studied at some of the most prestigious acting schools including the Actors Studio and with the one and only Lee Strasberg. She has starred in movies with the likes of Brad Pitt, Lee Marvin, Katherine Ross and Miou-Miou, to name a few. She has continued to expand her wings including voiceovers for a gaming machine (MegaJackpot product), recorded an album (“It’s Time for Tina”)and has written several books. Wow, an impressive woman!

The question “Ginger or Mary Ann?” is regarded to be a classic pop-psychological question when given to American men of a certain age as an insight into their characters, or at least their desires as regarding certain female stereotypes.

Chef Ward thinks his Grilled Tuna with Ginger would be the perfect dish for Ginger Grant to prepare on the beach for the Professor!

Grilled Tuna With Ginger

The Decadent Diabetic’s Grilled Tuna with Ginger 

Carbohydrates per serving 0g.

Chefs Note: This is a fast and simple recipe for tuna. It works equally well with frozen(and defrosted) tuna as it does with “fresh” tuna. It also works well with swordfish. I like MY fish (heresy, I know) on the drier side but I have included instructions for a rare preparation as well.

INGREDIENTS

1 4-5 ounce piece of the best tuna (sushi grade) you can find

pepper to taste

Zest of ½ lemon

2 tsp. Soy sauce

½ tsp. garlic, grated or minced

½ tsp. fresh dill, chopped

½ tsp. fresh parsley, chopped

½ tsp. ground ginger

1tsp. olive oil

Juice of ½ lemon

HOW TO PREPARE THE RECIPE:

Preheat Grill

Combine all of the ingredients EXCEPT the lemon juice and coat the piece of tuna. Refrigerate for 30 minutes or up to 4 hours (this can be done on a still frozen piece of tuna as it defrosts). Add the lemon juice just before cooking.

Heat the grill to medium high. Pat the tuna dry and place tuna steak onto the grill and cook on each side.

For rare- Cook on the grill 3 minutes per side

For medium- Cook on the grill for 4 minutes per side

For medium well- Cook on the grill for 4-5 minutes per side

Cook the marinade in a skillet until it starts to boil. Spoon over the fish.

Best Nachos Recipe – Ever Tried Holly Clegg’s Incredible Crab Appetizer Nachos?

Who doesn’t love nachos?   Especially seafood nachos that are easy to make?

Since great food makes for a great party I asked several of my friends to share their favorite recipes on this blog.  It’s all part of the preparations for our biggest  podcast event of the year, Mister Divabetic Mystery podcast: ‘Gypsies, Tramps & Peas’ on Tuesday, September 12, 2017, 6 PM, EST.  Since this year’s zany adventure takes place in New York City’s historic seashore, Coney Island we’re spotlighting seafood dishes.

Crispy tortilla chips baked with a splendid southwestern-seasoned crab mixture and smothered with cheese is quick to prepare and quicker to disappear.

How can Holly’s delicious crabmeat nachos possibly be healthy?

“By using reduced-fat ingredients and baked tortilla chips, you get a wonderful crab southwestern topping for a baked nachos recipe,” says Holly. “! I have the best 

Crab Nachos from Holly Clegg’s trim&TERRIFIC Gulf Coast Favorites

6 dozen baked tortilla flour chips
1/2 cup nonfat sour cream
3 tablespoons light mayonnaise
1/2 cup chopped green onions
1 (4-ounce) can chopped green chilies, drained
1/4 teaspoon ground cumin
1 pound lump, white, or canned crabmeat, picked through for shells
Salt and pepper to taste
2 cups shredded, reduced-fat, sharp cheddar or Mexican-blend cheese
Paprika

1.  Preheat oven to broil. Arrange tortilla chips in single layer on baking sheet.

2.  In bowl, combine sour cream, mayonnaise, green onions, green chilies, cumin. Fold in crabmeat, salt and pepper to taste.

