Enjoy another excerpt from Divabetic’s 10th Annual Mystery podcast, Murder Plain As Vanilla, streaming on Spotify, iTunes, and BlogTalkRadio.

This scene spotlights the misleading information provided on food labels. Specifically, we discuss the difference between ‘natural’ and ‘organic.’ Recent surveys indicate that consumers are willing to pay more for “natural” and “organic” labeled products with vaguely defined words.

The FDA has considered the term ‘natural’ to mean that nothing artificial or synthetic (including all color additives regardless of source) has been included in, or has been added to, a food that would not normally be expected to be in that food. However, the FDA does not consider whether the term ‘natural’ should describe any nutritional or other health benefit.

Sadly, natural products aren’t the only labels to go virtually unregulated. Terms like “lightly sweetened,” “made with real…,” and “multigrain” are also more a branding strategy than a substantive label, forcing shoppers to stay vigilant if they’re buying healthy foods.

Our mystery podcast isn’t only for mystery lovers. It’s a fun way to learn about diabetes and self-care. In between colorful characters, crazy adventures, and mysterious surroundings, we pack health and wellness tips that can help you take charge of your diabetes. We also encourage you to think like a detective the next time you experience unexpected blood sugar fluctuations. Search for clues, collect data, talk to witnesses, and bring your ideas to the authorities (healthcare collaborators) for solutions. A team approach to managing your diabetes isn’t a bad idea either. Here’s a short synopsis: When Mr. Divabetic’s arch-nemesis baking sensation Renata Whisk calls, offering a chance to participate in the Visions of Vanilla baking competition, he can’t refuse. It’s an invitation to compete against culinary giants Best-Selling Cookbook Author Lily Frost, Green Thumb Gourment, Hazel Honeywell, and the Cannoli Countess and, most importantly, a chance to pay back his debt owed to his mother.

But before Max’s hands touch flour, he discovers the dead body of the Vanilla King of Madagascar. As luck has it, Max is the last person to see the Vanilla King alive. To prove his innocence, he enlists his team, USA Today’s best-selling author Tonya Kappes, health educator MaryAnn Nicolay MEd, NDTR, and his mother, Mama Rose Marie. But when another baker’s dead body is found near Max’s station, even his mother tastes a recipe for disaster.

The Diabetic Pastry Chef’s Sugar-Free Gingerbread Cake Recipe

Last night, our friend, Stacey Harris, the Diabetic Pastry Chef, demonstrated how to make her favorite recipe for Sugar-Free Gingerbread Cakes at Divabetic’s Holiday Sugarfree Baking Party on Zoom.

The Diabetic Pastry Chef’s Sugar-Free Gingerbread Cake Recipe

Ingredients

2 eggs

3/4 cup sugar substitute of your choice

3/4 cup molasses

3/4 cup butter, melted

2 1/2 cups all-purpose flour

2 tsps baking powder

2 tsps ground ginger

1 1/2 tsps cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground cloves

1/2 tsp salt

1/2 tsp baking powder

1 cup boiling water

Directions 

Grease an 8×8 inch pan, or grease a pan with 12 square cavities; set aside. Preheat oven to 350 degrees.  

In a bowl of an electric mixer, beat eggs until well combined. Add sugar substitute, molasses, and melted butter. Beat well.

In a separate bowl, sift together all dry ingredients.

Alternate adding the dry ingredients and boiling water into the batter, beating until each addition is combined and smooth and no large lumps remain. Pour into pan and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool.  

You may want to sprinkle sugar-free confectioner’s erythritol on top of the cooled cake for decoration. Serve each slice of gingerbread with a dollop of whipped cream.

Stacey’s Notes: I used White Lily All-Purpose flour to make the cake light in texture. Feel free to mix your flours to decrease the carbs, but your cake will not be as light in texture. I also used Splenda Magic Baker as my sugar substitute (white or brown sugar can be used) in this recipe.

