Vegan Key Lime Pie Recipe (with Pecan Pie Crust) from Kill Me Madam

The happy healthcare host, Mr. Divabetic offers an interesting twist to key lime pie with a gluten and dairy free, vegan recipe in Divabetic’s newest Mystery Podcast: Kill Me Madam available on demand.

His creamy dreamy vegan key lime pie is made with a crunchy pecan pie crust. When making this recipe it’s best to use a food processor or blender to get pecans very finely chopped. They need to be in tiny pieces so that they form a crust to hold together all of that delicious pie flavor. Enjoy!

Kill Me Madam Key Lime Pie Recipe

Pie Filling Ingredients:
1 cup raw cashews (soaked for 4-6 hours or overnight, then drained)
3/4 cup coconut milk
1/4 cup coconut oil (melted)
3-4 large limes juiced (3-4 limes yield ~1/2 cup juice)
1 tbsp lime zest
1/2 cup agave nectar

Pie Crust Ingredients:
1 cup chopped pecans
2 tbsp coconut oil, melted
1 tsp monk fruit sweetener

Instructions

For the Crust:

Preheat oven to 350 degrees. Crush pecans finely using a food processor until you achieve a fine meal.

Add butter and monk fruit sweetener to crushed pecans and pulse until all of the ingredients are mixed throughly

Grease a pie pan then add crust mixture.

Grease the back of a spoon and use it to carefully smooth the pecan mixture in the bottom of the pie pan and up the sides.

Bake for 10 minutes and allow to cool.

For the Filling:

In a blender (but you can also use a hand mixer) blend the raw cashews, coconut milk, coconut oil, lime juice, lime zest and agave nectar until the mixture is smooth. Taste and adjust flavor as needed, adding more lime zest/juice for more tart, or more agave for added sweetness.

Pour filling mixture into pecan crust and set aside.

Spread the homemade whipped cream on top of the key lime layer.

Freeze your key lime pie for 2 hours before serving or until it sets up.

1 T extra-virgin olive oil

8 ounce skinless, precooked chicken brest sliced

1 T chopped garlic

Half a red bell pepper sliced, and green bell pepper sliced or 6-7 mini multi colored peppers sliced

½ red onion sliced

5-6 stalks of asparagus

2-3 large white button mushrooms sliced

1/2 cup grape tomatoes or Roma tomato diced

1/4 cup white wine or vegetable broth

1 t dried oregano

1 t dried rosemary

2-4 leafs of fresh basil or 1 t dried basil

10 black pitted olives or kalamata olives

1 can 15 oz. white Italian beans (drained well)

Black pepper, to taste

½ fresh lime

Sugar Free Pumpkin Crumble Cheesecake Recipe by Chef Robert Lewis aka ‘The Happy Diabetic’

We’re less than a month away from the premiere of Divabetic’s Mystery Podcast, Kill Me Madam, on Wednesday, August 26, 2020, 6 PM, EST.  In the spirit of our upcoming culinary caper, our friend, Chef Robert aka The Happy Diabetic, who has appeared on several mystery podcasts, shares this delicous, healthy sugarfree cheesecake recipe with you!

Pumpkin Crumble Cheesecake Recipe by Chef Robert Lewis aka ‘The Happy Diabetic’

Ingredients: 

Cake Ingredients:

3 – 8 oz. packages cream cheese, softened

1/3 cup SPLENDA® Brown Sugar Blend

2 T. Splenda Naturals®

3 large eggs

1 t. almond extract

1 – 15 oz. can pumpkin

½ cup vanilla Greek yogurt

2 T. almond flour

1 ½ t. ground cinnamon

½ t. ground ginger

1 t. imitation maple flavoring

2 t. vanilla extract

Crumble Topping Ingredients:

1 cup almond flour

2 T. chilled butter

½ t. vanilla

4 T. SPLENDA® Brown Sugar Blend

Directions:

Preheat oven to 350*. Coat the bottom and sides of a 9-inch spring form pan with non-stick cooking spray. Using an electric mixer, beat cream cheese, SPLENDA® Brown Sugar Blend, and Splenda Naturals® until smooth. Beat in eggs one at a time. Blend in pumpkin, yogurt, almond flour, cinnamon, ground ginger, maple flavoring, and vanilla. Pour filling into prepared pan. Mix the topping ingredients by hand or in a food processor until crumbly. Sprinkle on top of cheesecake. Bake until firm, about 1 hour and 10 minutes. Remove from oven and run a butter knife around the inner edge but do not remove the pan side. Let stand at room temperature 30 minutes. Refrigerate.

Eating too quickly often leads to overeating. You eat more and more because your brain doesn’t have enough time to receive fullness signals from your stomach.

It’s also been proven that you’ll eat less food if you eat slowly and chew your food thoroughly before swallowing.

2 Tips to  Help you Start Eating More Slowly:

  • Chew more. Count how many times you normally chew a bite of food, then double that amount. You may be surprised at how little you usually chew.
  • Set your utensils down. Putting down your fork between bites of food will help you eat more slowly and savor each bite.

1 1/2 cups fresh or frozen wild blueberries
1 1/2 cups organic, unsweetened almond milk
2 tablespoons almond flour
3 tablespoons ground flax meal
1 tablespoon packed fresh mint leaves
2 teaspoons freshly squeezed lime juice
2 teaspoons raw honey
1 cup ice

Directions
1. In a blender, combine all ingredients and purée until smooth.
2. Divide smoothie between three glasses and enjoy immediately.

There’s no one-size-fits-all diabetes diet per se, but understanding how to make smart food choices is essential for keeping blood sugars in a healthy range.

One good choice is to eat a lot of fruits and vegetables, which are heavy in nutrition but light in calories. You can pack a lot of nutrition into one smoothie and get a delicious treat. As long as you stick with healthy ingredients and don’t add extra sweeteners, you can enjoy these treats on a regular basis.

Just remember when you do blend fruit into your smoothies to count them as part of your daily fruit allowance so you don’t overdo it on carbohydrates. Even natural sugar can drive up your blood sugar if you eat too much of it according to Everyday Health.

White Beans For Dessert?

Beans are considered to be a diabetes super food. The American Diabetes Association advises people with diabetes to add dried beans or no-sodium canned beans to several meals each week. They are low on the glycemic index and can help manage blood sugar levels better than many other starchy foods.

Of course, white bean are versatile, easy, delicious, and nutritious but what about to a dessert?

I’m sure some of you are thinking,  “Really? Beans for dessert? How can that work?”

Yes! Actually adding beans to dessert recipes can be a dynamite culinary creation.

“When the beans are pureed and mixed with other ingredients they form together to create a good binding agent for your batter, ” says Randall Beans on his website. “This allows you to cut out flour completely from most recipes. It seems like a strange concept, baking without flour. However, once you find a replacement for the binding you soon learn how replaceable and expendable flour really is.”

Ingredients

  • 1 cup plain nonfat strained yogurt (Greek or Icelandic)
  • 1 cup frozen mixed berries or frozen mixed berries with cherries
  • 1 tablespoon sweetener of choice
  • 2 tablespoons nonfat milk or any tart juice (cranberry, pomegranate, cherry)

Instructions

  1. Place all ingredients in a blender or a container for an immersion blender. Process until smooth.