3.  Divide mixture on chips. Sprinkle with cheese and paprika. Bake 6-8 minutes or until cheese is melted.

Holly Clegg’s Cooking Tip:  If you don’t have fresh crabmeat available, my second choice is the pasteurized crabmeat you find in a can.  Of course, you can always use snow crab, king crab or imitation crabmeat for this crab nachos recipe.

Divabetic Summertime Favorites & Diabetes Advice

‘Walking on Sunshine’ during the dog days of Summer for people living with diabetes may require a few special precautions  for you to shine.

Extreme heat is a stress on the body, and any stress can release hormones that will raise blood sugar levels, says Deena Adimoolam, MD, assistant professor of medicine, endocrinology, diabetes, and bone disease at the Icahn School of Medicine at Mount Sinai in New York City.

If you find it’s too hot and your blood sugar is fluctuating, stay inside where it’s cool. That may mean a trip to the spa, mall or the movie theater if your home isn’t air-conditioned.

“People with chronic diseases like diabetes as well as people taking certain medications, including heart disease medications and diuretics, which are often used to treat complications of diabetes, are at increased risk of experiencing difficulties in the heat, even though they may not be aware of it,” says Catherine Carver, M.S., A.N.P., C.D.E, Director of Educational Services at Joslin Clinic. 

Come summer, you may be tempted to don flip-flops or sandals or even walk barefoot. But it’s important that you protect your feet when you have diabetes. “My suggestion is to find some really comfortable footwear that is breathable,”said Joanne Rinker, MS, RD, CDE, LDN, senior director for community health improvement for Population Health Improvement Partners in North Carolina and a spokesperson for the American Association of Diabetes Educators as reported in Everyday Health. DIVABETIC SUMMMERTIME TIP: Watch for signs of heat exhaustion, especially if you are working or exercising outdoors. People with diabetes and other chronic diseases like heart disease are more susceptible to overheating. Chocolate Zucchini Cupcakes Recipe from ‘Gypsies, Tramps & Peas’

Our annual Mister Divabetic Mystery Podcast presented in September is a fun way to learn about diabetes for mystery lovers.

This year’s Mister Divabetic Mystery Podcast: ‘Gypsies, Tramps & Peas’ takes place at the Mermaid Parade in Coney Island, NY and features summer time diabetes education tips and healthy recipes from our favorite chefs including Chef Robert ‘The Happy Diabetic’ Lewis  and Stacey ‘The Diabetic Pastry Chef’ Harris.

Chocolate Zucchini Cupcakes Recipe by ‘The Happy Diabetic’

What’s in it!

  • 1-1/4 cups butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 1 cup grated zucchini
  • 1 cup grated carrots

Let’s Put It Together

1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with yogurt, beating well after each addition. Fold in zucchini and carrots.

2. Fill paper-lined muffin cups two-thirds full. Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Frost cupcakes with a chocolate frosting

Yield: 21 cupcakes.

Chef Robert ‘The Happy Diabetic’ Lewis:

Growing up in Los Angeles offered Chef Robert a culinary experience he will always cherish. Family cooks and guests in my home were experts in preparing Jewish, Mexican, Middle and Far Eastern, and traditional dishes, which gave him a love for food and the creative outlet it provided.

After graduating from the Prestigios Culinary Institute of America in 1976. In 1998 he was diagnosed with type 2 diabetes. Thus began his motivation to create great tasting dishes that are easy to prepare.

In 1998 I was diagnosed with type 2 diabetes. Much of what I heard in those early day was about the foods that were prohibited. I suspected that my days of good eating were over, yet as I worked through my ups and downs, I came to realize that the selection of foods I could and should eat was vast and included many of my favorites. This motivated me to attempt to create delicious, diabetic-friendly dishes that were also easy to prepare.

Chef Robert is a nationally recognized author, public speaker and spokesperson for all people affected with diabetes. In order to develop DME, you must first have diabetic retinopathy.

Diabetic retinopathy is caused by damage to the blood vessels in the tissue at the back of the eye (retina). Poorly controlled blood sugar is a risk factor. Early symptoms include floaters, blurriness, dark areas of vision, and difficulty perceiving colors. Blindness can occur.

