Sugar-Free Pink Champagne Cakelets Recipe by The Diabetic Pastry Chef

After being diagnosed with type 2 diabetes, Stacey Harris (‘The Diabetic Pastry Chef’) taught herself how to make pound cake, pecan rolls, pies, muffins, cupcakes, and other baked goods with about half the carbs you’d get from a traditional bakery item.

“I started experimenting by using almond milk or whole milk mixed with water to cut down on carbs, then tried different flours, incorporating white whole wheat flour, soy flour, oat flour, black bean flour, and other alternatives into my brownies, cakes, and cookies,” she said in an How 2 Type 2 article.

She adds,”To cut back on sugar, I started using all-natural substitutes, like agave nectar, and trying erythritol. I also bake with a store-bought blend of sugars that tastes delicious.”

Sugar-Free Pink Champagne Cakelets Recipe by The Diabetic Pastry Chef 

Ingredients 

3 cups cake flour

1 Tbsp baking powder

1/2 Tsp salt

3 Tbsp cake enhancer, optional

5 large egg whites, room temperature

1 cup pink Champagne, room temperature

2 Tsps pure vanilla extract

2 Tsps vegetable oil

2 cups erythritol sweetener or other preferred sugar-free sweetener equal to 2 cups

2 sticks unsalted butter, room temperature

1-4 drops red food coloring depending on how pink you prefer the cake

Directions 

Preheat oven to 350 degrees F.  

In a medium bowl, sift together the flour, baking powder, salt, and cake enhancer if using. set aside.

In another medium bowl, whisk together by hand the egg whites, Champagne, vanilla and oil until well blended.

In the bowl of an electric mixer, on medium speed beat together the softened butter and erythritol for 3 to 4 minutes until light and creamy. Add the flour mixture and egg mixture alternately, beginning and ending with the flour mixture. Add and stir in the red food coloring.

Divide the mixture into 12 greased and floured cakelet cavities (2- 6 cavity cakelet pans). Bake until the cakes are slightly brown around the edges and cakes just pull away from the pans, about 30 mins. Remove from oven and after 10 minutes invert onto wire racks to cool completely. Once cool, prick the tops of the cakelets with a fork and drizzle a bit of champagne over each cakelet to soak in. I would suggest 1/2 to 1 tsp Champagne per each cakelet. Dust with sugar-free confectioners sugar or decorate as desired.

Sugar-Free Fruit Tartlets Recipe

Cookie Crust Ingredients:

1/2 cup butter, softened

1/2 cup Whey Low D Granular, or equivalent dry sugar substitute

2 large eggs

1 cup unbleached all-purpose flour

3/4 cup white whole wheat flour

Directions: In the bowl of a mixer, beat the butter on medium speed until smooth. Add the sugar substitute and mix until incorporated. Add the eggs one at a time beating until combined after each. Add the flour all at once and mix on low just until incorporated.  Cover and refrigerate for a minimum of 2 hours. Roll out and use fluted 3″ cookie cutter to cut and place in 24 mini muffin cups. Bake in 350 degree preheated oven until golden brown approximately 10 minutes.

Custard Ingredients:

1/3 cup Whey Low D Granular, or equivalent dry sugar substitute

3 Tbsp cornstarch

1/8 tsp salt

2 cups milk

2 egg yolks, slightly beaten

1 Tbsp butter

1 tsp pure vanilla extract

Directions: In medium saucepan, combine the dry ingredients. Gradually stir in the milk, and cook over medium heat until the mixture boils and thickens while stirring constantly. Boil for 1 minute.  In small bowl, blend approximately 1/3 of the hot mixture into the egg yolks. Return the yolk mixture to the hot mixture and blend well. Cook the mixture until it bubbles, stirring constantly.  Remove from heat and add the butter and vanilla. Cool. Fill each muffin cup about half way with the cooled custard and add topping. Fruits can be brushed with a little heated currant jelly if you would like them to appear glossy. Refrigerate until serving time.

Topping:  Various fruits and berries such as: Blueberries, raspberries, strawberries, kiwi, sliced almonds, confectioners sugar or substitute for dusting and/or mint leaves for garnishing.

Q: Why is oatmeal a good food choice for people with diabetes?

Jill Weisenberger (JW): Oats have the viscous fiber called beta-glucan, which helps to sweep away cholesterol and lower blood sugar levels.

Q: Why or why not should someone with diabetes eat breakfast?


JW: In general, people who eat breakfast have greater insulin sensitivity, and it sometimes actually lowers high morning blood sugars in people with type 2 diabetes. That being said, if someone is in good control throughout the day and meeting health goals, and they don’t like eating breakfast, I certainly wouldn’t push it on them.

Many studies have shown that low-carb diets can help you lose weight and help manage your diabetes and/or prediabetes.

Personally, I’ve been trying to eat less carbohydrates while Sheltering In in New York City to manage my weight. How are you coping with stress and anxiety related to the new ‘normal’ from the pandemic? 