The Bride Of Frankenstein Halloween Display

I received a package filled with lightning bolt-shaped styrofoam a few weeks ago. I didn’t throw them away. The shape was fantastic. Even though all of my Halloween Duck, Duck, Ghoul! displays are done. I wondered what I could make with the styrofoam. The styrofoam’s shape reminded me of the Bride Of Frankenstein’s eyebrows. So, I decided to make one more display. I studied pictures from the original movie.

According to Google, The Bride Of Frankenstein was created as a collaborative project between Dr. Frankenstein and his old university affiliate, Dr. Septimus Pretorius. The scientists create the Bride to give it to the monster as a mate, but the monster only wishes to have a friend.

The Bride’s gown in the 1935 movie is sublime. But its simple elegance and draping didn’t work on a duck. And trust me, I tried everything, including a Large Federal Express packing bag – I thought the corners would be perfect for the shoulders. So, I abandoned the idea of knocking off the original gown and let my imagination take over.  When the legendary Vogue and Harpers Bazaar journalist Diana Vreeland wrote “the eye must travel” in her book in 1980, I doubt she was referring to the front door of Dollar General. But that’s precisely where my thrifty spirit for crafting took me.

After a fruitless search, I wandered into my local hardware store. Inspiration hit when I spotted mops and a package of large coffee filters. I ventured to two more stores in search of paper dollies to complete her dress. I topped off my display when the cheapest wig I could find on Amazon.
Throughout October, health guru High Voltage travels to select schools around New York City to create awareness and excitement to empower private and public schools to take a stand against the sugar industry. During these Shocktober rallies,  High Voltage presents a powerful demonstration showing teens how to “Sugar Shock” their favorite drinks. Sugar Shock demonstrations allow teens to discover how much-added sugar they consume daily; when they do, most are SHOCKED!

Major sources of added sugars are sugary beverages (regular soft drinks, sweetened tea, coffee, energy drinks, and fruit drinks), candy, desserts, and sweet snacks (cakes, cookies, pies). Smaller amounts come from dairy desserts, milk products (ice cream, sweetened yogurt, and sweetened milk), breakfast cereals and bars, and other items.
The American Heart Association recommends limiting added sugars to 100 calories per day (6 teaspoons of sugar) for most women and no more than 150 calories per day (9 teaspoons) for most men.

If asked to name sugary foods, you may think of sweets, chocolate, sodas, table sugar, and perhaps fruit. But sugar also appears in savory foods such as ready meals, soups, salads, sauces, and ‘healthy’ foods such as breakfast cereals and yogurt. Furthermore, starches such as bread, pasta, rice, and potatoes also convert to sugar in our bloodstream, having the same impact on our bodies. These ‘hidden sugars’ can add a surprising amount to our daily intake.

Sugar-Free Butter- Rum Cakelets Recipe By The Diabetic Pastry Chef

Stacey Harris, The Diabetic Pastry Chef, participated in Divabetic’s first-ever World Menopause Day program on Zoom. During the program, Stacey demonstrated how to make her Sugar-Free Butter-Rum Cakelets and answered participants’ questions.

Stacey defined ‘sugar-free baking’ as baking without any sugar. But she added that her recipes contain carbohydrates.  After you eat carbohydrates (grains, flour, etc.) your body turns those carbohydrates into glucose (sugar). Glucose gives your cells energy. The glucose moves into the bloodstream and your blood sugar level rises.

Everyone has a different carbohydrate tolerance. One person may be able to eat a carb-heavy diet with no problem, and another may get blood sugar spikes and gain weight from eating very few carbohydrates. Both people can be healthy, as long as they are eating within their personal tolerance levels. Talk to your healthcare collaborator about what plan is best for you. 

Mini bundt cakes with icing sugar on rack

Sugar-Free Butter- Rum Cakelets

Stacey says, “This cake comes together a little differently than most cakes, but is very moist with rum and delicious!”

Ingredients 

2 1/4 cups all-purpose flour

1/4 cup cornstarch

3 tsp baking powder

1/2 tsp salt

1 1/4 cups sugar substitute of your choice

1/2 cup butter, softened

1/4 cup vegetable oil

1/2 cup evaporated milk

4 large eggs

1 Tbsp pure vanilla extract

1/3 cup rum of your choice.