White Chocolate Cheesecake by Holly Clegg inspires New Mister Divabetic Mystery

I’m working on my newest tantalizing tale of culinary mystery and suspense, ‘Mister Divabetic Mystery – ‘One Murder Tutu Many’ which takes place in New York City’s vibrant ballet community. 

When my character, Mr. Divabetic heads to the Gotham City Ballet Company’s box office to fix a mix up with his tickets he’s faced with a even bigger problem – a murder. To make matters worse, one of his cheesecakes seems to be covering the victim’s face. Even more shocking are the numerous scandals swirling around the Gotham City Ballet and it’s members that have everyone walking around on tip toes. Could our happy healthcare host’s questionable culinary skills make him an accessory to the crime or even a possible side dish? Now Mr. Divabetic with the help of his team of whip smart Diabetes Educators must whip up his own crime-solving recipe, and fast–before a hearty dose of intrigue and a deadly dash of danger ends his diabetes advocacy and healthy catering career once and for all.

Cheesecake has been touted as the #1 American dessert so with cheesecake on my mind, I reached out to my friend, Best-Selling Cookbook Author Holly Clegg for one of her recipes, White Chocolate Cheesecake.

“White chocolate and cheesecake are outrageously delicious and especially when they are combined in one dazzling dessert. You will be begging for a second piece,” Holly said. “I like to top my cheesecake with raspberries because it gives it such a decorative touch.”

White Chocolate Cheesecake from Gulf Coast Favorites Cookbook by Holly Clegg

Ingredients

1 cup graham cracker crumbs
1/2 cup old fashioned oatmeal
2 tablespoons sugar
1 teaspoon almond extract
2 tablespoons butter, melted
3 (8-ounce) packages reduced fat cream cheese
2/3 cup sugar
2 eggs
2 egg whites
1/4 cup all purpose flour
3 ounces white chocolate, melted
1 cup fat free sour cream
2 teaspoons vanilla extract

Directions

1. Preheat oven 325°F.
2. In bowl, combine graham cracker crumbs, oatmeal, 2 tablespoons sugar, almond extract, and butter. Press onto the bottom and sides of spring-form pan.
3. In mixing bowl, beat together cream cheese and 2/3 cup sugar until light. Add eggs and egg whites, one at a time, beating well after each addition. Nex, add flour and white chocolate, mixing well. Add sour cream and vanilla: mix well.
4. Pour into prepared crust and bake for 55 minutes. Remove from oven and cool to room temperature. Refrigerate until well chilled and then remove from the pan.

I asked Holly why is this cheesecake is considered to be ‘trim & terrific’?

“If you order this cheesecake out it probably has 30 g sat fat and my recipe has 6 g sat fat,” says Holly. “Not all my recipes fit into the diabetic guidelines, however, this cheesecake is so much better for you!  Cheesecake is usually high calorie and high fat.  What did I do?”

“I used reduced- fat cream cheese with a  combination of eggs and egg whites.  I also used fat free sour cream to make the recipe creamy but not add extra fat.  I include white chocolate to give it the flavor but probably another recipe would have double or triple the amount of white chocolate. Also, typically a crust would have a stick of butter in it and I use only 2 tablespoons.  I pride myself on finding the balance of flavor and fat.  It is important that this cheesecake tastes like an indulgence but I also want it to be better for you”

“I make this easy white chocolate cheesecake recipe ahead of time.  Then, I let it cool and freeze to pull out whenever I need it. When your cheesecake is frozen, it is also so much easier to remove from the spring form pan to put on your desired serving plate.  I took my White Chocolate Cheesecake out the day before and  I put in the refrigerator for it to defrost.”

“This is my favorite recipe,” Holly said. “It is funny as once I made it for Thanksgiving and didn’t put the raspberries on top and it wasn’t as popular.  We eat with our eyes!”

‘Caught Bread Handed: A Bakeshop Mystery’ by author Ellie Alexander is what I like to call  a ‘one day’ book because you’re able to read it in one day or more accurately a lazy afternoon. It’s quick and fun.

