Sugar-Free Red Velvet Cake Squares Recipe by The Diabetic Pastry Chef

Today, Red Velvet cake, cupcakes, and cookies seem everywhere. But do you ever wonder where the recipe comes from?
My research found that a popular cookbook, The Joy of Cooking, debuted a red velvet cake in 1943. Irma S Rombauer, the cookbook author, shared the recipe but admitted in the text that she doesn’t care for the cake!
However, many researchers argue that red velvet cake predates the cookbook. They believe red velvet cakes were first served during the Victorian Era. Cocoa was used to help break down the coarse flour. As a result, the flour was softer, and the cake was described as velvety. Some argue that the chemical reaction between the cocoa and acid gives the cake its red color. The velvety texture and scarlet coloring led to the creation of Red Velvet Cakes. But the traditional recipe was changed due to WWII food rations. Bakers scrambled for alternative ingredients to use in their recipes. As a result, some bakers chose to use beet juice in their cakes. Beets work as a filler that keeps the cake moist.
I’d also like to add my two cents about the origins of Red Velvet Cake. My research points to Red Velvet Cake having African American origins.  The enslaved people believed that the red color represented Christ’s blood and that the cocoa powder would bring them good luck.
Below, our friend, Stacey Harris, known as The Diabetic Pastry Chef, shares her sugar-free version of a Red Velvet Cake. One of Stacey’s surefire secrets to successfully substituting artificial sweeteners in your recipes is using more than one kind. Using two types of artificial sugar substitutes tends to eliminate any bitter aftertaste.

Sugar-Free Red Velvet Cake Squares Recipe by The Diabetic Pastry Chef

Ingredients

1 cup all-purpose flour

1 cup white whole-wheat flour

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

2 Tbsp. cocoa powder

2 cups sugar-substitute of your choice

3/4 cup vegetable oil

2 eggs

1 cup buttermilk

2 tsp pure vanilla extract

2 tsps. red food coloring

1 tsp vinegar

1/2 cup hot coffee

Ingredients

1 cup all-purpose flour

Directions 

Combine all dry ingredients in a large bowl; set aside.

In the bowl with an electric mixer, combine sugar-substitute and vegetable oil. Add in the rest of the wet ingredients and mix well.

Add dry ingredients in thirds to wet ingredients, mixing just until combined.

Preheat oven to 350 degrees. Add batter to greased and floured 9×13″ pan. Bake for about 30 to 40 minutes, or until the cake pulls away from the sides of the pan and the center springs back when touched.

After cooling, sprinkle top with sugar-free confectioners sugar such as Swerve Confectioners. Serve cake cut into squares topped with whipped cream or whipped topping.

Although red velvet cake is generally linked with Valentine’s Day, it is also served at Juneteenth parties. For Juneteenth celebrations, the color red represents the struggle and bloodshed of the enslaved as well as the ultimate resilience of the people.

Clarence Waldron talks about his stroke, recovery, working as Senior Editor and Writer of Jet Magazine, and his memories of Luther Vandross and Aretha Franklin.

Twenty years ago, Clarence interviewed Luther’s mother, Mrs. Mary Ida Vandross, for Jet Magazine after Luther suffered a stroke due to mismanaged type 2 diabetes. Clarence’s story is an excellent reminder of why it’s essential to ACT F.A.S.T. if you or a loved one is experiencing a stroke. The acronym FAST (Facial drooping, Arm weakness, Speech difficulties, and Time) has been used by the National Stroke AssociationAmerican Heart Association, and others to educate the public on detecting stroke symptoms.

Earlier treatment results in a greater chance of recovery, a reduced likelihood of permanent disability, and a lesser need for extensive rehabilitation. You’ll quickly hear Clarence’s upbeat attitude and ferocious appetite for music and divas have served him well during his recovery.

Tina Turner, Mismanaged High Blood Pressure & Chronic Kidney Failure

Tina Turner is ‘simply the best’ for raising awareness for the link between untreated high blood pressure and kidney failure during her lifetime.

“I can’t remember ever getting an explanation about what high blood pressure means or how it affects the body,” Tina Turner said in an article for Show Your Kidneys Love, an international campaign for kidney health.

