If you see some onion rings
Or maybe eggs and bacon
Trust that I’m aware of things

I do not need advice from you
So do not give it, please.
We people who have diabetes
Eat all kinds of food.
From oatmeal, grits and even Wheaties
And chicken, barbequed.
It’s ok to ask a question
To better comprehend.
But remember it’s just your impression.
And I do not have to defend.
So you eat yours, And I’ll eat mine
And we’ll enjoy our dinners.
Just realize where to draw the line,

Totally Unrealistic Healthy Food & Drink Swaps for Summer

Instead of a frozen strawberry daiquiri, drink water!

Most of us would sooner roll our eyes than adhere to this helpful, overzealous healthy eating advice. But does that mean we’re not taking our diabetes seriously? Or are we a bad person? 

Although water is the obvious healthier option, the two choices aren’t even comparable which doesn’t seem to bother our well-intentioned friends, co-workers and family members aka ‘The Food Police’. They like to share stringent suggestions while strictly adhering to a ‘do as I say, not as I do’ code of conduct at family gatherings or celebrations. But our their good intentions helpful or hurtful?

The ‘Food Police’ is the topic of July’s Diabetes Late Nite podcast entitled ‘I Know What You Ate Last Summer’ on Tuesday, July 12, 2018, 6 PM, EST. Those well meaning friends, family members and co-workers in your life who like to imply you’re good or bad for choosing a certain food. Their ‘helpfulness’ can lead to guilt and shame over food choices and make you loathe your diabetes self-care. Confused about Food?

If you are, you’re not alone. When you go online to seek advice you’ll find a dozen different ideas on the right way to eat to manage your blood sugars and they all contradict each other. It is very confusing, but it will all fall into place eventually, especially if you connect with a Registered Dietitian(RD) who’s a Certified Diabetes Educator (CDE). You can find such a person at EatRight.org.

Have you got a blood glucose meter? If not, we recommend that you get one. You can use it to test out your meals by check before you eat then again 2 hours after your first bite. The difference in the readings will show you how that meal affected your blood sugar levels. You may have some shocks, and you may have some nice surprises, but it is the only way to learn. Our bodies are all different. We are all on different (or no) medications, at different stages of the disease, so what is right for one may not be right for another.

What’s a healthy alternative to a Frozen Strawberry Daiquiri?

1. Make your own Frozen Strawberry Daiquiri at home. Most home-cooked meals have less calories, sugar, and fat than meals out and the same holds true for stay at home cocktails. The main ingredients are frozen strawberries, lime juice, lemon juice and a bit of sugar or honey. And, if you opt for alcohol you can decide how much rum to use. Don’t forget that a frozen strawberry daiquiri, made from strawberry schnapps, rum, lime juice, sugar and strawberries, contains about 220 calories and 34 grams of carbohydrates. If you’re trying to lose weight than drinking a few of these isn’t the best option.

2. Opt for a nonalcoholic version. You won’t save many calories but you will cut down on the added sugars from the liqueurs.

3. Alternate between a frozen strawberry daiquiri and a glass of water. As an added bonus, drinking plenty of water at the bar will likely reduce the chance of waking up with a hangover.

Keep in mind, while moderate amounts of alcohol may cause blood sugar to rise, excess alcohol can actually decrease your blood sugar level — sometimes causing it to drop into dangerous levels, especially for people with type 1 diabetes. Alcohol can interfere with the positive effects of oral diabetes medicines or insulin.

What’s moderate alcohol consumption?

Moderate alcohol consumption is considered 2 drinks/day for men; 1 for women. One drink contains 14 grams of alcohol meaning: one 12 oz beer (5% alcohol), one 5 oz glass of wine (12%) or one 1.5 oz of hard liquor (40% or 80 proof). It does appear that alcohol itself, and not the source, is responsible for the benefits.