Jules Capshaw is still chewing over her husband Carlos’s return to Ashland, Oregon. Could there be too many cooks in the kitchen? Whatever is stirring between those two will have to wait. Despite the Oregon Shakespeare Festival being dark for the winter, the bakeshop is bustling, the dough is rolling, and there’s no rest for the weary…especially when murder is thrown into the mix. My only complaint is that the the nuisances of baking outweigh the mystery behind the murder in this story. Chapter after chapter, I kept wondering when the main character, Juliet ‘Jules’ Capshaw, was going to take off her apron and get down to the business of investigating. However, you will find yourself falling love with Ashland, Oregon and the crazy characters that inhabit it.

The author also does a great job of giving you a slice of ‘cake without the frosting’ when it comes to describing the daily grind of owning and operating a bakery/restaurant. The rhapsody of creating a new recipe is liberally sprinkled over the nonstop, never ending cycle of early mornings, financial worries and physical exhaustion. I don’t think there’s enough coffee for me to put on a chef’s hat! Now, that I’m eating ‘gluten free’ I appreciated her gluten free baking tip too. 

The gay character, Lance hooked me. He’s smart, witty, sarcastic busybody; a bit like Paul Lynne. And right before you think he’s going to be a total stereotype of a ‘theater queen’ the author reveals another, truthful side to the character by hinting at his issues with intimacy. 

I read this book for inspiration. Currently I’m working on rewrites for this year’s ‘Mister Divabetic Mystery: Gypsies, Tramps & Peas’ as well as researching and outlining my next ‘Mister Divabetic Mystery: One Murder Tutu Many’ podcast script. The purpose of our annual diabetes mystery podcasts is to educate you about diabetes self-care in an entertaining way. I also want to encourage you to become a diabetes detective and investigate the reasons behind why you may be experiencing unexpected high’s and low’s with your healthcare team.

‘Fires Of Desire’ Mini Victoria Cakes

Ingredients

3/4 cup butter, softened

3/4 cup Whey Low D Granular

3 eggs, room temperature

1 tsp pure vanilla extract

1 1/4 cup King Arthur Cake Flour Blend

1 tsp baking powder

1/2 tsp salt

sugar- free or no sugar added strawberry or raspberry jam

whipped cream

Whey Low Powder or confectioner’s sugar for dusting

Fresh raspberries for garnish

Directions:

With mixer beat together the butter and Whey Low for 3 minutes. Add eggs one at a time, beating well after each. Add vanilla and beat for an additional 2 or 3 minutes. Sift the dry ingredients into the mixing bowl. Gently fold with spoon just until combined and smooth. Spoon mixture int 12 greased muffin tins. Bake until toothpick inserted in center comes out clean, about 15 minutes. Remove from oven and cool. Remove from pan. Split each cake in half. Spread with jam, top with a little whipped cream. Sandwich the cakes and sift powdered Whey Low or confectioner’s sugar on top. Top each with a raspberry or small strawberry.

Gluten Free Mini Cheesecake Recipe from My Baking Addiction

If you love knowing that a book is based on real life before you dive in, you’re in luck! I just finished the first draft of my next ‘Mister Divabetic Mystery: One Murder Tutu Many’, based on my own dietary restrictions.

I’ve been gluten free under the watchful eye of my doctor for two weeks. She thinks my new diet will help alleviate some of the discomfort I experience from psoriasis. During the winter months in New York City my psoriasis especially flares up so I decided it was worth a try!

Gluten is a protein found in wheat, rye, barley, and other related grains. It’s also found hiding in shocking amount of other foods including ketchup, soy sauce, coffee creamer!  Those who are genuinely intolerant have an autoimmune condition known as celiac disease, where their immune system responds to the gluten protein by attacking the small intestine. The link between celiac disease and type 1 diabetes mellitus is well known.

Common symptoms of malabsorption include gas, bloating, diarrhea, and weight loss. Other symptoms may include fatigue, anemia, irritability, or depression. In many cases of undiagnosed celiac disease, however, there are no symptoms at all.

