Sweet Potato Walnut Balls Recipe by Jill Weisenberger

Earlier today, Jill Weisenberger joined Thomas Jefferson University Hospital’s Diabetes Boot Camp’s World Diabetes Day celebration on Zoom. Jill shared her favorite kitchen gadgets and healthy, delicious holiday snack ideas like Sweet Potato Walnut Balls during virtual event.

“My mother makes a sweet potato recipe similar to this (recipe) for Thanksgiving,” says Jill. “A few years ago, I modified her recipe to make it dairy free for one of our dinner guests. Last year I healthified it more and amped up the flavor by adding a bit of orange juice and orange zest. It’s definitely a keeper.”

Sweet Potato Walnut Balls Recipe by Jill Weisenberger

Ingredients

  • 2 pounds sweet potatoes
  • 1 Tbsp real maple syrup (feel free to use honey if you prefer)
  • 1/4 tsp kosher salt or other coarse salt
  • 1/4 tsp coarse ground black pepper
  • 1/2 tsp orange zest, preferably freshly grated
  • 1 Tbsp orange juice
  • 4 Tbsp honey
  • 1.5 cups chopped walnuts, pecans or a combination of both

Sugar-Free Zucchini Bread Recipe by The Diabetic Pastry Chef

Type 2 diabetes doesn’t stop ‘The Diabetic Pastry Chef’, Stacey Harris from indulging her sweet tooth. She taught herself how to make pound cake, pecan rolls, pies, muffins, cupcakes, and other baked goods with about half the carbs you’d get from traditional bakery items. From her tasty treats to her outlook on life, this pastry chef keeps things as sweet as can be as well as … sugar free!

The Diabetic Pastry Chef‘s Sugar-Free Zucchini Bread Recipe

Ingredients

3/4 cup all-purpose flour

3/4 cup white whole wheat flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1 tsp ground cardamom

1/4 tsp ground nutmeg

1/2 cup vegetable oil

l large egg

1 cup dry sugar substitute of your choice

1 1/2 tsp molasses

2 tsps pure vanilla extract

1 medium zucchini, grated

1 cup walnuts or pecans, chopped; optional

Instructions

Preheat oven to 350 degrees and grease a 9×5″ bread loaf pan. It is advisable but not necessary to cut a piece of parchment to line the bottom of the pan for easy unmolding.

In a medium bowl, whisk together the dry ingredients, except for the sugar substitute. Add nuts if using; set aside. In another medium bowl, combine and whisk the vegetable oil, egg, sugar substitute, molasses, and vanilla. Add the grated zucchini.

Pour the wet ingredients into the bowl of the dry ingredients and stir just until combined being careful not to over mix. Pour batter into loaf pan and bake for 45 or 55 minutes, or until toothpick inserted into center of bread comes out fairly clean.

Divabetic New Product Spotlight: Tessie’s Teas

Rose Hall is the founder of Tessie’s Teas, a company that pays homage to the wisdom passed down from her mother and celebrates her love of tea. She was our guest on October’s Diabetes Late Nite podcast.

Q: You worked for 20-years as a mental health therapist and social worker. Tell us about that experience: 

RH: I always felt that helping others in life’s most difficult situations is my calling. I worked in the department of psychiatry at Albert Einstein College of Medicine in New York, the Bronx, with dual diagnosis clients, who had mental health diagnosis and drug dependency. Through the years, I also worked with teens and children with behavior issues and situations of neglect. I found out that is heartbreaking gut-wrenching work.

Q: What inspired you to start a new career as an entrepreneur after you retired? 

RH: The positions I have held over 25 years have been overwhelmingly stressful, I was burnt out, I know my life’s purpose is to help people, but I needed to do it in a different way. I am an avid tea drinker who learned at an early age the benefits that can be derived from drinking herbs, spices, and roots. 

Q: Tell about your mother, growing up in Jamaica, and the Caribbean tradition of tea drinking that inspired you to start Tessie’s Teas. 

RH: We lived with my great grandmother who drank tea every day, all day it seemed. Any ailment, she had a tea for that. She would go out and pick some bushes and boil them and tell you to drink it down and you would be better that day or the next day depending on the symptoms. I watched her live a productive life well into her 90’s, and my grandfather drinking different teas daily lived to be 107. So, these personal experiences are the reason why I believe in drinking tea.

Q: Describe your teas – flavors, etc. and your two flagship all-natural teas with no additives, no preservatives, and no caffeine.

RH: We provide ginger rolled in honey with a little cane sugar to help with the crystallization process and have mint infused with raw cane sugar. Ginger and mint have many medicinal health benefits. They have antioxidants and anti-inflammatory, digestive, and anti-viral aids while helping to boost the immune system. Mint helps with weight loss because it’s a natural appetite suppressant. I find if I drink a cup of mint tea before I eat, I eat less and feel full faster. We have customers who report losing weight from drinking our mint tea. The teas are instant – just add water, stir and enjoy. There are no additives, no preservatives, and no caffeine and they are healthy, delicious, and convenient.

