Mr. Divabetic stops by the 10th Annual Big Apple Barbecue Block Party at Madison Square Park in New York City to find out how people stay on track with their Summertime health goals.


At the Big Apple Barbecue Block Party, pitmasters from New York City, Alabama, and Texas come together to celebrate American barbeque.

According to the Webstaurant Store blog, the main styles of American BBQ are Kansas City, Memphis, Carolina, and Texas.

Kansas pitmasters brush wet ribs with sauce before, during, and after smoking them for a wet sauce. Memphis-style “dry” ribs are coated in a dry rub before they’re smoked and served without sauce, allowing their authentic flavor to shine.

Alabama white sauce is mayonnaise-based and punctuated with apple cider vinegar, brown mustard, and horseradish. It is usually served on chicken.

St. Louis is famous for its spare ribs, and most people refer to this meat cut when they mention St. Louis-style barbecue. In St. Louis, they prefer grilling their ribs rather than slow-smoking them over indirect heat.

California-style BBQ centers on wood-fired tri-tip steaks rubbed in salt, pepper, and garlic powder seasoning. 

Everyone loves grilling food because the high heat and direct contact with your grill can make foods crispy on the outside while keeping them moist inside.

Kentucky is famous for perfecting slow-smoking mutton and developed a Worcestershire-based sauce to complement its rich, gamey flavor.

In recent years, contradictory reports have cited the benefits and dangers of grilling.

According to New York Health, research has found that grilling may reduce your risk for many chronic diseases, including heart disease, certain cancers, and type 2 diabetes. This is because grilling food makes it easier for us to eat fewer calories and fat.

According to Columbia Doctors, cooking over high heat, especially an open flame, exposes you to two main carcinogens: heterocyclic aromatic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). Studies show HCAs and PAHs cause changes in DNA that may increase the risk of cancer. 

Staying healthy isn’t just about watching what you eat; it’s also important to be aware of the excessive calories and added sugar in your drinks. Many summer drinks, including soda, sports and energy drinks, lemonade, fruit juices, and sweetened waters, contain added sugar. 

For example, a 16-fluid-ounce soda can contain over 12 teaspoons of added sugar, while a 16-fluid-ounce sports drink can contain 7 teaspoons. Added sugar can provide empty calories that can contribute to weight gain, obesity, heart disease, and tooth decay.

Our first guest, Adam Rinn, Coney Island USA’s Artistic Director, is a Coney Island native who has worked as a sword swallower, strongman, and variety performer for the past 20 years, so you’re sure to enjoy this fun and colorful interview!

Frequent contributor Poet Lorraine Brooks revisits her groundbreaking poem “Beauty & The Beach,” which premiered over thirteen years ago on Divabetic’s Roundtable podcast. “Beauty & The Beach” resonates deeply with podcast listeners and Diabetic blog readers. Since then, we have reshared Lorraine’s poem on body love, swimwear, and beaches on subsequent podcasts and blog entries.

Don’t call me plus size.

Why should I be?

I’m bigger than some,

some are bigger than me.

A number is given to keep track of our size,

And what is the difference which one I must buy?

I’m not plus or minus, don’t label me so,

And don’t tell me into which stores I can go.

If I need an 18, and you need a 3,

You shouldn’t be thinking you’re better than me.

If you need a 20 and I need a 2,

I shouldn’t be thinking

I’m better than you.

Why don’t we instead,

embrace everyone’s curves

With all the respect and support one deserves.

Don’t label me by the disease I possess

Or anything else that might cause me distress.

I’ve spent most of my life with the label of “plus”,

The truth is that labels aren’t good for any of us.

Let’s labels shelves, and file cabinet drawers,

And signs on the ladies and mens bathroom doors.

A label is good if I need to explore

Where your office is located on the 5th floor.

And I need a label when I’m shopping for food

To know if tomatoes are pureed or stewed.

But don’t label me and my body, I ask,

And don’t make me wear this invisible mask…

Put labels on envelopes with return address,

Or telling me which one is lettuce, and which watercress.

Because in the end, I’m the same as you are,

And labels work better on bottles and jars.

But even if I am not your cup of tea

Max “Mr. Divabetic” Szadek and poet Lorraine Brooks revisit her groundbreaking poem “Beauty & The Beach,” which premiered over thirteen years ago on Divabetic’s Roundtable podcast. The poem was inspired by Esther Williams and resonated deeply with podcast listeners and Diabetic blog readers. Since then, there have been numerous requests to have Lorraine share the poem again on subsequent podcasts or repost her words on the blog.

Lorraine has agreed to revisit the theme of the beach and swimwear at our request and has written a new poem, “Summer Skin,” for an upcoming podcast about the 42nd Annual Mermaid Parade in Coney Island.

Although “Summer Skin” is not a cheerful poem about exposing more skin during the summer, we are still honored to share it with the audience. We hope you know our community welcomes you to share your thoughts, feelings, apprehensions, struggles, and successes regarding living with diabetes.

Beauty & The Beach By Lorraine Brooks

My body in bathing suits

Feels clumsy and gross.