Once diagnosed, the only treatment of celiac disease is lifelong, complete elimination of gluten-containing foods from the diet. With gluten elimination, symptoms may disappear within a few days, but complete healing of the small intestine may take three to six months or, in some cases, up to two years.

The good news for me, someone who doesn’t have celiac, is that I’m seeing a slight difference in my psoriasis. It hasn’t disappeared but it has stopped itching and  some patches (on my shoulders and elbows) are now slightly smaller in size.

The bad news is a recent Harvard University study found that people who limited their gluten intake or avoided it completely actually had a 13 percent higher chance of developing type 2 diabetes.  I have a family history of diabetes so this news immediately caught my eye!

“We wanted to determine if gluten consumption will affect health in people with no apparent medical reasons to avoid gluten,” explained Dr Geng Zong of Harvard’s School of Public Health. “Gluten-free foods often have less dietary fiber and other micronutrients, making them less nutritious and they also tend to cost more.”

Fiber is known to protect against type 2 diabetes. When the researchers had adjusted for the protective effect of fiber, they found those in the top 20 percent for consuming gluten in their study had a 13 percent less chance of developing type 2 diabetes, compared to those who consumed 4 grams or less.

After reading the report I’ve become conscious of adding more fiber to my diet. It’s that hard to do even if you’re gluten free! I’m eating more vegetables  (the crunchier the better), nuts, berries, beans and brown rice.

Occasionally when I crave something sweet I now make myself a treat. Here’s a great mini cheesecake recipe I found online  at my baking addiction. The author, ‘Erin’ claims, ”these fuss-free gluten-free mini cheesecakes are perfect for parties or potlucks and couldn’t be any easier to make!” After making them, I agree! “Gypsies, Tramps & Peas” takes place at the colorful 35th Annual Mermaid Parade in Coney Island, New York. My character, Mr. Divabetic finds himself involved in another murder investigation when his former high school swim coach mysteriously disappears. On the way to cracking the case, while stumbling upon clues his team of amateur sleuths reveal helpful Summertime diabetes self-care management tips. 

My chance meeting with Tonya at BookCon in New York City four years ago inspired me to write and produce our first annual Diabetes Mystery podcast. Four years later, thanks to her bubbly personality, never-ending encouragement and enthusiasm throughout the writing process, we’re still going strong. I will always be incredibly indebted to Tonya for believing in me both personally and professionally. Somehow she ‘magically’ manages to squeeze time into her busy writing and book tour schedule to hold my hand through countless script rewrites.

I don’t think I could have ever risen to this challenge without her help!

Our annual diabetes murder mystery podcast has brought me so much personal joy that it’s my absolute pleasure to promote Tonya’s latest book, “Scene of the Grind” from her new ‘A Killer Coffee Mystery’ Series.

The series takes place in the cozy southern fictional tourist town of Honey Springs, Kentucky.

Roxanne Bloom (her friends, though few call her Roxie) quit her job as a lawyer, divorced her cheating husband, and moved to the quaint town of Honey Springs, Kentucky where she’d spent many of her teenage summers visiting her eccentric and fun-loving Aunt Maxi.

Roxy follows her dream and opens The Bean Hive, Honey Springs first coffee house on the town’s newly revitalized boardwalk. that opens just in time for Honey Springs annual Honey Festival.

Roxy’s life couldn’t be better. Business was booming, she’s reconnected with special people from her past, including her first teenage love, and visits The Crooked Cat book store, which is still her favorite shop in Honey Springs.

One problem, Aunt Maxi and Alexis Roarke, owner of Crooked Cat, aren’t on the best of terms. Alexis leases the book store’s building from Aunt Maxi and the rent is going up.

Roxy takes Alexis a fresh cup of coffee from The Bean Hive and a tasty pastry as a peace offering between the two women, but discovers the beloved book store owner murdered and Aunt Maxi is the number one suspect.

Gossip in Honey Springs is as hot at the coffee served at the Bean Hive and Roxy has to uncover who is behind the murder not only to save her shop, her aunt, but her life.
