Very Berry Smoothie Recipe by Jill Weisenberger 

Ingredients

  • 1 cup plain nonfat strained yogurt (Greek or Icelandic)
  • 1 cup frozen mixed berries or frozen mixed berries with cherries
  • 1 tablespoon sweetener of choice
  • 2 tablespoons nonfat milk or any tart juice (cranberry, pomegranate, cherry)

Instructions

  1. Place all ingredients in a blender or a container for an immersion blender. Process until smooth.

Sugar-Free Fruit Tartlets Recipe by The Diabetic Pastry Chef

Type 2 diabetes doesn’t stop ‘The Diabetic Pastry Chef’, Stacey Harris from indulging her sweet tooth. From her tasty treats to her outlook on life, this pastry chef keeps things as sweet as can be as well as … sugar free!

Berry tartlets with blueberries, raspberries, kiwi, strawberries, almond flakes in icing sugar

Sugar-Free Fruit Tartlets Recipe

Cookie Crust Ingredients:

1/2 cup butter, softened

1/2 cup Whey Low D Granular, or equivalent dry sugar substitute

2 large eggs

1 cup unbleached all-purpose flour

3/4 cup white whole wheat flour

Directions: In the bowl of a mixer, beat the butter on medium speed until smooth. Add the sugar substitute and mix until incorporated. Add the eggs one at a time beating until combined after each. Add the flour all at once and mix on low just until incorporated.  Cover and refrigerate for a minimum of 2 hours. Roll out and use fluted 3″ cookie cutter to cut and place in 24 mini muffin cups. Bake in 350 degree preheated oven until golden brown approximately 10 minutes.

Custard Ingredients:

1/3 cup Whey Low D Granular, or equivalent dry sugar substitute

3 Tbsp cornstarch

1/8 tsp salt

2 cups milk

2 egg yolks, slightly beaten

1 Tbsp butter

1 tsp pure vanilla extract

Directions: In medium saucepan, combine the dry ingredients. Gradually stir in the milk, and cook over medium heat until the mixture boils and thickens while stirring constantly. Boil for 1 minute.  In small bowl, blend approximately 1/3 of the hot mixture into the egg yolks. Return the yolk mixture to the hot mixture and blend well. Cook the mixture until it bubbles, stirring constantly.  Remove from heat and add the butter and vanilla. Cool. Fill each muffin cup about half way with the cooled custard and add topping. Fruits can be brushed with a little heated currant jelly if you would like them to appear glossy. Refrigerate until serving time.

Topping:  Various fruits and berries such as: Blueberries, raspberries, strawberries, kiwi, sliced almonds, confectioners sugar or substitute for dusting and/or mint leaves for garnishing.

Slightly Sinful Shortbread Recipe from SPLENDA®

A lot of us living with diabetes who are cutting back on high-carb foods like starches, desserts and processed snacks still have a sweet tooth.

Keep in mind, SPLENDA® contains maltodextrin and dextrose, two carbs that supply about 3 calories and 1 gram of carbs in each packet ( 6 ) even though it’s calorie-free. SPLENDA® can be substituted for sugar in a 1:1 ratio for most recipes.Happy baking! 

Combine flour, SPLENDA® Granulated and rice flour. Beat butter until smooth and creamy. Gradually add flour mixture, beating until smooth. Press evenly into a greased 8’ square baking pan. 
 
Bake at 325°F (160°C) for about 35 minutes or until lightly browned at the edges and firm to touch. Cool on rack. Cut into small squares. Store in the refrigerator.

Chef Robert’s Recipe: Salmon Skewers of Love

On July’s Diabetes Late Nite podcast I interviewed Chef Robert Lewis aka ‘The Happy Diabetic’ about grilling tips for the Summer. Our Divabetic Inspiration, P.M. Dawn’s frontman, Prince Be suffered multiple diabetes health-related complications including stroke, amputation and kidney disease before passing away at age 46 earlier this year.

People living with kidney disease are encouraged to follow specific dietary guidelines for optimum health including eating less protein. Since one of the biggest joys of Summer is using your backyard grill I asked Chef Robert to share some healthy summer grilling recipes that don’t include red meat.

After graduating from the Prestigios Culinary Institute of America in 1976. In 1998 Chef Robert was diagnosed with type 2 diabetes. Thus began his motivation to create great tasting dishes that are easy to prepare.

Chef Robert’s Salmon Skewers of Love Recipe

What’s in it?

2 medium-size fresh salmon filets

2 tablespoon fresh garlic

3 Tablespoon extra virgin olive oil

2-3 large leafs of fresh basil

2 tablespoon fresh lemon juice

1 red pepper

2 green peppers

1 red onion

1 large Portobello mushrooms

4 bamboo skewers

 

Let’s put it together

  1. Skin salmon and cut it into 1-inch pieces if your fishmonger hasn’t already

done the job for you.

  1. Mix garlic, oil, basil and lemon juice in a bowl. Combine

with salmon and refrigerate for 2 hours.

  1. Place skewers in cold water for 10 minutes before building them. (This will

keep them from burning.)

  1. Cut veggies into 1-inch pieces.

Alternate peppers, onions, mushrooms, and salmon on skewers. Place on a hot grill for 8 to 10 minutes, turning often, or place on a baking sheet in a 375-degree oven for 10 to 12 minutes. Serves 4.

Nutrition per serving: 226 calories, 26.5 grams fat, 9.31 grams carbohydrates and 40 grams protein.