‘Couples & Diabetes’ with Janis Roszler, LMFT, RD, LD/N, CDE, FAND

We’re talking about ‘COUPLES  & DIABETES’ on February’s Diabetes Late Nite podcast on Tuesday, February, 13, 2018. 6 – 7:30 PM, EST.

How we deal with the pressures of diabetes can make a real difference to the relationships we have with others including friends, family, work colleagues or one off acquaintances.

I reached out to my friend, and colleague, Janis Roszler, LMFT, RD, LD/N, CDE, FAND, who is  a Certified Diabetes Educator and Licensed Marriage and Family Therapist for her advice on the subject in an exclusive interview for the Divabetic community.  

Q: What are the common do’s and don’ts for engaging your spouse in your diabetes care?

Janis Roszler (JR): Ask, don’t assume.  Ask your partner if they would like your help.    If they say yes, ask what they would like you to do. 

(JR): Learn about diabetes.  The more you know, the more comfortable you are likely to feel.  For example, your partner’s occasional high blood sugar level is not a problem. Complications develop when blood sugar levels remains high for an extended period of time.

(JR): Don’t be offended if your partner turns down your offer to help.  Many people prefer to do certain tasks themselves. 

(JR): Don’t enter the “parent trap.”  You don’t want to turn into your partner’s nagging mother or father! Calmly share your concerns then ask how you can help. 

Q: What is helpful and not helpful in their interactions with each other?

(JR): Watch your non-verbal communication.  Rolling your eyes or turning away communicates a negative message as clearly as yelling.  When you speak to your partner, turn your body towards them, employ good eye contact and listen to what they say.  Don’t think about your response while they are speaking.  Good listening communicates heartfelt concern.

Q: What advice can you give spouses/partners who argue about diabetes?

(JR): Most couples fight.  The trick is to fight fair and repair hurt feelings at the end of the argument.  Here are some rules for fighting fair:

Make an appointment to discuss the issue.  Find a time when you both aren’t distracted.

Stay on topic.  If you are upset about a certain problem, don’t bring up other issues that also bother you.

Don’t bring up the past.  Avoid phrases like “you always…” or “you never…”  They make people feel attacked.

Focus on the problem, not the person.  Don’t call your partner stupid, forgetful or any other negative term.  That can cause hurt feelings and prompt your partner to attack you back. The problem is the issue, not your partner.

If things get heated, take a break. When people feel angry or attacked, they stop listening. They also have a harder time feeling compassion. If things get out of hand, take a break. Set a time to resume the discussion.

End in a supportive way. After the fight, try to connect in a loving way.  Hug, laugh, go for a walk, etc.  Invest in your relationship.

Q: What advice can you give to spouses/partners of people with diabetes who don’t want to manage their diabetes?

(JR): You can’t control another person’s behavior.  Let your partner know that you are there for them, but try not to nag or guilt them into changing their behavior.  It will only stress your relationship. It is hard to watch someone ignore or mismanage their health.  If watching them becomes too overwhelming, meet with a therapist who can help you deal with the situation.

Q: What advice can you give to spouses who may be afraid that their partners will develop diabetes health-related complications?

(JR): The good news is that people who manage their diabetes well dramatically reduce their risk of complications.  Discuss how you can support their efforts to stay healthy.  If they are open to it, join them at a diabetes class or appointment with their health provider, so you can learn what they need and how you may be able to help.

Q: Hypoglycemia is upsetting, both for people with diabetes and their partners. Both get scared, both get frustrated, and both can get angry, at each other and at the diabetes. What advice can you offer on this subject?

(JR): Create a diabetes emergency plan before a problem develops.  Which snacks should be in the house?  What should you say if you think your partner’s blood sugar is dropping? If your partner wears a pump and has an unexpected blood sugar swing, what should you do?  Etc. If you have unanswered questions, join your loved one at an upcoming appointment with their healthcare provider and ask what they suggest. 

Q:  Many people use glucose monitoring devices that can share data. Are there any guidelines for partners who monitor their spouse’s blood sugar data on their iPhones, etc.?