Directions

Add the flour, cornstarch, baking powder, salt, sugar substitute, butter, and oil in the bowl of an electric mixer. Mix on low speed for several minutes until the mixture is crumbly and sandy-looking.

Mix in the milk. Next, mix in the eggs one by one, mixing well after each, remembering to scrape the sides of the bowl well after each egg is added.

Add the rum and vanilla extract and beat until smooth.

Pour the batter and spread it into the cavities of two cakelet pans with six cavities each.

Bake in a preheated 325-degree oven for about 35 or 40 minutes, or until the cakes look golden brown and begin to loosen from the sides of the pan. Let cool in the pan for about 15 minutes before removing.

Unmold the cakelets and, with a skewer, fork, or toothpick, prick holes into the cakelets straight down to the bottoms of each.

Butter-Rum Sauce

Ingredients

1/4 cup butter

1/2 cup sugar substitute of your choice

1/4 cup water

1/2 to 3/4 cup rum of your choice

1/2 tsp vanilla extract

Directions

Add butter, sugar substitute, and water to a small saucepan. Bring to a slow boil and simmer for 7 or 8 minutes.

Remove from heat and cool completely. Add the rum and vanilla extract.

Slowly spoon the sauce over each cakelet. Cover cakelets with plastic wrap and allow to sit for several hours or overnight. The cakelets will not look glazed. They can be frozen or stored at room temperature for several days.  Yield: 12 cakelets.

How Much Sugar Is In Starbucks Apple Crisp Oatmilk Frappuccino?

Starbucks Apple Crisp Oatmilk Frappuccino combines apple, cinnamon, and brown sugar in your brew to taste apple pie filling.

You might assume you’re ordering something healthy because it contains oat milk, but think again: Apple Crisp Oatmilk Frappuccinos pack a big sugar punch!!

According to the Starbucks website,  a Grande size Apple Crisp Oatmilk Frappuccino contains 60 grams (or 15 teaspoons) of sugar. Additional nutrition information: Total Carbohydrates: 70 grams, Calories:420

Oat milk is a non-dairy milk alternative like soy and almond milk. An 8-ounce glass of oat milk contains 4 grams of protein compared to dairy milk, which has twice as much: 8 grams of protein in every 8-ounce glass.

But this grain-based milk is gluten-free, and many brands are free from the major allergens.

Oat milk and dairy milk also differ in carbohydrate content. Original varieties of oat milk can have up to 24 grams of carbohydrates per serving, while dairy milk has 12 grams.

Expert Tip: The American Diabetes Association recommends you look at the Total Carbohydrate instead of the Net Carbson the Nutrition Facts label. The total carbohydrate on the label includes all three types of carbohydrates: sugar, starch, and fiber.

The Food and Drug Administration (FDA) recommends eating no more than 12.5 teaspoons of sugar daily, or about 50 grams (the same amount found in Starbucks’ super popular Grande Pumpkin Spice Latte and a 16 oz. bottle of Coke!).  You are having a day’s worth of sugar in one drink!

Limiting added sugar consumption to 10 percent of a person’s daily total calories is the idea. Americans get about 16 percent of their calories from added sugars on average.

How Much Added Sugar Are You Drinking?

America’s #1 Energy Conductor, Kathie Dolgin aka High Voltage, shows how much added sugar is in popular drinks in this video – it’s shocking!! 4.2 grams equals a teaspoon, but the nutrition facts round this number down to four grams. Using this equation, you can easily look at any drink to see how much sugar it contains.

Over time, consistently taking in more sugar will lead to insulin resistance. Insulin resistance is when cells in your muscles, fat, and liver don’t respond well to insulin and can’t easily take up glucose from your blood, leading to prediabetes.

Prediabetes means your blood glucose levels are higher than normal but not high enough to be diagnosed as diabetes.

