Chef Robert’s Mediterranean Chicken with Love Recipe

Chef Robert Lewis, aka The Happy Diabetic” shared his experience living with Type 2 diabetes, connecting with audiences through food, and how you can begin making healthy meals at home with the Divabetic community on Divabetic’s recent free Zoom Cooking Party.

Chef Robert’s Mediterranean Chicken of Love Recipe 

Ingredients                                                                                                                                                           

1 T extra-virgin olive oil

8 ounce skinless, precooked chicken brest sliced

1 T chopped garlic

Half a red bell pepper sliced, and green bell pepper sliced or 6-7 mini multi colored peppers sliced

½ red onion sliced

5-6 stalks of asparagus

2-3 large white button mushrooms sliced

1/2 cup grape tomatoes or Roma tomato diced

1/4 cup white wine or vegetable broth

1 t dried oregano

1 t dried rosemary

2-4 leafs of fresh basil or 1 t dried basil

10 black pitted olives or kalamata olives

1 can 15 oz. white Italian beans (drained well)

Black pepper, to taste

½ fresh lime

Sugar Free Pumpkin Crumble Cheesecake Recipe by Chef Robert Lewis aka ‘The Happy Diabetic’

We’re less than a month away from the premiere of Divabetic’s Mystery Podcast, Kill Me Madam, on Wednesday, August 26, 2020, 6 PM, EST.  In the spirit of our upcoming culinary caper, our friend, Chef Robert aka The Happy Diabetic, who has appeared on several mystery podcasts, shares this delicous, healthy sugarfree cheesecake recipe with you!

Pumpkin Crumble Cheesecake Recipe by Chef Robert Lewis aka ‘The Happy Diabetic’

Ingredients: 

Cake Ingredients:

3 – 8 oz. packages cream cheese, softened

1/3 cup SPLENDA® Brown Sugar Blend

2 T. Splenda Naturals®

3 large eggs

1 t. almond extract

1 – 15 oz. can pumpkin

½ cup vanilla Greek yogurt

2 T. almond flour

1 ½ t. ground cinnamon

½ t. ground ginger

1 t. imitation maple flavoring

2 t. vanilla extract

Crumble Topping Ingredients:

1 cup almond flour

2 T. chilled butter

½ t. vanilla

4 T. SPLENDA® Brown Sugar Blend

Directions:

Preheat oven to 350*. Coat the bottom and sides of a 9-inch spring form pan with non-stick cooking spray. Using an electric mixer, beat cream cheese, SPLENDA® Brown Sugar Blend, and Splenda Naturals® until smooth. Beat in eggs one at a time. Blend in pumpkin, yogurt, almond flour, cinnamon, ground ginger, maple flavoring, and vanilla. Pour filling into prepared pan. Mix the topping ingredients by hand or in a food processor until crumbly. Sprinkle on top of cheesecake. Bake until firm, about 1 hour and 10 minutes. Remove from oven and run a butter knife around the inner edge but do not remove the pan side. Let stand at room temperature 30 minutes. Refrigerate.

Are you interested in changing your eating habits?

Maybe you should consider keeping a food diary. A food diary is a daily log of what you eat and drink each day. It can help you realize what you consume. Once you know this, you can make changes to your diet to improve your weight.

You should keep your food diary with you throughout the day. You can keep track on  paper using a notebook or on your smartphone.

Once you have your diary, you should log several pieces of information in it each time you eat and drink. According to FamilyDoctor.Org you should include these include:

  • How much. List the amount of the food and drink you consume each time. This might be measured in volume (such as 1/2 cup), weight (such as 2 ounces), or the number of items (such as 12 chips).
  • What kind. Write down the type of food and drink. Make sure to to write down extras, such as toppings, sauces, dressings, or condiments.
  • Mood: You also should include how you feel when you eat and drink. Are you happy, sad, or bored? Your mood can impact what and when you eat or drink.

Things go from bad to worse when the snake phobic Mr. Divabetic hears about the giant python’s escape.

Now, the happy healthcare host must decide to face his fear of snakes and recipe rejection or throw in his apron and risk getting caught up in another murder investigation. Can Mr. Divabetic and his team of amateur sleuths hunt down the real killer and get Mama Rose Marie out of jail? Will he be the next murder victim? Can he ever create an edible recipe?

According to Healthline, eating has become a mindless act, often done quickly. This can be problematic, since it takes your brain up to 20 minutes to realize you’re full.

Eating too quickly often leads to overeating. You eat more and more because your brain doesn’t have enough time to receive fullness signals from your stomach.

It’s also been proven that you’ll eat less food if you eat slowly and chew your food thoroughly before swallowing.

2 Tips to  Help you Start Eating More Slowly:

  • Chew more. Count how many times you normally chew a bite of food, then double that amount. You may be surprised at how little you usually chew.
  • Set your utensils down. Putting down your fork between bites of food will help you eat more slowly and savor each bite.