(JR): Some people feel great comfort knowing that their partner is watching their blood sugar level.  Others prefer to keep these results private.  Ask how your partner feels about sharing this information.  If you see that their blood sugar level is going out of range, how would they like you to communicate this information?  When should you tell them?  This is all very personal and should be discussed before the situation arises.

In the spirit of Diabetes Podcast Week, I’d like to ask you what some guidelines are for creating boundaries between parents and children with diabetes?

(JR): Visit the Children with Diabetes organization (childrenwithdiabetes.com).  They run wonderful programs and offer online support for parents of children who have diabetes. Learn how other parents handle boundary issues.  If your child is ready, encourage them to gradually start to do age appropriate self-care tasks, so they can become more independent.  Let them know that they can come to you if any task doesn’t go as planned.

Don’t Get Hoodwinked by Chocolate That’s Pink!

Barely a day goes by without my social media feed buzzing over the miraculous powers of some type of chocolate. Most recently, I’ve been bombarded by the news of the new KitKats coated in the pink-tinged, berry-like chocolate (Ruby Chocolate) offered in Japan. This pink Kit Kat is made from ruby cocoa beans without the addition of any coloring or flavoring and is being hailed as the first new type of natural chocolate to appear in over 80 years.

What’s the deal? Is this legitimate claim or just another example of the manufacturers enticing us to buy their food products without regard for our diabetes health?

I reached out to Virginia-based Jill Weisenberger, MS, RDN, CDE, CHWC, FAND, author of ‘The Overworked Person’s Guide to Better Nutrition’ to help make sense of this new Kit Kat’s health claims regarding Ruby Chocolate. Here’s our interview:

Q: Is this ruby chocolate healthier than dark chocolate? Why or why not?

JW: There’s not much information available about the nutritional composition or the flavanols in ruby chocolate. Because the processing is different and the beans may also be different, I would have to assume that there are differences among ruby chocolate and a flavanol-rich dark chocolate. I just can’t guess what they are.

Q: What advice can you offer someone living with type 2 diabetes about adding this Kit Kat as a snack to their meal plan? 

JW: Treat this like any other indulgent food. Work in the calories, carbs and saturated fat. You’ll need to swap this food for another. The best way to know how any food – indulgent or not – affects your blood sugar is to measure your blood sugar before eating and again about 2 hours later.

Q: Is this Kit Kat bar or any other chocolate a good way to treat a low blood sugar?

JW: Only if that’s your only option. I’ve known some people who say they actually look forward to having low blood sugar, so they can eat chocolate bars or other desserts. This just isn’t a good idea though. The quickest way to restore blood sugar levels is to consume something like glucose tablets, table sugar or fruit juice. Another big advantage is that glucose tablets or something similar provides many, many fewer calories and no unhealthy saturated fats. Gluten Free – Are You Kidding Me?

Scan the grocery aisles, neighborhood bakery or office cupboard and it’s impossible to miss the multitude of products proclaiming that they are “gluten-free.”  Or go on Instagram and be barraged by yet another celebrity who has banished gluten from their diet. And as you can see by the photo below, it looks like even savvy NYC Christmas tree vendors are jumping on the bandwagon. 

All kidding aside, I can’t help but wonder if there’s any truth to the gluten free food trend? Is it real or hype? And should you really be concerned about all or any of the gluten lurking around in your diet? 

I reached out to Virginia-based Jill Weisenberger, MS, RDN, CDE, CHWC, FAND, author of ‘The Overworked Person’s Guide to Better Nutrition’ to help make sense of the chaos surrounding the gluten free food trend. Here’s our interview:

Q: Is Gluten Free real or hype?

Jill Weisenberger, (JW): It’s both. It’s for real and it’s hype. 

