Chickpeas with Lemongrass, Grass & Farro One-Pot Meal Recipe by Jill Weisenberger

Jill Weisenberger MS, RDN, CDE, CHWC, FAND was our special guest on Divabetic’s recent free Cooking Party event on Zoom. Jill shared several of her favorite healthy soup recipes, answered questions and encouraged participants to try new flavor combinations like cinnamon and spinach!

“You can boost the protein even more (in the recipe below) when you heap Greek yogurt on top or enjoy a glass of cold milk with your meal,” says Jill Weisenberger. “No butternut squash? No problem. Leave it out. Add a couple extra carrots if you have them.”

Below is one of Jill’s favorite one-pot meal loaded with plant protein and exquisite flavor.

Chickpeas & Farro: a Healthy Vegetarian One-Pot Meal Recipe by Jill Weisenberger

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large yellow onion, diced
  • 4 large carrots, sliced
  • 12 ounces butternut squash, cubed
  • 1 4-inch piece lemongrass, smashed slightly with a knife
  • 3 garlic cloves, crushed or chopped
  • 1 tablespoon freshly grated ginger
  • ½ teaspoon red pepper flakes
  • 1 14.5-ounce can petite diced tomatoes, no salt added, undrained
  • 4 cups vegetable broth look for lower sodium varieties
  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 cup dry farro
  •  cup fresh basil, chopped
  • 1 cup plain nonfat Greek yogurt or other plain strained yogurt of choice

Nutrition:Serving: 1.75cup, Calories: 340, Carbohydrates: 62g, Protein: 16g,  Fat: 5g, Saturated Fat: 0.5g, Trans Fat: 0g, Cholesterol: 0mg, Sodium: 650mg, Fiber: 12g

So Amazing White Apple Martini

 
Ingredients
 
1.5 fluid oz of Skyy Green Apple Vodka
.5 oz of clear Apple Juice
.5 oz Apple Schnapps
Splash of Spring Water. ( if needed to cut sweetness)
 
Directions
 
Place all ingredients and some ice in shaker glass. Shake vigorously. Strain into chilled martini glass, Garnish with a slice of green apple with one end that’s been lightly dipped in brown sugar, Place on rim of glass.

Blind baking a pie crust is pre-baking the crust, without filling, then adding the filling once the crust is baked according to the King Arthur Baking Company. The pie can then be placed back in the oven for the filling to bake; or the baked crust can be filled with cooked filling, the whole left to cool and set.

Ingredients

  • 2 tablespoons extra virgin olive oil, divided
  • 1 large onion, chopped
  • 4 garlic cloves, chopped
  • 1 tablespoon tomato paste
  • 1 (26.46-ounce) box of chopped or crushed Italian tomatoes
  • 1/2 teaspoon coarse black pepper
  • 2 1/2 cups vegetables broth
  • 1 1/2 ounces Parmesan cheese
  • 2 ounces bread (no seeds or nuts), torn into about 4 pieces
  • 5 fresh basil leaves

Sugar-Free Key Lime Pie Recipe by The Diabetic Pastry Chef

After being diagnosed with type 2 diabetes, Stacey Harris (The Diabetic Pastry Chef) taught herself how to make pound cake, pecan rolls, pies, muffins, cupcakes, and other baked goods with about half the carbs you’d get from a traditional bakery item.

“I started experimenting by using almond milk or whole milk mixed with water to cut down on carbs, then tried different flours, incorporating white whole wheat flour, soy flour, oat flour, black bean flour, and other alternatives into my brownies, cakes, and cookies,” she said in an How 2 Type 2 article.

She adds,”To cut back on sugar, I started using all-natural substitutes, like agave nectar, and trying erythritol. I also bake with a store-bought blend of sugars that tastes delicious.”