She was on dialysis after having a kidney transplant years ago due to untreated hypertension. Untreated hypertension can cause blood vessels to narrow, decreasing blood flow to the kidneys. Without proper blood flow, the kidneys cannot remove excess fluid and waste from the body — and as that fluid builds up, blood pressure will only increase further. Chronic kidney disease may cause arms, legs, and face swelling. It’s a dangerous cycle that can lead to kidney failure, but intervening early is possible.

“I considered high blood pressure my normal,” Tina Turner is quoted on Show Your Kidneys Love’s website.  “Hence, I didn’t really try to control it. In 1985 a doctor gave me a prescription for pills of which I was supposed to take one a day, and that was it. I didn’t give it any more thought. After suffering a stroke in 2009 because of my poorly controlled hypertension I struggled to get back up on my feet. This is when I first learned that my kidneys didn’t work that well anymore. They had already lost thirty-five percent of their function. I tried to learn more about these organs’ function and meaning. Most people probably don’t even know where their kidneys are located and what they are for until their health is at stake.”

Mismanaged high blood pressure is the second leading cause of kidney failure in the US.

Memorial Day Weekend is an excellent time to inform people of the link between alcohol and high blood pressure. Drinks with friends can be the best part of a three-day weekend, but when, what, and how much you drink matters.

Research shows drinking too much alcohol can raise blood pressure to unhealthy levels. Having more than three drinks in one sitting temporarily raises blood pressure. Repeated binge drinking can lead to long-term increases in blood pressure.

What is Moderate Drinking? 

Moderate drinking means having no more than one drink daily for women and no more than two drinks for men.

One can argue that Tina Turner frequently admitted she didn’t smoke or drink alcohol. But she admitted that after being diagnosed with high blood pressure in 1978, she thought of it as her “normal” and didn’t attempt to control it.

“I put myself at great danger by refusing to accept the reality that I required daily medication for the rest of my life,” she wrote on Instagram on March 9.

“Show your kidneys love. They deserve it.”

Prince Be, the psychedelic pop-rap group P.M. Dawn’s frontman, suffered various health problems from mismanaged type 2 diabetes. He had several strokes, including one in 2005 that left him partly paralyzed, and gangrene, which led to the partial amputation of one leg. He died of renal failure resulting from complications of diabetes at age 46.

Renal failure  (often called kidney failure) is when the kidneys stop working and cannot remove waste and extra water from the blood or keep body chemicals in balance. Acute or severe renal failure happens suddenly (for example, after an injury) and may be treated and cured. Chronic renal failure develops over many years, may be caused by conditions like high blood pressure or diabetes, and cannot be cured. Chronic renal failure may lead to dialysis (cleaning the blood by passing it through a membrane or filter) or a kidney transplant.

Rachel shares how she overcame the years of frustration and confusion associated with a misdiagnosis.

There have been many bumps in the road on Rachel’s journey with LADA diabetes (latent autoimmune diabetes in adults) related to her initial misdiagnosis.  She was initially misdiagnosis with type 2 diabetes. Although many of her symptoms were similar to type 2 diabetes,  she has another condition that may be more closely related to type 1 diabetes called latent autoimmune diabetes in adults (LADA).

It’s not uncommon for someone with LADA to be initially misdiagnosed. Unfortunately, the years spent treating the wrong condition without success can take a toll on your mind, body, and spirit. She shares how yoga and meditation helped her to overcome years of frustration and confusion.

Rachel shares a guided meditation, “Compassion Meditation,” focusing on self-love and compassion to help you live well with diabetes. Rachel’s meditation references Tara, a female deity in both Hinduism and Buddhism. Tara personifies compassion and offers salvation from suffering. She is thought to have been born of empathy for the suffering world and is regularly invoked for protection, guidance, and deliverance from difficult situations.

In Hinduism, she is the second of the ten Mahavidyas, avatars of the great Mother Goddess Mahadevi.

In Buddhism, Tara is a savior deity who liberates souls from suffering. According to origin tales, she emerged from the tear of the bodhisattva Avalokitesvara who cried when looking upon the suffering world. She is therefore associated primarily with compassion but can take on many forms to help and protect her devotees.