Completely avoiding gluten, a protein in wheat, rye and barley, is critical for anyone with celiac disease and anyone with a diagnosed gluten sensitivity. It’s a problem when people self-diagnose and stop consuming gluten. You really need to nail down the diagnosis before starting a gluten-free diet, which is the only treatment for celiac disease. The only way to diagnose celiac disease is to have an intestinal biopsy after regularly consuming gluten. So if people have the biopsy after avoiding gluten, they might be told that they don’t have celiac disease when they really do. 

Celiac disease, by the way, is an autoimmune disease, and gluten damages the small intestine.

It’s hype when it comes to weight loss and general health for anyone who is not intolerant to gluten. Only those people with celiac disease or another gluten intolerance should be on a gluten-free diet. If others feel more energetic or sleep better or have other benefits, it’s probably from an improved diet and not from the avoidance of gluten. Since gluten is in wheat, a gluten-free diet usually means fewer baked goods and less highly processed snacks and other foods. I think people feel better because they replaced packaged snacks with wholesome, health-boosting foods like fruit and nuts and yogurt – not because they gave up gluten.

Q: What does ‘gluten free’ really mean?

JW: Someone with celiac or other gluten intolerance must avoid gluten from all sources. This is not easy! Gluten is found in wheat, barley, rye, contaminated oats and all products made with them. You’ll find gluten in baked goods, candy, bread, soups, soy sauce, beer, even lots of lunch meats and cottage cheese. And even lipsticks and medications can contain gluten.

Q: What can I eat on a gluten free diet?

JW: Certainly someone with celiac disease or a gluten sensitivity has lots of restrictions, but there are lots of good options too. It’s important to consume the least restricted diet possible. This is true for everyone. By eating a large variety of foods, you will get the most possible nutrients. Focus on fruits, vegetables, milk, lean protein sources like fish and poultry, legumes like lentils and black beans. There are lots of grains that are gluten free. A few to try out are buckwheat, millet, quinoa, rice and sorghum. 

Q: How difficult is it to be gluten free?

JW: Fortunately, there are lots of gluten-free products identified in supermarkets, but people have shared with me that avoiding all gluten is difficult. This is especially true in restaurants, other people’s homes and at parties. Even well-meaning waitstaff and friends get confused and foods that may contain hidden gluten. Condiments can be a problem. Another big problem is cross contamination. Say you have celiac disease, but live with people who don’t. If someone spreads mustard on bread and puts the knife back into the mustard, it may now be contaminated with gluten.

Q: Who should be gluten free?

All people with celiac disease and those with non-celiac gluten sensitivity must follow a gluten-free diet. Both type 1 diabetes and celiac disease are autoimmune diseases. Research shows that they have a similar genetic basis. Often people with type 1 diabetes will also have celiac disease. Everyone with type 1 diabetes should discuss getting tested for celiac with their doctor. People with diabetes but without celiac disease or documented gluten sensitivity do not need to eat a gluten-free diet.

Q: How about people with type 2 diabetes? Should they be on a gluten free diet?

JW: Celiac disease is not more common among people with type 2 diabetes than it is among the general public.  I don’t recommend a gluten-free diet for people who don’t need it because the more restricted a diet is, the fewer health-boosting nutrients it’s likely to provide. 

Q: Why would I choose to eat gluten free foods if I’m not gluten intolerant?

JW: There’s no need to eat foods made specifically for a gluten-free population unless you have celiac disease or a diagnosed gluten sensitivity.

Q: Does ‘gluten free’ mean healthier? or What’s the biggest misconception about gluten free?

JW: Definitely not. In fact, gluten-free breads and other products often lack the iron and vitamins found in traditional products. This is why it’s so important to work with a registered dietitian nutritionist skilled in gluten-free diets. Some people think that foods marked gluten-free or free of another nutrient must be more healthful. This is false.

Q: Is a gluten free donut better for me than a regular donut?

JW: Sorry no. A donut is a donut is a donut. It’s a now and then food – gluten or no gluten.

Q: Can I be gluten free without eating gluten free packaged foods?