I look at the swimmers

And look at the pool,

And suddenly feel Like a fat ugly fool.

I try to ignore them,

These feelings I feel…

But the bottom line truth is,

The feelings are real.

Will I wear a bathing suit?

Probably not.

I’ll probably stay in my clothes,

And feel hot. 

 
I’ve tried, please believe me,
To listen to those
Who tell me
It’s OK To take off my clothes.
 
Then I look at others
And what comes to mind?
I sense they are judging me
And being unkind.
 
I wish I was comfortable,
I wish I fit in…
I wish I was normal.
I wish I was thin.
 
I wish people saw me
For more than my weight…
I wish that I had
 
A much different fate.
So, hats off to Esther
Who swam like a fish…
Who by all accounts
Was a beautiful “dish”.
 
But I am not Esther.
I’m all I can be…
And sometimes I struggle
Just being me.
 
One more small thing,
I must say it out loud –
If I had a body
Of which I was proud
 
If tank tops and 2-pieces
Were within my reach
I’d be more than happy
To join you at the beach.

Poet Lorraine Brooks will join us for Divabetic’s upcoming Mermaid Parade-themed podcast with Coney Island USA Artistic Director Adam Rinn. She’ll share her newest poem, “Summer Skin,” which tackles many of the same themes in her popular poem,  “Beauty & The Beach.” 

Lorraine admitted in our recent pre-interview that she initially hesitated to share’ Beauty & The Beach’ with our listeners because she felt it didn’t match Divabetic’s predominant upbeat ‘Glam More, Fear Less’ attitude. 

Ultimately, she read it on Divabetic’s Roundtable podcast, inspired by Esther Williams in 2013. We are so glad she did. The positive response from listeners and blog readers was overwhelming. Her words struck a chord with our Divabetic community in a powerful and meaningful way. Many commented on how much they identified with Lorraine’s feelings in her poem. 

With the Summer months approaching, we decided to share it once again. Whoever you are, wherever you are, however you feel about your body, know that you are not alone.

I’m excited to interview Coney Island USA’s Artistic Director, Adam Rinn, today about the 42nd Annual Mermaid Parade on Saturday, June 22, 2024, on our Divabetic podcast. 

The Mermaid Parade, the nation’s largest art parade, brings together creative minds in art and fashion and attracts hundreds of thousands of visitors to Brooklyn’s amusement district.

The Mermaid Parade originated to help preserve the tradition of Mardi-Gras-type events that were popular in Coney Island between 1903 and 1954.

42nd Annual Mermaid Parade Is On Saturday, June 22, 2024

Coney Island hosts the world’s greatest art parade, the Mermaid Parade, on Saturday, June 22, 2024!

The Mermaid Parade is a unique, artistic celebration of ancient mythology and is considered the official start of the Coney Island summer season. The nation’s largest art parade attracts hundreds of thousands of visitors to Brooklyn’s amusement district.

World-renowned painter, performer, and sideshow historian Joe Coleman will reign as King and Queen with his wife and muse, artist/photographer Whitney Ward. For over 30 years, the couple has been frequent prize winners for costumes.

According to tradition, King Neptune and Queen Mermaid will be wheeled through the parade in an antique wicker Boardwalk Rolling Chair from 1923. 

Immediately after the parade, at approximately 4 p.m., Mr. Rinn will lead the Queen and King procession to the beach at 19th Street and the Boardwalk, for the official Beach Ceremony and opening the ocean for the summer swimming season.

Diabetes And Cataracts

When you have diabetes, high blood sugars over time can lead to structural changes in the eye’s lens, accelerating the development of cataracts.

You may not notice cataracts since symptoms can be minor until clouding affects the center of the eye, then cataracts can progress rapidly. Other causes of cataracts:

  • Family history
  • Eye injury
  • Eye surgery
  • Repeated eye injections
  • Spending a lot of time in the sun without UV sunglasses
  • Using certain medications, such as corticosteroids

Know the Symptoms

  • Cloudy or blurry vision
  • Seeing double in one eye
  • Seeing halos around lights
  • Being extra sensitive to light and glare
  • Having trouble seeing well at night
  • Bright colors seem faded

How to Prevent Cataracts

  • Wear sunglasses with UV protection
  • Do not smoke—and if you currently do, quit!

Thankfully, cataract surgery can help reverse a cataract caused by diabetes. This short outpatient procedure involves removing and replacing a damaged lens with a healthy artificial lens.

Coney Island’s Mermaid Parade 2023

Mermaids of nearly every imaginable description (Swedish Fish singing ABBA and Mime-Maids) lined Surf Avenue in Coney Island for the 41st Mermaid Parade

It was an incredible display of art, body positivity, cleverness, and creativity.

This year’s parade is billed as the nation’s largest arts parade.  Hip-hop legend Kool Keith was its king, and city Cultural Affairs Commissioner Laurie Cumbo was its queen.

The main goal of the parade is to spread positivity and fun, and it continues to do so year after year.

The Mermaid Parade is all about body positivity. Body positivity is a movement that promotes acceptance of all bodies, regardless of size, shape, skin tone, gender, and physical abilities.