In her book, Yoga for Diabetes: How to Manage your Health with Yoga and Ayurveda, Rachel Zinman shares her journey and the hard-won wisdom gained from her own experience of yoga and diabetes.

“A tried-and-true strategy for healthy, appropriately portioned meals is batch cooking,” says Janice MacLeod, MA, RDN, CDCES, FADCES, the head of Clinical Advocacy in Global Professional Affairs & Clinical Education for Medtronic’s Diabetes Group. “This creates meals to have on hand when you don’t have time to cook. When it comes to a ratio for portions of each food group, think of the plate as a pie chart to achieve the “ideal plate ratio;” half of it should be vegetables, cooked or raw, one-quarter should be protein (about three to four ounces of protein). The other quarter can be healthy grains or more vegetables.”

“I Sought Out As Much Information And Support As I Could”: Della Reese

When I found out I had Type 2 diabetes, I was upset because I knew nothing about the condition and had nothing to fight it with,” said “Touched By An Angel” actress and music legend Della Reese. “So I sought out as much information and support as I could,” the entertainer explained. “I talked to my doctor about an aggressive diabetes management plan that included daily exercise and smaller portions.

Before landing the role as Tess on “Touched by an Angel,” Reese was an accomplished singer who rose to national fame in 1957 with her song, “And That Reminds Me.” She had several other hits, including “Not One Minute More,” “And Now,” “Don’t You Know?” and “The Most Beautiful Words.”

When she made the move to television, Reese saw success in parts on series including “The Love Boat,” “MacGyver” and “The Young and the Restless.” She also had her own television variety hour called “Della” and was the first black woman to co-host “The Tonight Show Starring Johnny Carson.” She went on to play Tess in “Touched by an Angel’s” 1994 debut and continued through the end of the series in 2003.

“I’m proof that you can take control of your life. You can be stronger than diabetes,” she added. “I lost 20 pounds and lowered my blood sugar from between 275 and 300 to between 67 and 110.”

Like a walking, talking advertisement for ‘happy hour,’ Dean Martin is inspiring a discussion about the effects of alcohol on blood sugar levels and blood pressure on Divabetic’s February podcast scheduled for Tuesday, February 8, 2022, 6 PM, EST. 

Although his family has denied his alcohol consumption, his on-stage demeanor was just the opposite. He was a one-man cocktail party, and all of the United States was invited to join in the fun. And during his heyday in the 1950s and ’60s, it sometimes seemed as though everyone did. But, of course, those words might not be any more accurate than today during these unprecedented times. 

A new survey suggests that since the COVID outbreak in the U.S., nearly 1 in 5 Americans have been consuming an unhealthy amount of alcohol.

“Heavy drinking” was defined as having had two heavy drinking days in a single week at least twice in the previous 30 days. A “heavy drinking day” was defined as four or more drinks containing alcohol for women and five or more drinks containing alcohol for men.

Alcohol consumption rose among adults over age 30 by 14% during the pandemic, with a 41% increase in women heavily drinking, according to a September 2020 RAND Corporation study. The strain continues to take a toll on those already coping with addictions, spiking relapse, and overdose rates.

While moderate amounts of alcohol may cause blood sugar levels to rise, excess alcohol can actually decrease your blood sugar levels reports WebMD.

Denial’s Not My Style: Divabetic Outreach Then & Now

This morning, I found this old Divabetic card in a stack of papers. “Denial’s Not My Style’ was the second phrase I came up with after ‘Sugar’s the Bitch. Not Me’ back in 2003.

We used it as one of the station names in the Makeover Maze at our national outreach program, Divabetic – Makeover Your Diabetes (2005 – 2008), and on limited edition Divabetic branded t-shirts.

The Makeover Maze consisted of six different diabetes care and education stations. One diabetes self-care topic per station. Complimentary mini massages, makeup application, and image consultation areas surrounded the Makeover Maze.