Many people wonder how their hba1c number relates to their  blood sugar levels. After all, daily diabetes self-care management can be a jumble of numbers: weight, blood sugar levels, carbohydrate counts, fat grams, serving sizes, etc.  Hopefully, this handy chart will provide some clarification.

When it comes to the numbers, there’s no one-size-fits-all target. A1C target levels can vary by each person’s age and other factors, and your target may be different from someone else’s. Diabetes advocate turned reluctant amateur sleuth, Mr. Divabetic finally takes the plunge and ventures into a new career as a healthy caterer but can’t quite keep his head above water in in Divabetic’s Diabetes Murder Mystery podcast, ‘Gypsies, Tramps & Peas’.

With the help of his co-workers and nosy Italian mother, he heads for Coney Island to cater his first party aboard a yacht for his former swim coach, Ted Rockow. But his nautical soiree quickly capsizes when the guest of honor is found swimming with the fishes.

The Happy Diabetic’s Healthy Burger Topping Recipes

Walk into any Memorial Day cookout, and you’re likely to find burgers on the grill—few foods are as synonymous with grilling in the US. 

From Italian-spiced Bruschetta toppings to South of the Border Salsa fixings, Chef Robert Lewis aka ‘The Happy Diabetic’ shares his favorite burger topping recipes for every taste this Memorial Day

“Ground chuck is my go-to. And it best has some fat!” says Dr. Chef Robert Lewis. “Ground chuck without fat means dry burgers. Let’s not go there. I tend to buy 80/20 ground chuck. 80% lean meant. 20% fat. Next, let’s add some flavor. Keep it simple, remember it’s all about turning ordinary ingredients into something extraordinary”

Chef Robert’s The Burger of LOVE Recipe

Ingredients (2 pounds of ground chuck):

1 Tablespoon garlic powder

1/4 tsp salt and pepper

1/2 TBS onion powder

1 tablespoon Worcestershire sauce.

1 Tablespoon of French style mustard

1 raw egg to bind.

Directions: Mix all ingredients in a bowl. DO NOT OVER MIX all the ingredient.  Divide the mixture into 8 balls. Then flatten it into a patty by compressing it with your hands. Make sure the patties are even this will help the meat to cook evenly cook evenly.

SERVING SIZE: This recipe creates about 8 patties. If you need less adjust recipe as needed!

The Happy Diabetic’s Temperature Guide: It’s easy to overcook burgers. I like to pull the burgers off the grill at around  155°F  the carryover cooking will them past the 160°F we are aiming for.  To take the guesswork out of cooking, I use a Thermometer ($10 .00)

California Dreaming Burger Toppings Recipe

 2 thin slices avocado 

 2 T Fruit salsa 

 2 T shredded Monterey Jack cheese

Fruit salsa Ingredients:

1 Cup Tomato (small diced)

¼ Cup Cilantro (chopped)

1 Cup red Onion (small diced)

2 Teaspoons Lime Juice

1 cup diced kiwi, pineapple, strawberries mango

1 ounce fresh buffalo mozzarella 

1 t drizzle extra-virgin olive oil

2 slices of Roma tomato

2 basil leaf

Southern Hospitably Burger Toppings Recipe

1 large cooked over easy egg 

1 T fresh salsa 

1/4 cup green leaf lettuce 

1 T queso fresco

Fresh Salsa Burger Toppings Recipe

1 cup fresh tomatoes, diced

½ cup corn kernels, fresh (or frozen)

½ cup onion, diced

2 cloves garlic, minced

2 T fresh squeezed lime juice

2 T fresh cilantro, finely chopped

Salt (to taste)

Not Too Much Sun Burger Toppings Recipe

2 T chopped sun-dried tomatoes 

1/4 cup fresh spinach 

1 ounce goat cheese

Tomato Pesto Lovers Burger Toppings Recipe

1 t of pesto 

2 Roma tomato slices 

1 T crumbled feta

5-6 leafs of fresh spinach

Bruschetta Burger Toppings Recipe

1 T olive oil

1 clove garlic chopped

1 pint grape tomatoes sliced in half or 1 medium tomato, diced

1/4 cup onion diced

6-8 large basil leaves chopped

1T Balsamic Vinegar

salt (to taste)

Directions

Stir together olive oil, chopped garlic, tomatoes, onion, and basil leaves. Add salt and top the burger.

Chef  Robert Lewis aka ‘The Happy Diabetic’ has made it his mission to not only to be an ambassador of positivity for himself and his family (which includes 3 children and 6 grandchildren) but to also create amazing things in the kitchen for people of all walks of life to enjoy.

In a recent profile on the Everyday Diabetes website, Chef Robert Lewis admitted that he wasn’t going to let his diagnosis with Type 2 Diabetes get him down.