Berry Parfait Recipe by Cookbook Author Holly Clegg

Over the past 20 years of Divabetic outreach, I have had the good fortune to meet so many sensational women. One of my favorite collaborators was  Cookbook Author Holly Clegg. Holly was a guest on several Divabetic podcasts and regularly contributed recipes to our Divabetic Holiday Entertaining guides. She was kind, gracious, and enthusiastic about our Divabetic outreach programming.

Sadly, Holly passed away from a long battle with cancer in 2019. She had been diagnosed with stomach cancer in August 2018. She was 64.

The best-selling cookbook author entered hospice care in June after her team of doctors at MD Anderson Cancer Center in Houston advised against continued treatment.

Beloved Advocate food columnist Holly Clegg to transition to hospice care amid cancer battle

During her cancer fight, Holly used her high profile to educate others on gastric cancers and, with her family, created the Holly Clegg Gastric Cancer Research Fund at MD Anderson to raise awareness of gastric cancers.

Her highly successful “trim & TERRIFIC” and “Eating Well” cookbook series have sold over 1.5 million copies.

She worked with experts at the Pennington Biomedical Research Center, the American Heart Association, and the American Diabetes Association, writing as part of the series books on “Diabetic Cooking” and “Eating Well to Fight Arthritis.”

Approaching menopause, Holly enlisted friends to help test facial products made with everyday food. The winners are included in her “trim & TERRIFIC: Too Hot in the Kitchen” cookbook. It also had some “spicy advice” showcasing Holly’s infectious humor.

I smiled when I came across one of Holly’s recipes the other day. Below is one of Holly’s popular recipes she shared with us over the years.

Berry Parfait Recipe by Cookbook Author Holly Clegg

Light and delightful, strawberries or your favorite berries layered with a luscious cream cheese layer and ladyfingers.

Ingredients

2/3 cup seedless sugar-free raspberry preserves

1/4 cup orange juice

6 ounces reduced-fat cream cheese

1/4 cup sugar

1 teaspoon vanilla extract

1 (8-ounce) container of fat-free whipped topping, thawed, divided

2 (3-ounce) packages of ladyfingers, split in half (24)

1 1/2 cups strawberries, stemmed and sliced

Directions

1. In a small bowl, mix preserves and orange juice.

2. In a mixing bowl, cream together cream cheese, sugar, and vanilla until light. Mix in whipped topping, reserving 1/2 cup for topping.

3. Line the bottom of an oblong small dish with split ladyfingers. Layer with preserves mixture, cream cheese layer, and top with strawberries. Repeat layers with remaining ladyfingers, preserves, and cream cheese layer.

4. Carefully top with a thin layer of remaining whipped topping. Top with remaining strawberries. Cover and refrigerate for several hours or overnight.

Makes 16 (1/2-cup) servings

Holly’s Tip: Use raspberries so you don’t have to cut the strawberries. This recipe works well in individual servings. Holly used to cut this parfait into fourths, so you have extra the next day and make four.

Sugar-Free Baked Rice Pudding by the Diabetic Pastry Chef

Enjoy this delicious sugar-free recipe from the Diabetic Pastry Chef.

Shortly after attending culinary school to become a pastry chef, Stacey Harris, known professionally as the Diabetic Pastry Chef, was diagnosed with type 2 diabetes. She was devastated since she loved to bake and loved to eat sweets.

After many experiments with several sugar-free substitutes, Stacey developed a formula that consistently turned out delicious confections that even non-diabetics love. One of her tips is to use a combination of different sugar-free substitutes in your recipe rather than just one.

Sugar-Free Baked Rice Pudding by the Diabetic Pastry Chef

Ingredients

3/4 cup cooked Brown Rice

2 cups Whole Milk

3 Eggs, beaten

1 cup dry Sugar Substitute of choice

3 Tbsp. Butter, melted

1 tsp pure Vanilla Extract

1/2 tsp Cinnamon

1/3 cup Raisins

Nutmeg for garnishing

Directions

Preheat oven to 375 degrees. Combine all ingredients in a greased 1 1/2 quart casserole dish. Garnish the top with a light sprinkle of grated nutmeg.  Bake until the pudding is firm in the center, about 40 minutes. Serve warm or cold with cream or whipped cream.

