Cheeseburger Lettuce Wraps Recipe by Walden Farms Dressings

Ingredients

1 lb. ground turkey

1 tsp salt

1 tsp pepper

1 tbsp olive oil

1/4 cup of Walden Farms Original BBQ Sauce

4 slices light Cheddar cheese, halved and folded

8 large Boston lettuce leaves

4 slices of bacon, cooked

1 cup  diced tomatoes

1/2 cup diced onions

1/2 cup Walden Farms Thousand Island Dressing

Directions 

Preheat broiler. Season turkey with salt and pepper; divide into 8 portions. Shape each portion into a 1/2 inch thick patty.

Heat oil in a large skillet set over medium heat; cook patties for 4 to 6 minutes per side or until cooked through. Transfer burgers to a foil-lined baking sheet.

Brush each burger with 1 tbsp BBQ sauce and top with a piece of cheese. Broil for 1 to 2 minutes or until cheese melts. Serve burgers in lettuce leaves with 1/2 slice of bacon, tomatoes, and onions. Drizzle with dressing.

Easy Pizza Mini Peppers – Low Carb Recipe

Ingredients

You’ll only need 5 simple ingredients to make pizza mini peppers.  Here’s an overview of what you’ll need:

Bell Peppers: grab diffferent colors for a more festive looking appetizer

Pizza or spaghetti sauce: right out of the jar! Look for one lower in sodium

Shredded Mozzarella or Provolone cheese: shredded is great!

Pepperoni or small meatballs 

Directions

Start by cutting the peppers in half lengthwise and removing the membranes and the seeds.

Stuff the peppers with a little pizza sauce, ome cheese and pepperoni, then spray them with olive oil.

Broil the peppers until the cheese is melted. Keep a close eye on them so that they don’t burn!

Chef Robert Lewis, The Happy Diabetic, is a nationally recognized author and motivational speaker who is passionate about helping people learn to live a healthier lifestyle. Chef Lewis graduated from the prestigious Culinary Institute of America in 1976. He was diagnosed with type 2 diabetes in 1998. Thus began his motivation to create great tasting dishes that are easy to prepare. He travels the country speaking on the benefits of healthy eating not only for people affected by diabetes, but also for anyone who would like to eat and live a healthy lifestyle. 

Chef Robert’s Mediterranean Chicken of Love Recipe 

Ingredients                                                                                                                                                           

1 T extra-virgin olive oil

8 ounce skinless, precooked chicken brest sliced

1 T chopped garlic

Half a red bell pepper sliced, and green bell pepper sliced or 6-7 mini multi colored peppers sliced

½ red onion sliced

5-6 stalks of asparagus

2-3 large white button mushrooms sliced

1/2 cup grape tomatoes or Roma tomato diced

1/4 cup white wine or vegetable broth

1 t dried oregano

1 t dried rosemary

2-4 leafs of fresh basil or 1 t dried basil

10 black pitted olives or kalamata olives

1 can 15 oz. white Italian beans (drained well)

Black pepper, to taste

½ fresh lime

Sugar-Free Baking Secrets #2

Are you interested in baking with Stevia?

First off, stevia is a natural, non-nutritive sweetener extracted from the leaf of the stevia plant. More than 200 times sweeter than sugar. Stevia is essentially calorie- and carb-free.

Stevia-based sweeteners shouldn’t be used to replace sugar cup for cup in your favorite recipes. Most bakers agree that for the best results you should leave at least 1/4 cup of sugar in the recipe to help with browning and provide texture. You likely will need to use a lower baking temperature and increase the baking time.

Healthine states, ” Stevia may help manage your weight and blood sugar levels, and animal studies show that it may improve heart disease risk factors. However, it’s an intense sweetener that could negatively affect your health.” (READ MORE)

The Basic Substitution for baking with Stevia: Substitute 1 cup of sugar for 18 to 24 stevia sweetener packets, 1/3 to 1/2 teaspoon of undiluted stevia powder or 1 teaspoon of a liquid stevia extract. Experts recommend that you choose the amount of stevia based on how sweet you wish your baked goods to be.

Instead of a Mounds Bar, try these Chocolate Covered Katie’s No Bake Coconut Fudge Bars made with a liquid sweetener (maple syrup, agave, etc.) or with stevia. If you choose to use stevia for this recipe, Katie recommends that you add 1/4 cup additional coconut oil to make up the liquid difference.

Divabetic presents their 6th Annual Diabetes Mystery Podcast, Gingerbread Men Prefer Blondes, which takes place at the fictitiously decadent world-renowned Gingerbread Men Cookie Baking Competition in New York’s Central Park Zoo. Mr. Divabetic’s culinary misadventures continue in this year’s escapade as he enters the competition with headless cookies and pureed kale hot cocoa for the judges to sample. As if this dreadful combination wasn’t bad enough to land him at the bottom of the throwdown, his mother, Mama Rose Marie, is accused of poisoning one of the celebrity judges. Things go from bad to worse when the snake phobic Mr. Divabetic hears about the giant python’s escape.