According to the Office on Women’s Health, a healthy body image means feeling good about looking and feeling comfortable in one’s body. Conversely, they report that having a negative body image can put one at a higher risk for mental health conditions, including eating disorders.

The true meaning of being positive about your body is self-acceptance and learning what is healthy specifically for you.

It’s a gathering of scantily clad folks who aren’t afraid to wear sequins, bare midriffs, fins, and sea-inspired costumes in broad daylight, with thousands of people watching.

The Mermaid Parade allows women to dress up as Drag Queens.

“Just like the Halloween parade — it’s all authentic New Yorkers. And this is an authentic New York event, she said.

The parade has been held nearly every year since 1983 but went virtual in 2020 and was canceled in 2021 because of the COVID pandemic.

The Mermaid Parade is a chance to get made up, express yourself, hear live music, see classic cars, and enjoy the creative spirit of New Yorkers.

Organizers estimate hundreds of thousands of people come out each year.

A ceremony on the beach also marks the start of the official summer swimming season on Coney Island.

Sugar-Free Red Velvet Cake Squares Recipe by The Diabetic Pastry Chef

Today, Red Velvet cake, cupcakes, and cookies seem everywhere. But do you ever wonder where the recipe comes from?
My research found that a popular cookbook, The Joy of Cooking, debuted a red velvet cake in 1943. Irma S Rombauer, the cookbook author, shared the recipe but admitted in the text that she doesn’t care for the cake!
However, many researchers argue that red velvet cake predates the cookbook. They believe red velvet cakes were first served during the Victorian Era. Cocoa was used to help break down the coarse flour. As a result, the flour was softer, and the cake was described as velvety. Some argue that the chemical reaction between the cocoa and acid gives the cake its red color. The velvety texture and scarlet coloring led to the creation of Red Velvet Cakes. But the traditional recipe was changed due to WWII food rations. Bakers scrambled for alternative ingredients to use in their recipes. As a result, some bakers chose to use beet juice in their cakes. Beets work as a filler that keeps the cake moist.
I’d also like to add my two cents about the origins of Red Velvet Cake. My research points to Red Velvet Cake having African American origins.  The enslaved people believed that the red color represented Christ’s blood and that the cocoa powder would bring them good luck.
Below, our friend, Stacey Harris, known as The Diabetic Pastry Chef, shares her sugar-free version of a Red Velvet Cake. One of Stacey’s surefire secrets to successfully substituting artificial sweeteners in your recipes is using more than one kind. Using two types of artificial sugar substitutes tends to eliminate any bitter aftertaste.

Sugar-Free Red Velvet Cake Squares Recipe by The Diabetic Pastry Chef

Ingredients

1 cup all-purpose flour

1 cup white whole-wheat flour

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

2 Tbsp. cocoa powder

2 cups sugar-substitute of your choice

3/4 cup vegetable oil

2 eggs

1 cup buttermilk

2 tsp pure vanilla extract

2 tsps. red food coloring

1 tsp vinegar

1/2 cup hot coffee

Ingredients

1 cup all-purpose flour

Directions 

Combine all dry ingredients in a large bowl; set aside.

In the bowl with an electric mixer, combine sugar-substitute and vegetable oil. Add in the rest of the wet ingredients and mix well.

Add dry ingredients in thirds to wet ingredients, mixing just until combined.

Preheat oven to 350 degrees. Add batter to greased and floured 9×13″ pan. Bake for about 30 to 40 minutes, or until the cake pulls away from the sides of the pan and the center springs back when touched.

After cooling, sprinkle top with sugar-free confectioners sugar such as Swerve Confectioners. Serve cake cut into squares topped with whipped cream or whipped topping.

Although red velvet cake is generally linked with Valentine’s Day, it is also served at Juneteenth parties. For Juneteenth celebrations, the color red represents the struggle and bloodshed of the enslaved as well as the ultimate resilience of the people.

Twenty years ago, Clarence interviewed Luther’s mother, Mrs. Mary Ida Vandross, for Jet Magazine after Luther suffered a stroke due to mismanaged type 2 diabetes. Clarence’s story is an excellent reminder of why it’s essential to ACT F.A.S.T. if you or a loved one is experiencing a stroke. The acronym FAST (Facial drooping, Arm weakness, Speech difficulties, and Time) has been used by the National Stroke AssociationAmerican Heart Association, and others to educate the public on detecting stroke symptoms.

Earlier treatment results in a greater chance of recovery, a reduced likelihood of permanent disability, and a lesser need for extensive rehabilitation. You’ll quickly hear Clarence’s upbeat attitude and ferocious appetite for music and divas have served him well during his recovery.

“I love  so many elements in this show starting with the soundtrack which has so many great songs and the setting, historic Coney Island,” says Max ‘Mr. Divabetic’ Szadek. “Add to that, Catherine Schuller’s wacky nutrition fortune teller character, “Nutrina” from Divabetic’s popular Broomstick Bash healthy Halloween outreach program making an appearance.