JW: Yes. Just like someone can eat a wholesome gluten-containing diet without relying on packaged foods, it’s possible to eat a variety of foods without gluten without buying a single special product. But it’s okay to buy them. Just be intentional about it. Gluten-free doesn’t mean wholesome. Again, this is why working with a skilled registered dietitian nutritionist is so important. 

Q: Jill, any final thoughts on gluten free diets?

JW: This is potentially a difficult diet to follow, and it leaves you vulnerable to nutrient deficiencies. You can find a RDN to help you at eatright.org.

12 Days of Blue Christmas Gift Ideas from Mr. Divabetic

We understand why the holiday season can be difficult for people living with diabetes, or their loved ones.
It’s bound to be a stressful time as you are confronted with numerous social commitments, overly helpful relatives, busy holiday travel, financial burdens and an abundance of food and drink indulgences. A dizzying array of demands — parties, shopping, baking, cleaning and entertaining, on top of managing your diabetes can ruin your holiday spirit and compromise your hurt your diabetes health. 

If you’re fearful about the toll the holidays will take on your diabetes then let us help.

Being realistic, planning ahead and seeking support can help ward off stress and depression. Seek out community, religious, sports and/or other social events. They can offer support and companionship.

Make some time for yourself. Spending just 15 minutes alone, without distractions, may refresh you enough to handle everything you need to do. And learn to say ‘no’. Saying ‘yes’ when you should say ‘no’ can leave you feeling resentful and overwhelmed. Friends and colleagues will understand if you can’t participate in every project or activity.

If you’re feeling stressed about overspending during the holidays but still want to be show your gratitude to that special someone living with diabetes in your life, then check out our 12 Days of Blue Christmas Gift Ideas list: 
Day 1 – Board game. I love Quiddler, winner of over 20 Best Game Awards. It’s easy to learn and fun for everyone! The goal is to arrange all the cards in your hand into one or more words. My friends and I had a blast playing this game in Ptown over the Columbus Day weekend. 
Day 2 – Pair of gloves. Peripheral neuropathy associated with diabetes. Poor circulation and loss of feeling in the hands can cause people with diabetes not only to have cold hands, but also to fail to realize when cold temperatures are endangering their hands. UGG now sells gloves for men and women! Their rich leather gloves lets you use your touchscreens while keeping your hands warm. … Leather and sheepskin. Everybody I know raves that they are the “Best Gloves” ever owned. Remember, the holiday season can be an extremely stressful time for all of us. But stress, both physical and mental, can send your blood sugar levels out of whack. It’s important to start taking steps now to relax, unwind and/or mediate to keep yourself and your family healthy for life.

Are You Afraid to Eat Carbs? on July’s Diabetes Late Nite

Have you completely sworn off carbs since being diagnosed with diabetes?

This angst is easy to understand when every day we are bombarded with health messages to limit, restrict, avoid, and feel guilty for eating carbohydrates. However, these negative food and eating messages are harmful and do not align with my nonjudgment view of food.

Megrette Fletcher M.Ed., R.D., CDE is a registered dietitian, diabetes educator, and Mindful Eating expert  joins us on our 7th Anniversary Diabetes Late Nite podcast on Tuesday, July 11, 2017 to discuss this ‘hot topic’ suggested by one of our loyal listeners.

Over the past few decades carbohydrates have become demonized. But the truth of the matter is that ‘Carbs are friends, not foes’!

“Motivating (my) clients with fear is not only ineffective, but can lead to misinformation, misunderstanding, and toxic emotions such as blame, shame, and depression,” says Megrette.

Carbohydrates (carbs) are a macronutrient found in foods like grains, starchy vegetables like sweet potatoes, potatoes, squashes, corn, fruit, vegetables, dairy, legumes/beans, and foods like bread, pasta, sweets, and more. While vegetables DO have carbohydrates, some nutritionists don’t consider them a carb source because they feel the energy you use to digest them counters any carbs you would get from them.