Are you binge watching TV or are you reading books like me? I just finished reading Linda Holmes’ debut novel, “Evvie Drake Starts Over”

Unfortunately I’ve been known to polish off a salty snack or two while I’m reading without noticing! Since many Divabetics like to read after dinner and/or before bedtime, I contacted our good friend, a Diabetes Late Nite podcast guest, Registered Dietitian Nutritionist, Certified Diabetes Educator, Susan Weiner MS, RDN, CDCES, FADCES for her advice about healthy snacking. 

Q: I’ve been known to polish off a bag of pretzels while I’m reading without noticing! And a lot of us like to read after dinner and/or before bedtime. 

Susan Weiner (SW): Try not to eat directly out of a bag, container or box! You can avoid portion distortion if you pre-portion your snack and put it in a small bowl or dish.

Familiarize yourself with the difference between a serving and a portion. The nutritional information listed on a food item is based on a single serving (a specific amount will be listed for an individual food item). Portion size is the amount you eat or what you put on your plate. Please note that the portion that you are eating may be much larger (or smaller) than the serving size listed on the nutrition facts label. If you eat twice the amount of the listed serving size, you will be consuming twice the calories, carbohydrate, fat, sodium etc as listed. 

Cut up colorful, low carb veggies in advance. Try some radishes, cucumbers, bell peppers and cherry tomatoes. That way you have them at the ready, and can much on them as you read. In the mood for a dip? Mash up a ripe avocado and mix in some lime juice, garlic and onion powder. 

Q: What you recommend as a late night snack? 

SW: If you are not a late night snacker, there is really no reason to start now! But if you are looking for something crunchy and yummy, try a couple of flaxseed crackers with a spoon full of almond butter. It’s a delicious snack anytime!

Q: In Divabetic’s Diabetes Mystery podcast,  ‘Phantom of the Okra’ you used a combination of carbohydrate counts to unlock a safe, how can counting carbohydrates help people with diabetes? Can you provide a few  tips for beginners?

SW: Carbohydrate counting, or carb counting can help a person with diabetes manage their blood sugars. Carbohydrate containing foods raise your blood sugars, and therefore it’s important to be aware of which foods contain carbohydrates and how much carbohydrate is in a serving of a particular food item. That way you can count the amount of carbohydrate in a serving of a food. 

Common foods which contain carbohydrates include bread, pasta, cereals, rice, fruit, beans, sweets, cakes, cookies, candy, regular soda and fruit drinks. 

In addition to reading food labels, there are a number of websites and apps which can get you started with carb counting. Please know that in addition to food, many other things can affect your blood sugar, including your physical activity level, stress, medications and lack of sleep and so much more. So, please take good care of yourself and reach out to your health care professional.

I went to the kitchen to get me a snack,

And then I thought, no, better put the chips back.

I’m home in the morning, home all the day,

And I can’t keep on eating and eating this way.

I’ve got to stay healthy, in spite of the news,

Because food and drink are so easy to abuse.

I’m bored, and I’m worried, as all of us are,

I’m eating my Skippy right out of the jar.

But I didn’t give up, or succumb to defeat,

And I started cooking good foods I can eat.

Fresh fruits and vegetables, legumes and beans,

Broccoli, carrots, and cabbage, and greens.

I made a quiche, but it wasn’t high-fat,

I learned how to substitute this for that.

I made a cheesecake with Splenda instead,

And there was no sugar in my banana bread.

I made a stew, and some soup, and some fish,

Without adding butter or oils to my dish.

I’m doing my best, I‘m not perfect, but still…

Instead of much salt, I use spices, like dill.

And I’m doing Zumba online, for an hour

So I don’t lose all of strength and my power.

So I would suggest, while this quarantine goes,

Get out of your jammies and put on some clothes.

Do something healthy, creative, and such

And the time spent alone won’t bother you as much.

For me that was cooking, for you maybe not,

But let’s take advantage of all that we’ve got.

One day this all will be part of the past,

And we can enjoy all our freedoms, at last.

Speaking of noodles … you’ll find glass noodles on the menu at many popular Asian restaurants. Glass noodles are known by different names including cellophane noodles, mung bean threads, and mung bean noodles. While glass noodles seem lighter than other types of pasta, they have about the same amount of carbs as regular spaghetti and more than whole-wheat spaghetti. It takes about 54 grams of dehydrated noodles to yield a 1-cup serving of prepared glass noodles. This portion contains 47 grams of total carbohydrates, according to the U.S. Department of Agriculture. Because the recommended dietary allowance for carbohydrates is 130 grams daily, you’ll get 36 percent of your daily carbs from one serving of glass noodles.

Glass noodles are gluten free, fat free and a 1/2 cup serving dishes up 8% of your daily requirement for iron.

If you have diabetes, you can still enjoy glass noodles. Just be sure to keep an eye on your portions.

When I think of intimacy

I think of someone close to me

And sharing moments, light and free.

I think of talking out my dreams

Of waterfalls and quiet streams

Of all our plans and all our schemes.

But sometimes all I need is peace

All the noises stop and cease

A quiet touch and soul release

In spite of all the turns I took.