The Diabetic Pastry Chef’s Sugar-Free Key Lime Pie Recipe 

Ingredients

One 9″ pie crust, baked (traditional or graham cracker crust)
3 large eggs
1 c. granulated Whey Low®, Splenda® or Truvia® sugar substitute
1 c. half & half
2 Tbsp. cornstarch
3/4 c. key lime juice
1 Tbsp. finely grated lime zest
1/8 tsp. salt
whipped cream

Directions:

In medium saucepan over medium heat, whisk together eggs, sugar substitute, half & half, cornstarch, key lime juice, lime zest and salt until thickened.

Cool and add to baked pie crust. Garnish with whipped cream and refrigerate for at least 3 hours

Soup can be a tasty, inexpensive way to eat well and keep your blood sugars on track. Most soups keep well, and making extra can give you days of quick meals that will help keep your blood glucose levels under control.

Our friend, Jill Weisenberger shares her Creamy Zucchini Soup Recipe with the Divabetic community.

“My creamy zucchini soup recipe was inspired by the award-winning chef José Andrés. My favorite Washington, DC restaurant is his Zaytinya. I eat there every opportunity I can create for myself,” says Jill Weisenberger. “Last year, chef José Andrés published a hefty and beautiful cookbook called Vegetables Unleashed in which he offers a version of his wife’s zucchini soup. From his remake, I created my own remake, which is a bit more health-focused. And still incredibly delicious. It’s a great way to start a meal – very filling, so it’s easier to be satisfied with less.”

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large yellow onion, diced

  •  teaspoon coarse black pepper
  • 2.5 pounds zucchini, unpeeled, cut lengthwise and then sliced
  • 2 cups vegetable broth
  • ½ cup fresh basil leaves
  • 2 ½ ounces soft goat cheese, broken into several pieces
  • Additional herbs or flavored oil for garnish

Why you might want to try a nut-based pie crust recipe?

A regular pie crust is packed with carbs, often the refined type of carbs like white flour and sugar!

Graham cracker pie crusts contain around 19 to 20 grams of carbs per slice before adding any filling. Other wheat flour pie crusts can range anywhere starting from 10 grams per slice upwards. And these crusts often contain little, to no dietary fiber.

But nut pie crusts are low-carb, keto, paleo, sugar-free and gluten-free! Made with fresh nuts like pecans and/or walnuts, they taste amazing!

Vegan Key Lime Pie Recipe (with Pecan Pie Crust) from Kill Me Madam

The happy healthcare host, Mr. Divabetic offers an interesting twist to key lime pie with a gluten and dairy free, vegan recipe in Divabetic’s newest Mystery Podcast: Kill Me Madam available on demand.

His creamy dreamy vegan key lime pie is made with a crunchy pecan pie crust. When making this recipe it’s best to use a food processor or blender to get pecans very finely chopped. They need to be in tiny pieces so that they form a crust to hold together all of that delicious pie flavor. Enjoy!

Kill Me Madam Key Lime Pie Recipe

Pie Filling Ingredients:
1 cup raw cashews (soaked for 4-6 hours or overnight, then drained)
3/4 cup coconut milk
1/4 cup coconut oil (melted)
3-4 large limes juiced (3-4 limes yield ~1/2 cup juice)
1 tbsp lime zest
1/2 cup agave nectar

Pie Crust Ingredients:
1 cup chopped pecans
2 tbsp coconut oil, melted
1 tsp monk fruit sweetener

Instructions

For the Crust:

Preheat oven to 350 degrees. Crush pecans finely using a food processor until you achieve a fine meal.

Add butter and monk fruit sweetener to crushed pecans and pulse until all of the ingredients are mixed throughly

Grease a pie pan then add crust mixture.

Grease the back of a spoon and use it to carefully smooth the pecan mixture in the bottom of the pie pan and up the sides.

Bake for 10 minutes and allow to cool.

For the Filling:

In a blender (but you can also use a hand mixer) blend the raw cashews, coconut milk, coconut oil, lime juice, lime zest and agave nectar until the mixture is smooth. Taste and adjust flavor as needed, adding more lime zest/juice for more tart, or more agave for added sweetness.

Pour filling mixture into pecan crust and set aside.

Spread the homemade whipped cream on top of the key lime layer.

Freeze your key lime pie for 2 hours before serving or until it sets up.