Carbs often come packaged with fiber and sometimes protein, like in legumes, dairy, or starchy vegetables. In the body, carbohydrates break down to sugars like glucose, fructose, or galactose (the simplest sugars). Don’t be scared of the “S” word (sugar) – this is simply the way the body digests and processes carbohydrates.

Carbohydrates give us the energy we need to live our diabetes lives. If chosen carefully, carbohydrates can deliver a number of health benefits and also help people maintain their weight.

One of the reasons for why carbs get such a bad rap is because the extra sugar available from the glucose formation gets stored in muscles, the liver, or other parts of your body, later getting converted into fat if the body doesn’t need it for energy. However, that’s on you, not the carbs. If you keep moving and require your body to use up that energy, the sugar from carbohydrates won’t get stored as fat.

Southwestern Pasta Recipe by Holly Clegg (Divabetic’s Father’s Day Celebration)

Our Divabetic Father’s Day Celebration takes on a Spaghetti Western theme to encourage you to embrace your ‘inner cowboy’ and keep riding high with diabetes health!

Cowboys, like today’s miners and farmers, symbolize courage, optimism, and plain hard work. They also remind you that success isn’t only measured with materials, but by where you find satisfaction.

One of our favorite experts, Best-Selling Cookbook Author Holly Clegg shares this Southwestern menu for a Divabetic Father’s Day Celebration.  Holly’s menu includes Southwestern Roasted Vegetables, Asparagus with Zucchini Rings., Vodka Pasta, Beer Bread , Butternut Squash, Black Bean and Feta Enchiladas with Salsa Verde,  Southwestern Pasta (We will be posting one recipe each day throughout the upcoming week).

Southwestern Pasta by Holly Clegg

“Quick to make and the outcome is one of the best southwestern pastas with corn and black beans in a perfectly southwestern infused tomato sauce,” says Holly. 

Makes 8 (1 1/4 cup servings) 

1 onion, chopped

1 (14-ounce) can fire-roasted diced tomatoes

1 (10-ounce) can diced tomatoes and green chilies

2 teaspoons chili powder

1/2 teaspoon ground cumin

1 teaspoon minced garlic

1/8 teaspoon ground cinnamon

Pinch Sugar

Salt and pepper to taste

1 (16-ounce) package rotini

1 (15-ounce) can black beans, drained and rinsed

1 1/3 cups frozen corn

1 cup shredded reduced-fat Mexican blend cheese, optional

1. In large nonstick skillet coated with nonstick cooking spray, sauté onion few minutes.  Add cans tomatoes, chili powder, cumin, garlic, cinnamon and sugar.  Bring to boil, reduce heat, simmer, covered, about 10 minutes.  

2. Meanwhile, cook pasta according to package directions; drain. 

3. Stir black beans and corn into tomato sauce until heated. Add pasta to skillet and mix together.  Sprinkle cheese when serving, if desired.

Artistic Dad Raises Awareness for Diabetic Macular Edema 

Nevada artist Arthur Bryce Chisolm developed this mixed media painting after meeting with Maryanne, who lives with Diabetic Macular Edema (DME) and has experienced vision loss due to the disease. The work of art brings to life the things Maryanne cherishes seeing despite her condition.

Set at a particularly beloved beach in San Diego, the painting shows Maryanne’s grandchildren, who she loves spending time with and who make up an important part of her life. The painting also illustrates Maryanne’s eyes, which represent the importance of the steps she took to help protect against vision loss. Spaghetti Westerns Trivia: Clint Eastwood 

Younger film fans may find it hard to believe, but Clint Eastwood wasn’t always a badass. Prior to his iconic performance in “A Fistful of Dollars” (1964), Eastwood was best known to American audiences as Rowdy Yates, a kind-hearted supporting character on the popular “Rawhide” TV show. In fact, it was the opportunity to leave Rowdy’s friendly persona behind that most intrigued Eastwood about going to Spain to work for director Sergio Leone. “I decided,” Eastwood said, “it was time to be an anti-hero.”