Divabetic’s ‘Denial’s Not My Style’ station offers one-on-one education on the ABC’s of diabetes. The ABCs of diabetes stand for: A —the A1C test, which measures average blood sugar over 2 to 3 months. B —blood pressure, the force of blood flow inside blood vessels. C —cholesterol, is a group of blood fats that affect the risk of heart attack or stroke.

The ‘Sweet Inspirations station focuses on goal setting help. Setting goals gives you long-term vision and short-term motivation 

The ‘Glam More, Fear Less’ station focuses on our diabetes affects our personal appearance. From our teeth to our skin, to our feet and our hair, what you see in the mirror can reflect your self-care.  Did you know people with diabetes are more likely to have a condition called alopecia areata?  With alopecia, the immune system attacks the hair follicles, leading to patches of hair loss on the head and on other parts of the body. Some people with diabetes may experience thinning hair or hair loss. The primary causes of hair loss are mismanaged blood sugar levels, emotional and physical stress, and hormone imbalances.

The ‘Tunnel of Love’ focuses on sex, and intimacy issues related to diabetes. Women with diabetes have can experience low sexual desire and response, vaginal dryness, and painful sex can be caused by nerve damage, reduced blood flow to the genitals, and hormonal changes. Men with diabetes may face the inability to have an erection. Damage to the vascular system can reduce blood flow.

The ‘Grab Green And Go’ station focuses on nutrition, creating personalized meal plans, and our relationship to food. Sometimes it’s not what you’re eating, it’s what’s eating you that’s important to your diabetes health too.

And finally, ‘The Twist And Shout’ station focuses on fun ways to exercise. Staving off boredom by adding variety to how your workout is a great way to stick to a routine. Exercise variation is an important factor when designing an exercise program, with many benefits when you change exercises every so often, such as increased performance and decreased injury risk.

The back of  Divabetic’s Denial’s Not My Style card asks two questions: Describe how you initially felt about being diagnosed (in one word). And, Describe how you feel about living with diabetes today (using one word).

We posted everyone’s answers on the walls of our diabetes outreach events for everyone to see.

I am so proud of Divabetic’s ongoing efforts over the past 19 years to promote a new attitude about living with diabetes.  Although we are not currently presenting live outreach events, we continue to produce monthly podcasts and virtual programs on Zoom.

Was Chaka Khan Experiencing Low Blood Sugars At Verzuz?

From slurring words or forgetting lyrics to her famous side-to-side, stutter-step shimmy, Chaka Khan‘s performance at the recent Verzuz “competition” with Stephanie Mills has many speculating that she was either drunk or high.

But could she have been experiencing low blood sugars?

Some symptoms of low blood sugar can look the same as being drunk. The most common ones are feeling dizzy, lightheaded, or confused; and getting sleepy. However, others may think your signs of low blood sugar are due to drinking. As a result, they may not realize you need help.

The Queen of Funk, Chaka Khan, was diagnosed with type 2 diabetes back in 2011. She credits her vegan diet for helping her lose a significant amount of weight after her diagnosis.

“I felt like I needed to heal my body, so I would just fast and eat no meat, no dairy,” she said. “I’ve never been a fan of meat, dairy, and sugar. And when I developed diabetes I said, ‘Oh OK, I’m not going to be here long. A change is coming,’” Chaka Khan told the lifestyle website Essence.com.

Assuming Chaka Khan experienced low blood sugar levels on stage with Stephanie Mills, let’s review some suggestions for treating it.

First, eat or drink 15 to 20 grams of fast-acting carbohydrates, then check your blood sugars and retreat if necessary. 

The best options are sugary foods without protein or fat. Chocolate contains fat which slows down the absorption of sugar, so it’s not the best option. Instead, you need food or drinks that easily convert to sugar in the body. Try glucose tablets or gel (sold in your pharmacy), fruit juice, regular — not diet — soft drinks, honey, and sugary candy. Keep in mind, 15 grams of carbohydrates is far less than a whole can of soda or a tall glass of juice. The amount is significant because if you overtreat a low blood sugar by eating or drinking too much, you risk experiencing high blood sugar levels.

Finally, you should know that alcohol makes your blood sugar levels drop by inhibiting the liver’s ability to release glucose.