Q: You traveled to over 10 countries sourcing tea and gaining an understanding of the tea business. Tell us about your experience.

RH: My best adventure was in Sri Lanka, which border’s India. My driver came to pick me up around 5:00 am because it’s a long trip up the mountain to the tea gardens. On the way up we passed an elephant orphanage in a rock quarry and experienced a remarkable scene when one of the elephants tripped on a rock and fell. The other elephants walked over to the fallen one and got done on their knees, used their shoulders as a team to push him up until he was standing again. It was amazing, I thought to myself imagine if all humans did that for each other, what would this world be like?

Creamy Tomato Soup Recipe by Jill Weisenberger

Ingredients

  • 2 tablespoons extra virgin olive oil, divided
  • 1 large onion, chopped
  • 4 garlic cloves, chopped
  • 1 tablespoon tomato paste
  • 1 (26.46-ounce) box of chopped or crushed Italian tomatoes
  • 1/2 teaspoon coarse black pepper
  • 2 1/2 cups vegetables broth
  • 1 1/2 ounces Parmesan cheese
  • 2 ounces bread (no seeds or nuts), torn into about 4 pieces
  • 5 fresh basil leaves

Sugar Free Pumpkin Crumble Cheesecake Recipe by Chef Robert Lewis aka ‘The Happy Diabetic’

Pumpkin Crumble Cheesecake Recipe by Chef Robert Lewis aka ‘The Happy Diabetic’

Ingredients: 

Cake Ingredients:

3 – 8 oz. packages cream cheese, softened

1/3 cup SPLENDA® Brown Sugar Blend

2 T. Splenda Naturals®

3 large eggs

1 t. almond extract

1 – 15 oz. can pumpkin

½ cup vanilla Greek yogurt

2 T. almond flour

1 ½ t. ground cinnamon

½ t. ground ginger

1 t. imitation maple flavoring

2 t. vanilla extract

Crumble Topping Ingredients:

1 cup almond flour

2 T. chilled butter

½ t. vanilla

4 T. SPLENDA® Brown Sugar Blend

Directions:

Preheat oven to 350*. Coat the bottom and sides of a 9-inch spring form pan with non-stick cooking spray. Using an electric mixer, beat cream cheese, SPLENDA® Brown Sugar Blend, and Splenda Naturals® until smooth. Beat in eggs one at a time. Blend in pumpkin, yogurt, almond flour, cinnamon, ground ginger, maple flavoring, and vanilla. Pour filling into prepared pan. Mix the topping ingredients by hand or in a food processor until crumbly. Sprinkle on top of cheesecake. Bake until firm, about 1 hour and 10 minutes. Remove from oven and run a butter knife around the inner edge but do not remove the pan side. Let stand at room temperature 30 minutes. Refrigerate.

31 Days Of Divabetic Podcasts, Day Fourteen

On Day 14, we’re spotlighting tonight’s Diabetes Late Nite podcast inspired by Patti LaBellle. Back in 2003, Patti LaBelle inspired me to coin the phrase ‘Divabetic’ when she said “I have diabetes, diabetes doesn’t have me.” Her outspoken attitude about living with diabetes pierced my heart as I sat in the audience. I wished that Luther had spoken to me about his diabetes and how to help him in case there was an emergency. Of course, you can’t turn back the clock. All I can do is share my experience with you in the hope you will be motivated to involve your family, friends and co-workers in your daily diabetes self-care.

Tonight’s Diabetes Late Nite podcast also signifies a new milestone in diabetes outreach for Divabetic. For the past decade we have produced at least one podcast each month of every year.

“All great achievements require time,” said Dr. Maya Angelou. She added, “Nothing will work unless you do.”

I staged a ‘comeback’ and so can you!

Back in July 2010, I was brokenhearted and discouraged. A full year had passed since Divabetic lost it’s major funding for it’s national outreach program, Divabetic – Makeover Your Diabetes and there was no light in sight. I felt like a failure. I was staring at a pile of rejection letters from numerous foundations and pharmaceutical companies requesting funding and another pile of requests from women with diabetes and/or certified diabetes educators begging us to bring Divabetic – Makeover Your Diabetes to their city. So it’s probably not a shock to learn that I said, “no” when it was suggested that I host a podcast.

Why would I want to do something new when I had just failed so miserably and let so many people down?
Starting over is not easy. However, I’ve had to do it several times in my life. In 2003, when I found my boss, Luther Vandross after he suffered a devastating stroke related to mismanagement of type 2 diabetes. In 2005, when Luther Vandross died and I lost my job (as well as my identity). In 2009, when Divabetic lost it’s major source of funding. Somehow after suffering every one of these ‘soul punches’ I persisted and so can you! That’s the message of this milestone.

The Diabetes Fairy Tales stage show in Pittsburgh will feature Little Red Riding Hood self-care games, 3 Bears fitness demonstrations, Hansel and Gretel Food Aisle Face-Offs, and diabetes care advice for damsels in distress from the experts.

Poet Lorraine Brooks added a diabetes twist to the popular Beauty & The Beast fairy tale.