Note: The pudding mixture can be baked in small greased ramekins or mini casserole dishes instead of a large one.

Clarence Waldron talks about his stroke, recovery, working as Senior Editor and Writer of Jet Magazine, and his memories of Luther Vandross and Aretha Franklin.

Twenty years ago, Clarence interviewed Luther’s mother, Mrs. Mary Ida Vandross, for Jet Magazine after Luther suffered a stroke due to mismanaged type 2 diabetes. Clarence’s story is an excellent reminder of why it’s essential to ACT F.A.S.T. if you or a loved one is experiencing a stroke. The acronym FAST (Facial drooping, Arm weakness, Speech difficulties, and Time) has been used by the American Stroke FoundationAmerican Heart Association, and others to educate the public on detecting stroke symptoms.

Earlier treatment results in a greater chance of recovery, a reduced likelihood of permanent disability, and a lesser need for extensive rehabilitation. You’ll quickly hear Clarence’s upbeat attitude and ferocious appetite for music and divas have served him well during his recovery.

Rosie O’Donnell Talks About PreDiabetes, Type 2 Diabetes & Weight Loss Medications

“Food noise has been running my life, and I didn’t even know it until I took Mounjaro,” said Rosie O’Donnell on the Plus SideZ podcast.

Mounjaro is the brand name for Tirzepatide an injectable prescription drug used to treat Type 2 diabetes. The drug is prescribed along with diet and exercise to help improve blood sugar levels. Rosie O’Donnell and my boss, Luther Vandross, were friends on and off-camera. They suffered the same issues related to body image, yo-yo dieting, living with type 2 diabetes, and food and sugar addiction.

I appreciate her honesty and straightforwardness in sharing her experience and mindset in this interview. She managed to find the right words to express her struggle with food addiction in a way that’s clear, concise, and easy to understand.

“My life was out of control without it (Mounjaro),” says Rosie on the podcast. “I do believe I was addicted to food, I was addicted to sugar, and I could not shake it.”

Rose O’Donnell opens up on the podcast about ignoring her Prediabetes diagnosis, living with Type 2 Diabetes, getting a gastric sleeve surgery (2013), having a heart attack (2012), ongoing weight issues, and how weight loss medications changed her life.

“[My doctor] says to me, ‘I don’t care if you lose more (weight). It’s about your numbers for your A1C’ and your something else. But they’re going down, and that’s a good sign. So I don’t want to lose it too fast anyway because it freaks me out,” she told Newsweek.

Additionally, Rosie hired a chef to make her calorie and protein-appropriate meals.

Since taking the medication, Rosie has lost over thirty pounds and hasn’t experienced any side effects. She says she hasn’t gained weight since using the medication – that’s a big deal for her.  She’s happy about losing weight slowly because, in the past, she’s been plagued by unwanted attention related to weight loss. It’s sabotaged her efforts to maintain and sustain weight loss.

Rosie feels the biggest benefit of the drug has been eliminating “food noise.” Food noise refers to the constant thoughts or recurring ruminations about food which could contribute to overeating and thus living with overweight and obesityI’d never heard this term before listening to Rosie’s interview, but it perfectly captures a person’s mindset about food addiction.

I wish these types of drugs and sensitive and respectful talk about food addiction were around when Luther was alive. I witnessed him struggle unsuccessfully to conquer his food addiction and then suffer from complications related to mismanaged type 2 diabetes because of it.

To her amazement, Rosie O’Donnell has found that she is no longer interested in snacks – not even cookies using the drug. “I’m free from food,” Rosie declared on the podcast.

Clinical trials studying Mounjaro (tirzepatide) for weight loss found the following results: Participants lost an average of 12-22% of their body weight over about 68 weeks when using the highest doses of Mounjaro (10-15 mg) along with diet and exercise.

Eli Lilly’s research found that around half of the participants in their study, who were both obese and had diabetes lost around 15 percent of their body weight while taking tirzepatide, the active ingredient in Mounjaro.