No one could have predicted that “A Fistful Of Dollars,” released in Italy 50 years ago this September, would simultaneously launch Eastwood to international stardom and set the guidelines for one of the most unique and unexpectedly durable sub-genres in cinema history: the “Spaghetti Western.”

You can also verify the legitimacy of an online company that fills prescriptions or sells healthcare products at LegitScript.com.

2. Ask for samples.
Most medical supply companies and drug manufacturers supply healthcare providers with free samples of their products. Ask about samples whenever you visit your physician or diabetes educator. Check out the ADA’s site for the dates and locations of upcoming Diabetes Expos, where free health screenings, classes, and samples are available. You can also contact supply companies directly and ask for samples.

3. Look for sales and coupons.
In addition to flyers and other announcements from your local drug store or pharmacy, check to see if the store publishes a free monthly or seasonal health magazine that may also contain discount coupons. Shop around at different stores, including the big-box department stores, for the best prices on generic and store-brand products. But always compare products to be sure you’re getting a deal. Our annual Mister Divabetic Mystery Podcast presented in September is a fun way to learn about diabetes for mystery lovers.

This year’s Mister Divabetic Mystery Podcast: ‘Gypsies, Tramps & Peas’ takes place at the Mermaid Parade in Coney Island, NY and features summer time diabetes education tips and healthy recipes from our favorite chefs including Chef Robert ‘The Happy Diabetic’ Lewis  and Stacey ‘The Diabetic Pastry Chef’ Harris.

Diabetes advocate turned reluctant amateur sleuth, Mr. Divabetic finally takes the plunge and ventures into a new career as a healthy caterer.  With the help of his co-workers and nosy Italian mother, Mama Rose Marie, he heads for Coney Island, NY for the 35th Annual Mermaid Parade to cater his first party aboard a yacht for his former swim coach, Ted Rockow. But his nautical soiree quickly capsizes when the guest of honor is found swimming with the fishes. What it an accident or foul play? Now Mr. Divabetic’s grilling Burlesque dancers, a lifeguard lothario and some sequined mermaids, all intent on keeping their secrets buried deep within the sand. Can Mr. Divabetic prove Coach’s death was a murder, not an accident? Or will he end up floating out to sea?

One of the dilemmas our team faces in Coney Island is what to do with all the unused vegetables from the party, especially the zucchini!

Thankfully Chef Robert Lewis aka ‘The Happy Diabetic has come to our rescue with this delicious recipe for Chocolate Zucchini Cupcakes for you to enjoy!

Chocolate Zucchini Cupcakes Recipe by ‘The Happy Diabetic’

What’s in it!

  • 1-1/4 cups butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 1 cup grated zucchini
  • 1 cup grated carrots

Let’s Put It Together

1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with yogurt, beating well after each addition. Fold in zucchini and carrots.

2. Fill paper-lined muffin cups two-thirds full. Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Frost cupcakes with a chocolate frosting

Yield: 21 cupcakes.

Chef Robert ‘The Happy Diabetic’ Lewis:

Growing up in Los Angeles offered Chef Robert a culinary experience he will always cherish. Family cooks and guests in my home were experts in preparing Jewish, Mexican, Middle and Far Eastern, and traditional dishes, which gave him a love for food and the creative outlet it provided.

After graduating from the Prestigios Culinary Institute of America in 1976. In 1998 he was diagnosed with type 2 diabetes. Thus began his motivation to create great tasting dishes that are easy to prepare.

In order to develop DME, you must first have diabetic retinopathy.

Diabetic retinopathy is caused by damage to the blood vessels in the tissue at the back of the eye (retina). Poorly controlled blood sugar is a risk factor. Early symptoms include floaters, blurriness, dark areas of vision, and difficulty perceiving colors. Blindness can occur.
